SPICY OVEN-ROASTED PLUMS
Several years ago I was looking for a recipe to take advantage of our bumper crop of plums, and came across a recipe similar to this. After tweaking a bit, I have come up with a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a shallow baking dish with cooking spray.
- Place the plums, cut-side up, in a single layer in the baking dish.
- Whisk together the orange juice, brown sugar, cinnamon, nutmeg, cumin, and cardamom in a bowl; drizzle over the plums.
- Bake in preheated oven for 20 minutes, or until plums are hot and the sauce is bubbly. Top with toasted almonds, if desired (see Cook's Note).

Any fruit can be subbed here in this terrific winter pud - adapted from a Family Circle recipe found in a 1999 edition

- Pre heat oven 180 C.
- Lightly grease 6 cup ovenproof dish.
- Place flour, custard powder, sugar,butter,milk,eggs and vanilla into food processor.
- Process till mixture is creamy.
- Place drained plums in base of dish.
- Pour batter over fruit.
- Bake 50 minutes until skewer comes out clean.
- Serve warm with cream or ice cream.

BAKED PLUM SPONGE
Perfect for the first plums of autumn in a light, sweet and spongy batter

- Preheat the oven to 180C.
- Cream the butter and sugar together until pale and creamy. Gradually add the eggs, beating well between additions.
- Mix in the extract and then fold in the flour. Scrape the batter into a 24cm baking dish that has been slightly greased and scatter the plums on top.
- Bake for about 40 minutes until golden and springy to the touch. Sprinkle with sugar
- Serve with custard or cream
EASY PLUM CAKE
A super delicious cake, which is a great way of using plums when in-season. A buttery sponge cake is topped with plums, cinnamon, and sugar, before being baked to perfection. Serve with cream or whipped cream.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan.
- Combine sugar and butter in a large bowl and beat with an electric mixer until creamy. Add eggs, 1 at a time, and beat well after each addition. Combine flour, baking powder, and salt in a separate bowl and sift on top of the butter mixture. Mix to combine. Transfer batter into the prepared springform pan and smooth out.
- Set plums inside batter, cut-side up, and sprinkle evenly with cinnamon sugar.
- Bake in preheated oven on the lowest rack until a skewer comes out clean, 40 to 50 minutes. Serve warm or cool to room temperature.

BAKED PLUM PUDDING
Feel free to use your favorite kind of plum for this pudding recipe, but we recommend prune plums, which have an almond-shaped body that tapers at the end. They're on the smaller side, hold up well, and the pit comes off the flesh easily, all of which makes them especially good for baking.

- Preheat oven to 400°F. Butter a 2-qt. baking dish, then dust with granulated sugar. Arrange plums in dish.
- Pulse eggs and remaining 3/4 cup granulated sugar in a food processor to combine. With the motor running, stream in half-and-half, anise liqueur, if using, and vanilla. Add flour and salt and pulse to combine. Let custard sit 10 minutes, then pour over plums.
- Bake pudding 15 minutes, then reduce oven temperature to 350°F and continue to bake until custard is golden and set, 20-25 minutes longer. Let cool slightly, then dust with powdered sugar.
UPSIDE-DOWN PLUM CAKE
I used fresh ripe plums for this recipe, during plum season. The cake is a very soft sponge cake once taken out of the oven, and (in my opinion) It tastes eveb better the following day, especially if cold/refridgerated. It's important to let it rest in the tin for the allocated time (last two steps) - otherwise the cake may collapse.

Steps:
- Preheat oven to 180oC.
- Put half of the butter, half of the caster sugar and 1 tablespoon of honey in a heavy-based saucepan over low heat and stir until it makes a smooth sauce.
- Pour mixture into a (23 round) cake tin.
- Arrange plum halves (cut side down) closely fitting in the sauce mixture.
- Beat the remaining butter with the remaining caster sugar until pale and creamy in consistency.
- Add eggs one at a time and whisk in the vanilla sugar/powder.
- Add flour and milk alternatively to mixture.
- Spoon over plum halves.
- Bake for 1 hour or until cake mixture is cooked through (test with a skewer).
- Rest on a rack and let cool in tin for 30 minute.
- Place serving plate on top of tin and invert cake. Leave for 5 min and slowly remove tin.
