BABY BACK RIBS (SMOKER, OVEN, OR OVEN-TO-GRILL)



Baby Back Ribs (Smoker, Oven, or Oven-to-Grill) image

Smoky, sweet, savory, and pull-apart tender - these baby back ribs have it all.

2 teaspoons salt
1½ tablespoons smoked paprika
1½ teaspoons garlic powder
1½ teaspoons onion powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon ground mustard
½ teaspoon cayenne pepper
2 racks baby back ribs
About 6 tablespoons homemade or store-bought BBQ sauce, plus more for serving

Steps:

  • Make the Spice Rub: In a medium bowl, whisk together the sugar, salt, smoked paprika, garlic powder, onion powder, cumin, oregano, ground mustard, and cayenne pepper.
  • Preheat the smoker to 225°F or the oven to 300°F. (If using the oven, set one rack in the middle position and one rack in the top position.)
  • Remove the membrane that coats the underside of each rack of ribs. Using a butter knife, loosen the membrane around one of the end bones, scraping it away from the ribs. Once you get under it, grab the membrane with a paper towel and peel it off. If you're lucky, it will come off all in one piece. (Alternatively, ask your butcher to do this for you.)
  • Coat the ribs evenly on both sides with about half of the spice rub. Allow the ribs to sit for about 15 minutes to "sweat" and absorb the rub, then coat the racks with the remainder of the rub. It will seem like too much rub but it's not - use it all.
  • Smoker Method: Place the spice-coated ribs in the smoker and cook for 2 hours. Remove the ribs from the smoker and double wrap each rack in heavy-duty foil. Return to the smoker for 1½ hours. Remove the foil-wrapped ribs from the smoker (hot grease may drip out of the foil, so be careful). Carefully unwrap, leaving the ribs on the foil, and brush to the top of each rack with about 3 tablespoons of the BBQ sauce. Fold the edges of the foil around the ribs, creating a makeshift "pan" for each rack. Place the racks back in the smoker on the foil and cook for 45 minutes to 1 hour more, or until the racks are tender. To determine if they're done, lift them from the center with tongs - if they bend easily and the meat "cracks" on top, they are ready. Let the ribs cool for about 10 minutes, then slice and serve.
  • Oven or Oven-to-Grill Method: Line a baking sheet with heavy-duty aluminum foil. Place the spice-coated ribs on the prepared pan, cover the pan tightly with foil, and bake until tender, about 2 hours. Turn the oven to broil. Remove the foil from the ribs and brush each rack with 3 tablespoons of the barbecue sauce. Broil until the sauce just starts to bubble and caramelize, 2 to 4 minutes. Keep a close eye on the ribs while they're under the broiler; because of the sugar in the rub and sauce, they will quickly go from nicely caramelized to burnt. (Alternatively, you can skip the broiling and finish the ribs on the grill. Preheat the grill to medium and grill the baked racks for 10 to 15 minutes, brushing occasionally with the BBQ sauce until charred in spots and heated through. Adjust heat as necessary to prevent burning.) Let the ribs cool for about 10 minutes, then slice and serve.
  • Reheating/Freezing Instructions:The cooked ribs will keep in a covered container in the refrigerator for 3 to 4 days, or they can be frozen for up to 3 months. To reheat, thaw the ribs overnight in refrigerator if necessary, then place on a foil-lined baking sheet. Brush the ribs with another layer of BBQ sauce and cover tightly with foil. Warm in a 250°F oven for 30 to 35 minutes, or until warmed through. Remove the foil and continue cooking for 10 to 15 minutes to allow the sauce to set and the bark to crisp up.

½ cup ancho chile powder
¼ cup white sugar
¼ cup brown sugar
¼ cup salt
2 tablespoons freshly ground black pepper
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground cayenne pepper
½ teaspoon ground dried chipotle pepper
1 rack baby back pork ribs
1 cup barbeque sauce

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
  • Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
  • Generously apply coating of dry rub to all sides of rib rack.
  • With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
  • Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
  • Increase oven temperature to 350 degrees F (175 degrees C).
  • Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
  • Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
  • Cut rack into individual rib segments and serve with more barbeque sauce.

These are tender and the meat falls right off the bone. Generally, people think of baby back ribs as a meal they would only order when at a restaurant, but they are so easy to make at home. This recipe could not be any more simple.

2 pounds pork baby back ribs
1 (18 ounce) bottle barbecue sauce

Steps:

  • Tear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Spray each piece of foil with vegetable cooking spray. Brush the ribs liberally with barbeque sauce and place each portion in its own piece of foil. Wrap tightly and refrigerate for at least 8 hours, or overnight.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Bake ribs wrapped tightly in the foil at 300 degrees F (150 degrees C) for 2 1/2 hours. Remove from foil and add more sauce, if desired.

1 tablespoon vegetable oil
2 bunches green onions, chopped
2 cups chopped white onions
8 large garlic cloves, chopped
2 cups (packed) golden brown sugar
1 cup ketchup
1 cup tomato paste (about 9 ounces)
1 cup whole grain Dijon mustard
1 cup water
1/2 cup Worcestershire sauce
1/2 cup apple cider vinegar
1/2 cup apple juice
1 large dried ancho chili, stemmed, seeded, cut into small pieces
1 tablespoon ground cumin
1 1/2 cups bourbon
For spice rub and ribs
2 tablespoons ground cumin
1 tablespoon chili powder
1 tablespoon dry mustard
1 tablespoon coarse salt
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground cinnamon
6 pounds baby back pork ribs (about 3 whole racks)

Steps:

  • Make sauce
  • Heat oil in heavy large pot over medium-low heat. Add green onions, white onions and garlic and sauté until tender, about 15 minutes. Mix in all remaining ingredients, adding bourbon last. Simmer sauce until thick and reduced to 7 cups, stirring occasionally, about 1 hour. Season to taste with salt and pepper. (Sauce can be prepared 2 weeks ahead. Cover and refrigerate.)
  • Make spice rub and ribs
  • Mix first 7 ingredients in medium bowl. Rub spice mixture over both sides of rib racks. Arrange ribs on large baking sheet. Cover and refrigerate overnight.
  • Prepare barbecue (medium heat). Cut rib racks into 4- to 6-rib sections. Arrange ribs on barbecue. Grill until meat is tender, occasionally turning ribs with tongs, about 40 minutes. Using tongs, transfer ribs to work surface.
  • Cut rib sections between bones into individual ribs. Arrange on clean baking sheet. Transfer 3 cups sauce to small bowl; place remaining sauce in small saucepan and reserve. Brush ribs with sauce from bowl.
  • Return ribs to barbecue. Place pan of reserved sauce at edge of barbecue to rewarm. Grill ribs until brown and crisp on edges, brushing with more sauce from bowl and turning occasionally, about 10 minutes. Serve ribs with warm sauce.

This is an easy recipe for ribs which won't be tough, like smoked ribs, or fall off the bone, like braised ribs. These ribs are done the right way, and I've never had better ribs than this.

1 cup mesquite chips, soaked
1 (2 pound) slab baby back pork ribs
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon Hungarian paprika
1 teaspoon ancho chile powder

1 cup barbeque sauce

Steps:

  • Prepare an outdoor grill for indirect heat - a pile of charcoal on one side, nothing under the food. Once it is going, throw some soaked mesquite woodchips on it.
  • Remove the membrane from the ribs if the butcher has not already. Combine the salt, pepper, paprika, chile powder and thyme; rub onto the ribs. Cut the slab of ribs in half.
  • Place the ribs over indirect heat, and close the lid. Cook for 20 minutes, then brush with barbeque sauce. Cover, and continue cooking for an additional 30 minutes.

Makes 2 slabs of baby back deliciousness
2 slabs baby back ribs
1 tablespoon kosher salt
1 tablespoon fresh cracked pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cumin powder
1/4 teaspoon cayenne powder
1 large onion, sliced
3 tablespoons Canola oil
1/4 cup chicken stock or water
1 recipe for barbecue sauce or store bought barbecue sauce

Steps:

  • First, mix all the dry ingredients together in a bowl. They don't need to be exact and you can use whatever other spices you like as well. Take out a 9X13 baking dish and spray with non-stick cooking spray. Slice the onion and put into the baking dish in an even layer. Add the chicken stock or water and set aside. Pre-heat the oven set at 325 degrees. Take the ribs out of the refrigerator and set on the counter. We need to do some work on them first. Remove them from the package and rinse under cold water. Pat dry with paper towels. On the bone side, look to see if there is a membrane covering the ribs. This needs to be removed. The easiest way is to take a knife at one end of the slab and peel about a half inch of the membrane. Then use a paper towel and grab the membrane and pull. It should come right off. This will allow for the rub to penetrate and the meat to get juicy. If you have a whole slab of ribs, cut it in half across the middle. You need to be able to fit the ribs into your pan, so if you need to cut it in thirds, go ahead and do that. Once they are the size you need, rub those spices all over the ribs. Set the coated ribs aside until they have come to room temperature or 30 minutes have passed since you took them out of the fridge. Heat the skillet (cast iron if you have it) over medium-high heat. Add the oil. When the pan is nice and hot, begin searing the ribs, meat side down. They should cook for about two to three minutes in the pan. Get them nice and brown. You do not need to sear the bone side. Set the seared pieces aside for the time being. While the pan is still hot, deglaze with about 1/2 cup water. Pour the water from the pan directly into the 9X13 baking dish. Layer the ribs in the dish on top of the onion and cover with foil. Make sure the foil has a good seal. Cook in the oven for 2 hours at 325 degrees. Open another beer and relax for a while. When two hours have passed, take the dish out of the oven. Let it rest on the counter for about 15 minutes while your grill is heating up. Now is a good time to get out the barbecue sauce of your choice. I have a really fantastic recipe, but it is not mine and I have been sworn to secrecy. If you ever want to try it, just ask and I'll send you some. Take the ribs out of the 9X13 dish and put them on a platter. When your grill has reached it's high heat capacity, put the ribs bone side down on the grate. Slather your favorite sauce over top and close the lid. Cook for 5 minutes, then flip and repeat on the bone side. Cook for another 5 minutes and flip. Slather more sauce on the top and let cook for 2 more minutes. Your delicious, juicy baby back ribs are now ready to be devoured. Any number of side dishes will work. Since this is finger food, corn on the cob is a great choice simply because silverware is not required. I like asparagus for the same reason. For me, picking up asparagus and chomping down the stalk like a french fry is an eating experience. If you want to go all out, grill some potatoes and load them up with sour cream and chives. Or make some redskins, smash them, add some milk and butter for a rustic masher. Or, do like I did and sit outside with no side dish, savoring the awesome flavor of the rib all by itself. Yeah baby, these are really good.

  • On a large rimmed baking sheet, rub each rack of ribs all over with the rib dry rub and refrigerate overnight. Make sure to cover the entire racks well and pat down the rub. It's called a rub for a reason.... rub rub rub and pat pat pat on both sides, you want a really nice coating!
  • Bring the ribs to room temperature when ready to cook. Clean the grill grates. You want nice clean grill grates for these baby back ribs. Light gas grill to medium, approximately 300°F.
  • When grill is warm, place the ribs on the grill grates and close the lid. I like to check on these ribs every 20 minutes of so. I move them around a bit if I feel they are cooking unevenly. Grill for approximately 1 hour.
  • Mix the BBQ sauce and garlic powder. At the 1 hours mark, brush the ribs with the BBQ Sauce using a basting brush. Give them a good coating.
