- Preheat oven to 425 degrees. Cut a thin (1/4-inch) slice from the top of each head of garlic; discard. Place garlic in a small baking dish. Drizzle with oil. Cover with parchment paper-lined foil; roast garlic until soft and golden, about 1 hour and 15 minutes. To store, squeeze out unused cloves into jar and add enough olive oil to cover. Store closed jar in the refrigerator for up to one week.

- Preheat oven to 400F.
- Cut the top 1/2 inch from garlic bulb (straight across the top so you cut into just the tops of the cloves). Place garlic bulb in a ramekin, drizzle with olive oil and cover with foil.
- Roast for 30-40 minutes or until garlic is very soft and lightly browned. Remove from oven and allow to cool.
- Squeeze the garlic out of its skin and into a small dish. Mash with a fork and use as desired.

Steps:
- Heat oven to 350 degrees.
- Peel loose papery skins off garlic bulbs.
- Slice top of each head (pointy end) so that flesh is exposed.
- Place in garlic baker and drizzle with oil and sprinkle with herbs.
- Cover and bake about 45 minutes.
- Remove cover and continue baking for about 15 minutes until garlic is soft and golden.
- Cool before serving.
- Squeeze soft garlic out of skins and spread on meat or french bread.

- Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
- Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

- If you are using a ceramic/terra cotta garlic roaster, submerge it in water for 15 minutes before placing it in the oven.
- Cut the top 1/4" off the garlic bulb(s).
- Place in the garlic baker or on top of a sheet of aluminum foil.
- Drizzle with a little olive oil. Add herb sprig, if using.
- Add the lid or wrap up with foil and place in a cold oven.
- Bake for 50 to 60 minutes at 350F.
- Scoop the roasted bulbs out of each shell.
- Use immediately or store in the fridge covered in a little olive oil for up to 1 week. You can freeze it for longer storage to use in soups. But why would you freeze this goodness?

- Preheat oven to 400° F.
- If the garlic bulb has any loose papery skins, remove them. Do not peel the garlic though, as you want the cloves to stay together in the bulb. Slice off about ¼ inch of the top of the garlic bulb, or enough to expose the tops of the garlic cloves.
- Place garlic bulb(s) on a piece of foil. Drizzle with olive oil. If desired, sprinkle with salt and pepper. Wrap the foil up and around the garlic, keeping the bulb sitting upright.
- Place the foil-wrapped garlic in a small baking dish. Roast in the oven for 40-55 minutes, until garlic is soft and browned.
- Let the garlic bulb cool until it is cool enough to handle. Then use a small fork and your fingers to remove the roasted garlic cloves from the papery skins. Use roasted garlic in recipes that call for roasted garlic, mash it and spread it on toasted crusty bread, or freeze for later use.
