Amazing Spicy Grilled Shrimp image

This is an amazing spicy grilled shrimp recipe. It has become my family's new favorite.

⅓ cup olive oil
¼ cup sesame oil
¼ cup chopped fresh parsley
2 tablespoons hot sauce
2 tablespoons minced garlic
1 tablespoon ketchup
1 tablespoon Asian chile paste
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons lemon juice
2 pounds large shrimp, peeled and deveined
12 wooden skewers, soaked in water

Steps:

  • Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
  • Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade and seal the bag. Refrigerate for 2 hours.
  • Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

1 1/2 lbs butternut squash or 1 1/2 lbs other winter squash
2 tablespoons unsalted butter
2 garlic cloves, minced
1 scallion, both white and green parts minced
1 tablespoon sesame seeds
2 tablespoons maple syrup
1 tablespoon soy sauce

Steps:

  • Preheat grill to High.
  • Peel squash, remove and discard seeds. Cut crosswise into 1/2" thick slices.
  • Place butter in a small saucepan and melt over medium heat. Add garlic, scallion and sesame seeds. Cook about 1 minute- do not let garlic brown.
  • Stir in maple syrup and soy sauce. Bring to a boil and let boil 1 minute.
  • Brush squash slices with sauce.
  • Place squash on hot grill, close lid and cook for 2-3 minutes, basting once. Turn squash over and cook 2-3 more minutes, basting once.
  • Serve with remaining sauce, adding to any juices that may have run off into the drip pan.

  • Melt the butter in a skillet over medium heat. Stir in the zucchini, and cook until lightly browned. Sprinkle with soy sauce and sesame seeds. Season with garlic powder and pepper, and continue cooking until zucchini is well coated and tender.

Love pattypan squash and this seasoning combination. Originally from Cooking Light. Have also stir fried it for a few minutes on stove top by putting oil in pan, mix seasoning into vegs, sautéing onion for few minutes, and adding patty pan chunks and sautéing for 3 minutes, add lemon and mint. If you overcook, the squash gets watery.

cooking spray
1 tablespoon lemon juice
1 tablespoon mint leaf, thinly sliced (optional)

Steps:

  • Preheat grill.
  • Combine first 7 ingredients (through onion) in a large bowl; toss well.
  • Thread squash and onion alternately onto each of 8 (10 inch) skewers.
  • Place skewers on grill rack coated with cooking spray; grill 10 minutes or until tender, turning frequently.
  • Drizzle with juice.
  • Sprinkle with mint.

  • Prepare a grill for medium-high heat. Cut each squash in half lengthwise, then score cut sides in a ¼" crosshatch pattern with the tip of your knife. Toss squash and 1 tsp. salt in a colander; set over a bowl. Let sit 10 minutes, then pat dry with paper towels.
  • Meanwhile, combine honey, vinegar, soy sauce, and chili paste in a small saucepan. Bring to a simmer over medium-high heat and cook, stirring occasionally, until reduced by half and slightly thickened (just shy of syrupy), 5–7 minutes. Remove from heat. Stir in 1 Tbsp. oil.
  • Toss squash with remaining 1 Tbsp. oil in a large baking dish or plate. Turn squash cut side up, then brush with glaze.
  • Grill squash cut side down until just beginning to char around the edges, about 3 minutes. Continue to grill, turning every minute or so and brushing squash with glaze on cut sides, until just tender and cut sides are lightly charred and shiny from the glaze, 6–8 minutes total.
