APPLE 'N' PROSCIUTTO SANDWICHES

- In a blender, combine the oil, walnuts, cheese and rosemary; cover and process until blended and nuts are finely chopped. With a bread knife, split focaccia into two horizontal layers. Spread rosemary mixture over cut sides of bread. , On bottom of bread, layer the prosciutto, apple and Brie; replace bread top. Cut into quarters. , Cook on an indoor grill for 2-3 minutes or until bread is browned and cheese is melted. To serve, cut each wedge in half.

BAKED PROSCIUTTO AND BRIE WITH APPLE BUTTER

- Heat the oven to 450 degrees F. Cut 16 (1/2-inch thick) slices out of the loaf. Butter each side of the slices and put them onto a baking sheet. Spread 1 tablespoon of apple butter onto each slice. Top this with 1 slice of prosciutto and 3 or 4 slices of pear or apple. Cover this with the Brie slices, season with salt and pepper, and drizzle with olive oil. Bake until the cheese is melted, about 8 to 10 minutes.

- In a large saucepan, cook apples and water over medium heat for 10 minutes or until apples are tender. Combine 1/2 cup sugar, cornstarch, cinnamon and nutmeg; stir into apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice. , Spread six slices of bread with 1/3 cup filling; top with remaining bread. In a shallow bowl, beat the eggs, milk, vanilla and remaining sugar. , Dip sandwiches in egg mixture. Cook on a lightly greased hot griddle until golden brown on both sides. - Split ciabatta, and place one slice of cheese on one half. Top with prosciutto, followed by apple slices, the second slice of cheese and the other half of the bread.
- Melt butter in a 9-inch skillet over medium-high heat. When it froths vigorously, transfer sandwich to skillet. Place a grill press or a cast iron skillet on top of sandwich, and apply gentle pressure for about 2 1/2 minutes. With a spatula, carefully flip sandwich, replace grill press, apply pressure and grill 2 minutes more. Let cool. Place in sandwich bag, and store in refrigerator.

- In a small bowl, combine the mustard and honey. Set aside.
- To assemble the sandwiches, lay 1 slice of cheese on each of 4 slices of the bread. On top of each cheese slice, layer 1 slice prosciutto, 2 slices apple, and 1 more slice cheese. Grind pepper on top of the cheese, if desired.
- Spread 1 tablespoon of the honey mustard on each of the remaining 4 slices of bread and lay them, honey-mustard side down, on top of the cheese slices.
- Heat a large skillet over medium heat and put the sandwiches in the pan. Cook until the cheese has melted and the bread is golden brown, about 3 minutes per side. Serve warm.
