ORANGE-APRICOT FLAVORED BUTTER
This spread is great served with hot scones, but also fantastic on waffles or toast. It is a nice way to dress up an ordinary breakfast or brunch.

APRICOT, ORANGE, CRANBERRY BREAD
Steps:
- Sift together the flour, baking powder, baking soda, and salt. Cream the butter and sugar in a large bowl. Beat in the orange zest and eggs, 1 at a time. Add the orange juice and milk and beat until mixed thoroughly. It will appear curdled.
- Add the flour mixture and beat until it is just moistened. Stir in the apricots, walnuts, and cranberries.
- Place baking rack in middle of the oven. Preheat the oven to 350 degrees F. Butter and flour five 5 3/4- by 2 1/4-inch loaf pans.
- Pour the batter into the pans. Bake for 45 minutes. Test for doneness with a toothpick - it should come out clean. Remove the bread from the pans, transfer to a wire rack, and let them cool on their sides.
APRICOT BUTTER
Steps:
- Combine the butter, apricot preserves, and salt in the bowl of an electric mixer fitted with the paddle attachment. Serve at room temperature.
APRICOT ORANGE BUNDT CAKE
I love bundt cakes & this one has been a favorite of mine for over 20 years! *For the 1/3 cup of orange juice in the glaze, I like to use half OJ & half Triple-Sec, or something similar!

Steps:
- Preheat the oven to 350 degrees F, then grease & flour a 6-cup Bundt pan.
- In a large mixing bowl, on high speed, beat the sugar & butter 5 minutes or until light & fluffy.
- Add the eggs, one at a time, beating well after each, & scraping down the sides of the bowl.
- On low speed, add vanilla, dates, apricots, nuts & zest, mixing well.
- In a medium bowl, whisk together the flour, soda & salt.
- Into the original large mixing bowl, with the mixer on low speed, alternate beating, the flour in fourths & the buttermilk in thirds, into the batter, beginning & ending with flour, & mixing well.
- Pour the batter into the Bundt pan & bake 45-55 minutes or until a toothpick in the center comes out clean.
- Cool in the pan on a wire rack for 10 minutes before inverting cake onto a wire rack over a sheet of foil & remove the pan.
- Meantime, for the glaze, in a small saucepan, stir together all the glaze ingredients.
- Bring to a boil & cook for 3 minutes, stirring constantly, until the mixture thickens slightly.
- Poke holes in the top of the cake with a long, thick skewer at about 1" intervals.
- Brush the HOT glaze over the top & sides of the cake, then cool completely.
- Store at room temperature, tightly covered, for up to 3 days. The cake, tightly wrapped, can also be frozen.

APRICOT BUTTER COOKIES
Steps:
- In a small saucepan combine the apricots, 1/4 cup of the granulated sugar, and 2/3 cup of water, simmer the mixture for 15 to 18 minutes, or until the mixture is reduced by half, and add the rum. Let the mixture cool slightly and in a blender purée it.
- In a bowl whisk together the flour, the baking powder, and a pinch of salt. In a large bowl with an electric mixer beat together the butter, the remaining 1/2 cup granulated sugar, and the brown sugar until the mixture is light and fluffy, beat in the vanilla and the egg, and beat the mixture until it is combined well. Add the flour mixture and beat the dough until it is just combined. Form the dough into a log, chill it for 1 hour, and divide it into 8 pieces.
- Working with 1 piece of dough at a time, on a sheet of plastic wrap form the pieces into 8-inch ropes, wrapping the plastic wrap around the ropes to keep the dough from sticking, and on 2 baking sheets pat the rope into a 8- by 1 1/2-inch rectangles. Make a canal down the center of each rectangle with your finger and spread the apricot purée in the canals. Bake the rectangles in 2 batches in the middle of a preheated 350°F. oven for 18 to 20 minutes, or until the edges are golden, transfer them to racks, and let them cool. In a small bowl whisk together the confectioners' sugar, the lemon juice, and enough water to make a thick but pourable icing, drizzle the icing over the rectangles diagonally into 1-inch strips. The cookies keep in an airtight container for 1 week.
APRICOT-ORANGE CREAM SCONES

- Heat oven to 400°F. Lightly grease cookie sheet. In large bowl, mix flour, granulated sugar, baking powder, orange peel and salt until well blended. Stir in apricots and baking chips. Add whipping cream all at once; stir just until dry ingredients are moistened.
- On lightly floured surface, knead dough 6 or 7 times until smooth. Divide dough in half. Pat each half into 6-inch round; cut each into 6 wedges. Place 2 inches apart on cookie sheet.
- Bake 10 to 13 minutes or until light golden brown. Cool 5 minutes. Meanwhile, in small bowl, mix powdered sugar and enough orange juice for desired drizzling consistency. Drizzle icing over warm scones. Serve warm.

ORANGE & APRICOT LOAF CAKE

- Heat oven to 160C/140C fan/gas 3. Grease and line a 900g loaf tin with baking parchment. In a saucepan, heat the apricots with the orange zest and all but 1 tbsp of the juice. Simmer gently for 5 mins until the apricots have absorbed all the juice. Set aside to cool.
- Beat the butter and sugar in a bowl until light and fluffy. Gradually beat in the eggs, then fold in the flour. Stir in the cooled apricots. If the mixture is dry at this stage, add a drop of milk.
- Scrape the batter into the tin and smooth the top with a spatula. Bake for 50 mins-1 hr until a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins before removing, then leave on a wire rack to cool completely.
- Gradually add the reserved orange juice to the icing sugar, stirring until smooth and slightly runny. Drizzle the icing in a zigzag pattern over the top of the cake and leave to set.
