Gluten-Free Chex® Cereal Treat Bars image

This is a great new twist on popular crispy rice cereal bars. Wrap them individually in plastic for easy toting.

1/4 cup butter or margarine
1 bag (10 oz) large marshmallows or 4 cups miniature marshmallows
8 cups Rice Chex™ cereal

Steps:

  • Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
  • In large microwavable bowl, microwave butter uncovered on High about 45 seconds or until melted. Add marshmallows; toss to coat. Microwave 1 to 1 1/2 minutes longer. Stir until marshmallows are completely melted and mixture is well blended.
  • Add cereal; mix well. Using waxed paper or spatula sprayed with cooking spray, press mixture evenly into baking dish. Cool 15 minutes. For bars, cut into 6 rows by 3 rows.

My mom made these while I was growing up, and now I make them for my family. Always a favorite at Christmas parties too! Easy to make. Recommend to keep squares in fridge right up until serving.

3 cups toasted oat cereal (such as Cheerios®)
3 cups corn flake cereal
1 cup peanuts
1 cup brown sugar
½ cup corn syrup
½ cup butter
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Combine oat cereal, corn flake cereal, and peanuts together in a large bowl.
  • Mix brown sugar, corn syrup, and butter together in a saucepan; bring to a boil. Remove from heat and stir in peanut butter and vanilla extract until smooth. Pour peanut butter mixture over cereal mixture; stir to coat. Press coated cereal mixture into a 9x13-inch casserole dish. Refrigerate until set, at least 1 hour. Cut into squares.

A gluten-free adaptation of the traditional Seven Layer Bar recipe. All ingredients are available in ordinary supermarkets. Be sure to check the packaging on your ingredients to make sure they are indeed gluten-free.

7 ounces sweetened flaked coconut, divided
1 cup butterscotch chips
6 ounces semisweet chocolate chips
8 ounces unsalted peanuts
½ cup sliced almonds
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F ( 175 degrees C ). Generously grease one 13x9-inch baking pan.
  • Spread 2/3 of the flaked coconut evenly on the bottom of the baking pan. Sprinkle the butterscotch morsels, chocolate chips, and peanuts evenly over the coconut layer. Pour condensed milk evenly over the whole pan. Top with sliced almonds and remaining coconut.
  • Bake in preheated oven for 20 minutes. Cool completely before cutting into squares.

This is a recipe I have adapted from CDkitchen "Gluten-Free Granola Bars Recipe". This has become a staple in our house! We make 2 batches of these a week, wrap them in parchment paper and seal them in an air tight glass container. Note: If you are gluten intolerant, you need to make sure that the rice and corn cereals you choose are gluten free. Some rice and corn cereals contain malt which is derived from barely. We use Nature's Path Rice cereal and Honey Sweetened Corn Flakes.

1/2 cup unsalted butter
3 1/2-4 cups marshmallows
3 cups corn flakes (crushed)
2 cups crispy rice cereal
1 cup cranberries (or Raisins)
1/2 cup unsweetened coconut
1/2 cup pumpkin seeds (or sunflower seeds)
1/2 cup sesame seeds

Steps:

  • Mix together corn flakes, rice cereal, sesame seed, pumpkin seeds, cranberries and coconut in a large bowl.
  • Melt the butter over low heat
  • Stir in marshmallows and continue to stir until all of the marshmallows are melted (watch the heat as you do not want to burn the mixture).
  • When the mixture is smooth, add it to the dry ingredients and mix until everything is coated.
  • Line 9 x 13 sheet with parchment paper (or butter).
  • Spread the mixture evenly on the parchment paper with your hands.
  • Allow to cool for about 1 hour.
  • Cut into bars and store in an airtight container.

Finally, a gluten free cereal that is high in fiber, tasty and doesn't cost you $5 a box! This is wonderfully satisfying, similar to All-Bran or Fiber-One cereals, and very easy to make! I created this recipe by modifying a bran flakes recipe I found online so that it would be gluten free (original recipe by Homemaking booket, Mormon Church, 1978 - found at astray.com). Be warned, you don't need to eat much to be full with this cereal (roll it as thin as you can)! NOTE: I am still working on perfecting this recipe (so there may be updates), but just had to share with my fellow celiacs!

1/2 cup gluten-free flour (I use 1 part each of garfava, tapioca and cornstarch)
1/4 cup brown rice flour
1/4 cup flax seed meal
2 tablespoons cornmeal
2 tablespoons nonfat dry milk powder
2 teaspoons dry active yeast
1/4 teaspoon salt
1 tablespoon canola oil
1 teaspoon molasses
1/4 cup water

Steps:

  • Preheat oven to 350 degrees.
  • Mix dry ingredients and make a well in the center of the bowl.
  • Mix wet ingredients in the well, then stir everything together, using your hands to form a ball.
  • Place ball of dough on a greased cookie sheet and roll out as thin as possible (I don't recommend air-bake cookie sheets). Optional: At this point you can score the dough with a pizza cutter or knife so that it will easily break apart into uniform shapes when done.
  • Bake for 12-15 minutes or until edges are browned and cereal feels slightly crisp and dry. If not dry, turn oven off and leave in longer.
  • Remove from oven and break into small pieces. Store in an airtight container.

  • Add the butter, peanut butter and honey to a saucepan and place over a low heat. Melt slowly and stir regularly until it forms a smooth, peanut-y sauce.
  • While the above is melting together, add the FREEE by Doves Farm Gluten Free Organic Corn Flakes to a food processor and blitz - you don't want it to be ground down to a powder, aim for a breadcrumb-type consistency with a few chunkier flakes. Empty into a large mixing bowl.
  • Pour the peanut mixture over the blended flakes and, using a wooden spoon or spatula, mix together until the flakes are fully coated. Pour the mixture into the lined baking tin and press down firmly so the entire bottom is covered and compacted down. Place the tray in the fridge for 30 minutes.
