EASY COQUILLES SAINT JACQUES



Easy Coquilles Saint Jacques image

8 tablespoons (1 stick) unsalted butter, divided
1/4 cup all-purpose flour
1 1/2 cups seafood stock or clam juice
1 cup heavy cream
1/2 teaspoon curry powder
Kosher salt and freshly ground black pepper
1 cup small-diced shallots (4 large)
12 ounces cremini mushrooms, caps brushed clean, stems discarded
1/4 cup Cognac or brandy
1 1/2 cups fresh bread crumbs
1/4 cup minced fresh flat-leaf parsley
5 ounces grated Gruyère cheese
1/4 cup good olive oil
2 pounds fresh bay scallops, drained, side muscles removed

Steps:

  • Preheat the oven to 400 degrees and place six (1 1/2-cup) gratin dishes on 2 sheet pans.
  • Melt 4 tablespoons of the butter over medium heat in a medium saucepan. Add the flour and cook for 2 minutes, whisking constantly. Add the seafood stock and whisk until it is smooth and thickened. Whisk in the cream, curry powder, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Bring the sauce to a boil, lower the heat, and simmer for 10 minutes, stirring occasionally. Set aside.
  • Heat the remaining 4 tablespoons of butter in a large (12-inch) sauté pan over medium-low heat. Add the shallots and sauté for 2 to 3 minutes, until tender. Slice the mushroom caps 1/2 inch thick, add to the shallots, and cook for 8 minutes, stirring often. Add the Cognac and cook for 1 to 2 minutes, until most of the liquid has evaporated. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper and set aside.
  • Combine the bread crumbs, parsley, Gruyère, and olive oil in a medium bowl and stir to moisten the crumbs. Set aside.
  • Add the mushrooms to the cream sauce. Add the scallops and 1 1/2 teaspoons salt, mix well, and divide among the gratin dishes. Sprinkle the bread crumb mixture evenly on top and bake for 20 minutes, until the scallops are cooked and the sauce is lightly browned and bubbly. Serve hot.

4 large whole artichokes, top 1 inch and stems removed
¼ cup fresh lemon juice
¼ cup olive oil
4 cloves garlic, cloves peeled and crushed
kosher salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place artichokes stem-side down in a bowl and drizzle with lemon juice.
  • Slightly separate the artichoke leaves with your hands.
  • Insert a knife blade into the center of each artichoke to create a garlic clove-size space.
  • Drizzle each artichoke with olive oil.
  • Press 1 clove of garlic into the center of each artichoke and season with salt.
  • Tightly wrap each artichoke twice with heavy-duty aluminum foil.
  • Place in baking dish and bake in the preheated oven until sizzling, about 1 hour 20 minutes

This is the way my friend Christine Picasso prepares artichokes. Her touch is the inclusion of sweet red peppers, a nutritious complement to the bitter artichokes. She calls this Artichauts à la barigoule, a dish every French cook makes differently, each claiming his or hers to be the authentic version.

2 pounds baby artichokes or globe artichokes if baby artichokes aren't available, trimmed (see below)
1 lemon, cut in half
2 tablespoons olive oil
1 large sweet onion, such as Vidalia or Maui, chopped, or 1 bunch of spring onions, chopped
2 celery stalks, from the inner hart, sliced
1 large or 2 small red bell peppers, diced
4 large garlic cloves, minced or pressed
Salt
1 28-ounce can chopped tomatoes with juice, peeled, seeded and chopped
3/4 to 1 cup water, as needed
Freshly ground pepper
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
1 bay leaf
2 to 4 tablespoons chopped fresh basil or parsley
2 to 3 teaspoons fresh lemon juice

Steps:

  • How to trim artichokes: Fill a bowl with water, and add the juice of 1/2 lemon. Cut the stems off the artichokes, and with a sharp knife, cut away the tops - about 1/2 inch from the top for baby artichokes, 1 inch for larger artichokes. Rub the cut parts with the other half of the lemon. Break off the tough outer leaves until you reach the lighter green leaves near the middle. With a paring knife, trim the bottom of the bulb right above the stem by holding the knife at an angle and cutting around the artichoke, until you reach the light flesh beneath the tough bottoms of the leaves. Cut small baby artichokes in half, or large artichokes into quarters, and cut away the chokes if the artichokes are mature. Immediately place in the bowl of acidulated water.
  • Heat the oil in a large, heavy nonstick skillet or casserole over medium heat, and add the onion and celery. Cook, stirring, until tender, about three to five minutes. Add the red pepper and about 1/4 teaspoon salt, and stir together for three to five minutes until the pepper begins to soften. Add the garlic, and stir together for another minute, until the garlic is fragrant. Add the tomatoes and a little more salt, and cook, stirring from time to time, for 10 minutes, until the tomatoes have cooked down and smell fragrant. Add the artichokes, thyme, bay leaf and enough water to cover the artichokes halfway, and bring to a simmer. Add salt and pepper, then cover and simmer 30 to 40 minutes, until the artichokes are tender and the sauce fragrant. Check from time to time and add water if necessary. Add the lemon juice, taste and adjust salt and pepper.

Lemon, halved
Flesh from whole cooked artichoke (about 2 to 3 tablespoons)
1/4 teaspoon chopped fresh tarragon
1/4 teaspoon minced shallots
Olive oil
Fresh cracked pepper
Salt

Steps:

  • Rinse the artichoke under cold water to remove any grit. Cut off the top inch of the cone of leaves with a sharp chef's knife. Rub the cut surface with half a lemon to prevent discoloring. With kitchen scissors, snip off about 1/2 inch from the tips of the remaining broad leaves to remove the prickly needles, and rub with lemon. Finally, cut off the stem even with the base, trimming away any small leaves. Rub the flat base with the half lemon.
  • Pour 2 inches of water into the pot and fit in the steamer basket. Arrange the prepared artichoke in the basket, top side down. Cover tightly and bring to a boil. Reduce the heat to maintain a slow boil and steam for 35 to 45 minutes. The artichoke is done when the base is easily pierced with a small sharp knife. Remove them from the steamer and rest top side up. Allow to cool.
  • For each serving, gently pull off all the broad outer leaves of cooked, cooled artichoke, keeping bottom intact. Remove the inner core of small leaves and scrape the hairy choke from the bottom.
  • With a small spoon, patiently scrape the edible flesh from the reserved leaves (including the inner core). You will have 2 to 3 tablespoons of flesh from each artichoke. Add tarragon, shallots, and a good drizzle of olive oil. Season with fresh cracked pepper and salt, and mix well with a fork. Pile into the artichoke bottom, and serve surrounded by a leaf of butter lettuce, garnished with a sprig of dill.

This is a very popular dish in France. Artichokes are steamed or boiled in salted water and simply served with a homemade vinaigrette. Prepared this way, you get to really enjoy their flavor. A delicious dish and so easy to prepare. When you get to the heart of the artichoke, remove the hair and fill the cavity with vinaigrette... it's like finding treasure after a long quest.

4 fresh artichokes, stems and tough outer leaves removed
¼ cup vinegar
1 pinch salt and freshly ground black pepper to taste
½ cup olive oil

Steps:

  • Bring a large pot of lightly salted water to a boil. Simmer artichokes in the boiling water until softened, about 30 minutes. Drain.
  • Mix vinegar, salt, and pepper together in a bowl. Whisk in olive oil in a slow, steady stream until vinaigrette is blended.
  • Start by eating the artichoke leaves dipped in the vinaigrette. Discard small leaves and gently scrape fuzzy choke from the hearts. Fill the hearts with vinaigrette and slice.

6 canned artichoke hearts, drained and halved
1 teaspoon vegetable oil
salt and freshly ground black pepper to taste
2 tablespoons dry bread crumbs
¼ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon olive oil
½ lemon, cut into wedges

Steps:

  • Place artichoke heart halves on a paper towel cut-side down to drain for about 15 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and lightly coat with vegetable oil.
  • Place artichoke heart halves on the prepared baking sheet, cut side up. Season with salt and pepper, sprinkle with breadcrumbs and Parmigiano-Reggiano cheese, and drizzle with olive oil.
  • Broil artichoke hearts until browned on top, about 7 minutes. Serve with lemon wedges.
