32 dill pickle slices
1/2 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
2 tablespoons dill pickle juice
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 cup panko bread crumbs
1 tablespoon snipped fresh dill

Steps:

  • Preheat oven to 500°. Let pickle slices stand on a paper towel until liquid is almost absorbed, about 15 minutes., Meanwhile, in a shallow bowl, combine flour and salt. In another shallow bowl, whisk eggs, pickle juice, cayenne and garlic powder. Combine panko and dill in a third shallow bowl., Dip pickles in flour mixture to coat both sides; shake off excess. Dip in egg mixture, then in crumb mixture, patting to help coating adhere. Transfer to a greased wire rack in a rimmed baking sheet., Bake until golden brown and crispy, 20-25 minutes.

These oven-fried pickles are a must-have for your next soiree. They are baked, and dipped in the most addicting buttermilk ranch with a hint of dill.

Number Of Ingredients 19

1 tablespoon fresh baby dill
½ cup mayo
¼ cup plain Greek yogurt
¼ cup milk
¼ cup buttermilk
1 tablespoon white balsamic vinegar
¼ teaspoon onion powder
¼ teaspoon garlic powder
⅛ teaspoon ground white pepper
salt, to taste
1 (24-ounce) jar dill pickles spears
½ cup all-purpose flour
2 large eggs
½ cup panko bread crumbs
½ cup stone-ground corn meal
¼ cup plain bread crumbs
1 tablesoon finely grated parmesan cheese
½ teaspoon cayenne pepper (more or less to taste)
¼ teaspoon black pepper

Steps:

  • In the bowl of your food processor or blender, combine all of the ingredients for the ranch. Blend until smooth and creamy. Pour into a small bowl and cover. Place in the refrigerator until you are ready to use.
  • Preheat your oven to 450 degrees F and spray a large baking sheet with a non-stick spray. Set aside.
  • Drain the jarred pickles and place them on a paper towel-lined plate. Pat completely dry. Set aside.
  • In one shallow bowl, add the flour. In another shallow bowl, add the eggs and whisk to combine. In a third shallow bowl, combine the panko, corn meal, regular bread crumbs, parmesan cheese, cayenne pepper and black pepper. Toss the ingredients until evenly distributed. You shouldn't need any more salt, as the pickles are already extremely salty. If you need more salt, then feel free to salt away.
  • Starting with one pickle, dredge in flour, then coat in the whisked eggs, and then transfer to the bread crumb mixture. Toss the pickle to make sure it is evenly coated, pressing to adhere where it is needed. Place on the prepared baking sheet and repeat this step for the rest of the pickles. Spray the pickles with a non-stick canola oil spray.
  • Place the pickles in the oven and bake for 25-30 minutes, rotating them halfway through. Spraying again with a non-stick canola oil spray. Make sure they are crispy before pulling them from the oven. This may take more or less time, so keep a close eye.
  • Serve immediately out of the oven with homemade dill buttermilk ranch.

1/4 cup buttermilk
2 tablespoons mayonnaise
2 tablespoons sour cream
1 clove garlic, minced
1 teaspoon kosher salt
1 teaspoon white wine vinegar
1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
Dash hot sauce
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
Twelve 3/4- to 1-inch-wide dill pickle spears
Vegetable oil, for deep-frying
3/4 cup all-purpose flour
1 tablespoon cayenne
1 teaspoon kosher salt
2 large eggs
1 1/2 cups panko breadcrumbs

Steps:

  • For the homemade ranch dip: Add the buttermilk, mayonnaise, sour cream, garlic, salt, vinegar, pepper, onion powder and hot sauce to a food processor. Pulse until well combined and smooth. Add the parsley and dill and pulse 4 to 5 times to incorporate. Pour into a serving bowl and set aside.
  • For the spicy pickle fries: Pat the pickle spears dry and refrigerate until well chilled. Heat 2 inches of oil in a large heavy pot to 350 degrees F on a deep-frying thermometer. Line a plate with paper towels.
  • Combine the flour, cayenne and salt in a wide shallow bowl. Beat the eggs in another shallow bowl. Put the panko in a third shallow bowl.
  • Working with a few spears at a time, dredge the pickles in the flour and shake off the excess. Roll them in the egg to coat, then let the excess drip off before coating them thoroughly in panko. Carefully add half the pickles to the oil and fry until golden brown, about 1 minute. With a slotted spoon, transfer the pickles to the lined plate to drain. Repeat with the remaining pickle spears. Serve hot with ranch dip.

¼ tsp EACH: Garlic Powder & Onion Powder
1/8 tsp Celery Salt
2 tsp freshly squeezed Lemon Juice ((SEE NOTES))
1 ¾ cup Finely Chopped Dill Pickles ( - (8 ounces total) DIVIDED - reserve 3 TBS for garnish (SEE NOTES))
1 heaping TBS EACH: Fresh Dill & Fresh Chives (- finely chopped, plus more for garnish)
½ Cup Panko Breadcrumbs ( - toasted & DIVIDED - reserve 1 TBS for garnish (SEE NOTES))
¼ cup Celery (- finely chopped (about 1 small rib))
Optional for serving: Pretzels, Chips, Fresh Vegetables, Bread Bowl or use it as a spread for sandwiches!

Steps:

  • Mix pickle dip base ingredients: In the bowl of a food processor or a mixing bowl with a hand-held mixer, combine the sour cream, cream cheese, ranch mix, garlic, onion, celery salt and lemon juice. Process or beat until creamy and smooth, stopping to scrape down the sides and bottom of the bowl as needed.
  • Fold in remaining ingredients: Add the pickles, dill, chives, breadcrumbs and celery. Gently stir/fold to combine.
  • Chill (for best taste): Cover the dip and refrigerate for at least 2 hours, or up to overnight. (Note: I recommend refrigerating at least 8 hours for the most flavor!)
  • Serve: Taste and adjust the dip for seasoning with kosher salt and ground black pepper. Garnish with remaining pickles and breadcrumbs. Serve and enjoy!
