Categories     appetizer

Time 30m

Yield 4 servings

Number Of Ingredients 16

1 medium red onion
2 tablespoons extra-virgin olive oil
Kosher salt
Citrus Dressing, recipe follows
8 cups baby spinach
1/2 cup pecans, toasted and chopped
1/3 cup crumbled goat cheese
1/2 cup dried cranberries
1 teaspoon lemon zest
2 tablespoons freshly squeezed lemon juice
2 tablespoons freshly squeezed orange juice
1 tablespoon Dijon mustard
1 teaspoon honey, plus more to taste
1/4 teaspoon fresh thyme leaves, chopped
1/4 teaspoon fine salt
1/4 cup extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Slice the onion into thin wedges, through the root end. Toss with the olive oil, season with salt, to taste, and spread out on a baking sheet. Roast until just soft and brown, about 20 minutes. Set aside to cool.
  • Put the spinach and onions in a large bowl. Drizzle with some of the dressing and toss. Add more dressing as needed; spinach should just be lightly coated. Divide salad among 4 chilled plates. Top with pecans, goat cheese, and dried cranberries. Serve immediately.
  • Whisk the lemon zest, lemon juice, orange juice, Dijon, honey, thyme, and salt in a medium bowl until well combined. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth, slightly thick dressing.

BABY SPINACH WITH BEETS AND GOAT CHEESE

Baby Spinach with Beets and Goat Cheese image

Categories     Salad     Cheese     Bake     Steam     Goat Cheese     Spinach     Beet     Simmer     Boil

Yield makes 4 servings

Number Of Ingredients 4

1 5-ounce bag baby spinach
2 tablespoons Balsamic Vinaigrette (page 159) or to taste
1 bunch of beets, roasted or boiled (see box), peeled and thinly sliced
1/2 cup crumbled goat cheese

Steps:

  • Place the baby spinach in a salad bowl. Add the balsamic vinaigrette and toss gently until well coated.
  • Divide the spinach among 4 shallow bowls or salad plates. Top with the beet slices and sprinkle over the crumbled goat cheese. Serve.
  • Cooking Beets
  • To prepare the beets, trim all but about 1 inch of the stems. Rinse thoroughly under cold, running water.
  • To boil beets, bring a large saucepan of water to a boil. Add the beets and return the water to a boil. Reduce the heat and simmer, covered, until the beets are tender when pierced with a thin, sharp knife, about 20 minutes for small beets, about 30 minutes for medium beets, and 45 minutes to 1 hour for large beets. Drain the beets and transfer them to a bowl of ice water until cool enough to handle.
  • To bake beets, preheat the oven to 400°F. Place the beets in a small roasting pan and add 1/2 cup of water. Seal the pan tightly with foil and bake until the beets are tender when pierced with a thin, sharp knife, about 45 minutes for small beets, about 1 hour for medium beets, and about 1 1/4 hours for large beets (be careful when lifting the foil; don't get burned by the escaping hot steam). Remove the beets from the pan and let stand. When the beets are cool enough to handle, use a paring knife to trim the ends and slip off their skins. Serve warm, at room temperature, or cold.
  • from aunt elsa's kitchen
  • Beets retain better flavor when they are boiled or baked with their skins on, but peeling them after cooking can transfer all that beautiful color right to your hands, where it doesn't look so nice. Wear kitchen gloves when peeling and chopping beets.

SPINACH AND CLEMENTINE SALAD WITH DRIED TART CHERRIES

Spinach and Clementine Salad With Dried Tart Cherries image

From www.aicr.com. Clementines can be both expensive and difficult to find as they are only available November through March. Substitute tangerines-honey tangerines being particulatiry good, if you cannot find them. Here is what I found online about the fruit: "Clementines are the tiniest of the mandarins. Imported from Spain, Morocco, and other parts of North Africa, clementines are a cross between a sweet orange and a Chinese mandarin. They are small, very sweet, and usually seedless. Most people think of clementines as small tangerines, but they're a different variety entirely, with a distinctive taste".(SOURCE:www.producepete.com/shows/clementines.html

Categories     Citrus

Time 20m

Yield 8 serving(s)

Number Of Ingredients 13

1 cup red onion, sliced thinly
1/4 cup dried cherries (*tart* cherries, not sweet)
2 tablespoons red wine vinegar
1 pinch raw sugar
1 teaspoon Dijon mustard
1 garlic clove, finely minced
salt, to taste
cracked black pepper, to taste
1/4 cup extra virgin olive oil

Steps:

  • Dry roast the walnuts lightly and set aside to cool.

  • In large salad bowl toss the salad ingredients together. NOTE: Do not add the walnuts to the salad until just before serving.
