Steps:
- Preheat the oven to 325 degrees and position a rack in the center.
- Cut an avocado in half and remove the pit.
- In a small bowl, combine the onion, tomato, jalapeno, cilantro, lime juice, and 1/4 teaspoon salt.
- Season the avocado halves with salt and pepper. Divide the onion-tomato mixture between the avocado halves. Sprinkle the cheese on top.
- Crinkle two small pieces of foil and place them on a small baking sheet. These will help secure the avocado halves and keep them from rolling around.
- Place the avocado halves on the foil holders and place the baking sheet in the oven. Bake until the cheese has melted and the avocado is warm throughout, about 8-12 minutes.
AVOCADO BAKED EGGS
I had these clever breakfast treats at a brunch gathering. They are easy to make for just two people or for a crowd. You can double or triple this recipe for a crowd. I use a muffin tin to hold each avocado half if I am making several of them.

- Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.

- Slice the avocados in half and remove the pits.
- Place the avocado halves on a baking sheet and scoop out some of the flesh to make a bigger hole.
- Crack one egg into each hole and season with salt and pepper.
- Top with toppings of choice and bake for 15 minutes or until yolk reaches desired consistency.
- Sprinkle with fresh herbs, as desired.

- Preheat oven to 375 degrees F.
- Cut the avocado in half and scoop out the flesh, leaving the skin intact, and roughly dice the avocado. Place avocado in an ovenproof dish, and add the crumbled blue cheese, walnuts, pancetta, and Worcestershire sauce and season with salt and pepper.

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
- Mash the avocado into a paste until no visible avocado chunks or bits remain. Stir in the Parmesan until completely incorporated.
- Scoop the avocado mixture in tablespoonfuls onto the prepared baking sheets, spacing each mound at least 4 inches apart. Spray your fingertips or the back of a spoon with nonstick spray and pat one mound into a thin, 3-inch disc; wipe off your fingertips or spoon. Repeat spraying your fingertips, patting each mound and wiping off your fingertips for the remaining mounds.
- Bake for 10 minutes. Remove from the oven and sprinkle each chip with everything bagel seasoning. Rotate the baking sheets and continue to bake until the edges of the chips are deep brown and the tops start to turn golden brown, 6 to 10 more minutes. The outer chips will cook more quickly, so feel free to remove those first as they're done. Let the chips cool on the baking sheet for 30 minutes. Store them in an airtight container for up to 3 days.

- Heat the oven to 400F/200C/Gas Mark 6-7. Place the half avocado on a lightly greased ovenproof dish and sprinkle the cut surface with lemon juice to stop browning.
- Grate the cheese into a small basin, wash the chives and scissor snip them into the grated cheese, or wash and trim the spring onion (trim off the roots and yellow leaves, but retain as much of the green as looks appetising) and chop or snip the onion into the cheese.
- Wash and scissor snip the parsley into the cheese mixture. Add the pine kernels or chopped nuts and sweetcorn, and mix together with wine or cider. Season with salt, pepper, and a little lemon juice to taste.
- Pile the mixture into the avocado (it will heap up on top of the pear). Bake in the hot oven for 10-15 minutes until golden brown and bubbling. Serve with crispy bread rolls or hot garlic bread.

Steps:
- Slice each avocado into half,and remove the stone. Scrape the flesh into a bowl leaving the half-cases intact.
- Mash the avocado flesh until a few lumps remain.
- Dice and gently fry the bacon until crispy, then add to the mixture with two thirds of the cheese, with pepper to taste.
- Mix well and fill the avocado cases with the cheese,avocado and bacon mixture.
- Place on top the remainder of the cheese thinly on top of the avocados.
- Thinly slice the tomatoes; place a slice on top of each avocado half, on top of the cheese.
- Bake in a preheated oven on gas mark 6 for 30 minutes.
- Serve with green salad,.
