1 pound ground chicken
1 cup grated cauliflower (grated in the coarse side of the box grater)
1 cup grated carrot (grated in the coarse side of the box grater)
1 cup grated pepper jack cheese (or Monterey jack )
1 large egg
3/4 cup panko breadcrumbs
1/2 cup minced onion
2 large garlic, finely minced
3/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon red pepper flakes (more if you like it spicy)
3/4 cup mayonnaise
1 and 1/2 tablespoons Sriracha sauce (more or less depending on your taste)
2 garlic cloves, finely grated
5 burger buns
1 large ripe avocado, mashed
lettuce
sliced tomatoes

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and spray with non-stick spray.
  • Place all ingredients in a large bowl. Mix well with hands.
  • Divide into 5 equal portions and shape into a disc about the diameter of your bun (about 3 1/2 inch). (If using very large buns, then you could make 4 burgers instead of 5)
  • Place on the prepared baking sheet and spray a coating of non-stick cooking spray on top.
  • Bake for 21-25 minutes, until cooked through.
  • Place pan on a wire rack to cool slightly.
  • Stir all ingredients together and refrigerate until serving time.
  • Top the bottom of a burger bun with some mashed avocado, top with a chicken patty, Sriracha mayo, tomato slices and lettuce. EAT.

½ cup dry bread crumbs
¼ cup dry French onion soup mix
4 ounces bacon, roughly chopped
2 tablespoons butter
1 small onion, sliced
1 cup sliced mushrooms
salt and ground black pepper to taste
6 medium croissants croissants, halved and toasted
6 slices Swiss cheese
6 slices bacon, halved and cooked

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine ground chicken, bread crumbs, and soup mix in a large mixing bowl.
  • Place 4 ounces bacon in a food processor. Pulse 10 to 12 times and scrape down the sides. Combine the bacon with the ground chicken mixture; form into 6 patties and place on a baking sheet. Place in a freezer to chill for 12 minutes.
  • Bake patties in the preheated oven for 8 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue cooking until browned, no longer pink, and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 12 minutes more.
  • Meanwhile, set a sauté pan over medium heat. Add butter and once butter is melted, add onion and mushrooms. Allow to soften, about 5 minutes. Sprinkle with salt and pepper.
  • Assemble chicken burgers by adding a chicken patty to each croissant, top with Swiss cheese, bacon, and the onion mushroom mixture. Serve immediately.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine ground chicken, egg, oil, blackened seasoning, liquid smoke flavoring, garlic powder, and basil in a large bowl. Mix to combine, but be careful not to over handle the ground chicken.

1 pound ground white meat chicken
2 cups coarse to fine fresh bread crumbs, divided (not canned)
1/2 cup low-fat milk
3 tablespoons grated sweet onion (or finely, finely minced)
1/4 teaspoon cayenne pepper
3/4 teaspoon coarse grained salt
Cracked black pepper
1 teaspoon olive oil

Steps:

  • Be sure to use ground white meat chicken. If you're buying your ground chicken from the grocery story, ring the bell and ask them if they've got what you're looking for or if they'll grind some chicken breast for you. You can also grind it yourself in a food processor. Remove all excess fat and cartilage from boneless, skinless chicken breast and tenders, cut into 1-inch cubes and pulse until coarsely chopped.
  • Use fresh bread crumbs. It only takes a few extra minutes. Remove crusts from good bread or don't remove the crusts, tear into chunks and pulse in a mini chopper or food processor. Make a giant batch and freeze them so next time you can skip this step.
  • Place chicken in a mixing bowl. Using a rubber spatula, fold in milk, 1/2 cup bread crumbs, onion, cayenne, salt and pepper. The mixture will be very wet which means it will be a tiny bit icky forming it into patties but forge ahead. Place remaining 1 1/2 cups bread crumbs on a dinner plate or cookie sheet. Divide chicken meat into 4 or 5 piles (you decide which portion size is best for you) and using your hands, shape into patties. Coat each patty with bread crumbs. Heat olive oil in a large non-stick skillet over medium heat and fry patties until golden and cooked through, about 5 minutes per side. Serve immediately.

1/4 cup hoisin sauce
1 tablespoon grated peeled ginger
4 teaspoons low-sodium soy sauce
3 teaspoons hot Asian chili sauce, such as sambal oelek
8 ounces white mushrooms, thinly sliced
2 teaspoons toasted sesame oil
Juice of 1 lime
4 whole-wheat sesame hamburger buns

Steps:

  • Preheat the oven to 375 degrees F. Mist a baking sheet with cooking spray. Grate the carrot and 1/2 onion into a large bowl. Add the chicken, panko, 2 tablespoons hoisin sauce, the ginger, 3 teaspoons soy sauce and 1 teaspoon sambal oelek and mix until combined. Shape the chicken mixture into 4 patties and place on the prepared baking sheet. Bake until cooked through, about 20 minutes. Meanwhile, thinly slice the remaining 1/2 onion. Toss with the mushrooms, sesame oil, lime juice and the remaining 1 teaspoon soy sauce in a bowl. Mix the remaining 2 tablespoons hoisin sauce and 2 teaspoons sambal oelek with 1 tablespoon water in another bowl. Warm the hamburger buns in the oven. I'm really proud of this one. My hubby loves them with cheese and my Smoky & Spicy BBQ sauce in sandwiches. I just can't believe I came up with this recipe. The day I came up with it I didn't have egg, so I would say the egg is optional. The way you can have your crumbs stick a little better to the patties is by using a little bit of mustard. The end product won't look golden brown (especially without any oil and with the panko) but they will taste delicious and they will be healthy.

2 -3 garlic cloves, pressed
1 teaspoon onion powder
1 teaspoon salt

1/4 teaspoon cumin
