Categories     dessert

Time 1h5m

Yield 4 servings

Number Of Ingredients 22

Nonstick cooking spray
1/4 cup hazelnuts
2 tablespoons granulated sugar
1 sleeve graham crackers
4 tablespoons unsalted butter, melted
1/4 cup packed brown sugar
1 teaspoon vanilla bean paste
Pinch salt
3 large eggs
8 ounces bacon, diced, cooked and drained plus 2 teaspoons reserved grease
1/2 cup maple syrup
1 cup chopped hazelnuts
1 cup chopped pecans
One 8-ounce package cream cheese, softened
3/4 cup heavy cream
3/4 cup confectioners' sugar
1/4 cup cocoa powder
3 tablespoons bourbon
1 teaspoon vanilla bean paste
Pinch salt
1 small block semisweet chocolate, shaved into curls
Mint leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray the tart shells with cooking spray and set aside.
  • For the crust: Place the hazelnuts, granulated sugar and graham crackers in a food processor and pulse until it looks like cornmeal. Add the butter, a little at a time, pulsing until the mixture comes together. Divide among the tart shells and press up the sides, making sure the crust is tightly packed.
  • For the filling: In a large bowl, mix together the brown sugar, vanilla bean paste, salt and eggs. Add the bacon grease and maple syrup; mix to combine. Stir in the hazelnuts and pecans.
  • Sprinkle the hazelnuts and pecans onto the bottoms of the crusts. Pour the syrup mixture over the nuts. Sprinkle the tops with bacon. Bake until set, about 25 minutes. Let cool.
  • For the mousse: In the bowl of a stand mixer fitted with the whip attachment, whip the cream cheese for 30 seconds to aerate it. Add the cream, confectioners' sugar, cocoa powder, bourbon, vanilla bean paste and salt and whip until light and fluffy. Taste and add more cocoa powder if desired.
  • Pop the cooled tarts out of the pan and place on individual plates. Spoon the mousse into small dishes, garnish with chocolate curls and mint leaves, and serve on the side.

WALNUT CARAMEL TART

Walnut caramel tart image

Combine crunchy nuts with caramel flavours in this open shortcrust pastry pie with a creamy, sticky filling

Provided by Mary Cadogan

Categories     Dinner, Main course

Time 1h5m

Yield Cuts into 8-10 slices

Number Of Ingredients 8

175g plain flour , plus extra for dusting
85g butter , cut into small cubes
50g caster sugar
1 egg yolk
200g caster sugar
100g butter , cut into small pieces
200ml whipping or double cream
200g shelled walnut half

Steps:

  • Heat oven to 190C/170C fan/gas 5. Put the flour in a food processor with the butter and sugar, and mix until it forms fine breadcrumbs. Add the egg yolk and 1-2 tbsp cold water, and pulse to make a firm dough.
  • Have ready a 24cm tart tin. Briefly knead the pastry on a lightly floured surface, then roll out to a round about 5cm larger than your tin. Lift onto the tin with the help of your rolling pin, then press into the corners using your finger. Do not trim the pastry. Fill the pastry case with a round of baking parchment and baking beans. Chill for 10 mins. Blindbake for 10 mins, remove the paper and beans, then bake for 5 mins more.
  • To make the filling, put the sugar in a large pan with 3 tbsp cold water. Heat gently, stirring to dissolve the sugar. When the sugar is completely dissolved, increase heat and bubble until the syrup has turned a rich caramel colour. Remove from the heat and stir in the butter until it has dissolved, then stir in the cream. Return to the heat and boil hard, stirring until the sauce is thick enough to leave a gap on the base of the pan when you draw your spoon across it. Stir in the walnuts.
  • Fill the pastry case with the nut mixture, levelling it with a fork. Return to the oven for 8-10 mins until the filling is bubbling. Cool for 10 mins before removing carefully from the tin. Serve warm or cold.

TOFFEE CREAM TART

Toffee Cream Tart image

A wonderful dessert hot or cold, an old favourite.

Provided by shazza59

Time 1h

Yield Serves 6

Number Of Ingredients 7

7 inch pastry case ready cooked
Quart pint milk
60 g margarine
40 g brown sugar
25 g plain flour
75 g golden syrup
(if no brown sugar use more Golden Syrup)

Steps:

  • 7 inch pastry case ready cooked. Either your own or bought. I tend to buy fresh pastry and line my pie dish and bake blind until cooked. My the ready cooked ones are very sweet & tasty.
  • Melt the margarine and sugar, then stir in the flour. Whisk in the hot milk and stir as it thickens and reaches boiling point.
  • Keep stirring all the time while you are waiting for the mixture to boil, then cook for 2-3 minutes stirring all the time.
  • Remove from the heat, and add the syrup, then whisk the mixture.
  • Spread the filling into the flan case and serve hot or place in the fridge to cool & serve with whipped cream or custard, or anything you want, I like it on its own. But I do put grated chocolate on for my grand children.

Yield Makes 8 servings

Number Of Ingredients 7

1 14-ounce package all-butter puff pastry (preferably Dufour), thawed in refrigerator
All-purpose flour
1/4 cup (1/2 stick) unsalted butter, cut into 1" pieces
1/4 cup pure maple syrup
1/3 cup sugar
5-6 Fuji, Pink Lady, or Honeycrisp apples (about 2 1/2 pounds), peeled, cored, halved
Vanilla ice cream

Steps:

  • Unfold puff pastry on a lightly floured surface. Using a lightly floured rolling pin, roll into a 12" square about 1/8" thick. Using a 12" plate as a guide, cut out a 12" round with a sharp paring knife. Transfer pastry round to a baking sheet; cover with plastic wrap and chill until ready to use.
  • Preheat oven to 425°F. Swirl butter and maple syrup in a 12" heavy ovenproof skillet over medium heat until butter melts. Sprinkle sugar over, evenly coating bottom of skillet. Add apples, cut side down; increase heat to medium-high and cook until sugar melts, occasionally swirling apples in pan, about 5 minutes. Reduce heat to medium and cook, continuing to swirl apples in pan, about 5 minutes longer. Flip apples (rounded side down), and cook, swirling apples occasionally, until syrup is thick and golden brown, 5-10 minutes longer.
  • Cover apples with pastry round, tucking in edges of pastry. Bake until pastry is light golden brown, about 10 minutes. Reduce heat to 375°F; bake until pastry is puffed and deep golden, about 20 minutes longer.
  • Let tarte Tatin cool for 15 minutes. Invert a serving plate over skillet. Using oven mitts, firmly hold plate and skillet and invert tarte onto plate. Remove skillet; rearrange apples if needed and scrape any caramel in skillet over. Serve warm or at room temperature with ice cream.
