2 medium zucchinis (thinly sliced to about 1/4-inch thick rounds)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups Panko breadcrumbs
1/2 cup Parmesan cheese (grated)
1 teaspoon oregano (dried)
1 cup all-purpose flour
3 large eggs (beaten)

Steps:

  • Sweat Zucchini: Lay out a couple paper towels and place the zucchini rounds on them. Sprinkle zucchini with salt on both sides. Cover zucchini slices with more paper towels and press down them. Leave for about 20 minutes. After 20 minutes you will notice that the paper towels are wet and the zucchini slices are pretty dry.
  • Preheat Oven: Preheat oven to 400 F degrees. Line a large baking sheet with parchment paper.
  • Make Coating: In a shallow plate, combine Panko breadcrumbs, Parmesan cheese, oregano and season with salt and pepper if preferred; set aside.
  • Prep Dredging Plates: In another shallow plate add the flour which also needs to be seasoned with salt and pepper. In a 3rd plate beat eggs, with salt and pepper.
  • Dredge: Start by dredging zucchini rounds in flour, dip into eggs, then dredge in Panko mixture, pressing to coat. Place zucchini slices on prepared baking sheet. Repeat until all zucchini slices are done.
  • Bake: Bake for 20 to 30 minutes, or until the zucchini rounds are golden and crispy.
  • Serve: Serve with your favorite dip such as ranch.

1 kg (2lbs) zucchini
oil for frying
salt, to taste
400 g (14oz) chopped/crushed tomatoes (strained )
2 cups tomato passata ((strained tomatoes) )
2 garlic cloves (crushed)
1 tsp dried basil
2 tsp dried oregano
1 tsp dried thyme
pinch of sugar
2 tsp salt
½ tsp black pepper
1 cup mozzarella cheese (shredded/grated )
1 cup Parmesan cheese (finely grated )

Steps:

  • Pre-heat the oven to 200°C/400°F.
  • Slice the zucchini into long slices then fry in a hot pan until golden brown on both sides. Remove from the pan and season with salt.
  • To make the tomato sauce, combine all the ingredients and mix well. Test for seasoning and adjust as necessary.
  • To assemble, layer the cooked zucchini with the tomato sauce and cheese. Top with mozzarella cheese then cover with foil and place in the oven.
  • Allow to bake for 30-45 minutes until the sauce is reduced and bubbling. Remove the foil and bake for another 5-10 minutes until the cheese is golden brown.
  • Remove from the oven and allow to rest for at least 10 minutes. Top with fresh basil and serve.

1/2 red bell pepper, cored, seeded and cut into small dice

  • 1. Preheat the oven to 400 degrees F. Cut the zucchini in half lengthwise and use a small spoon to scoop out the seeds, forming a shallow cavity. 3 medium zucchini (shredded, about 3 cups)
1 teaspoon salt
3 large eggs
3/4 cup Parmesan cheese (good quality grated )
1 teaspoon dried leaf basil (or about 3 teaspoons finely chopped fresh basil)
3 tablespoons flour
1/4 teaspoon ground black pepper
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Put the shredded zucchini in a colander and mix with the salt. Cover and let drain for about 1 hour. Refrigerate if draining for a longer period of time.
  • In a mixing bowl, combine the shredded zucchini with the beaten eggs, cheese, basil, flour, and pepper.
  • Heat a few teaspoons of butter in a large skillet or griddle over medium heat. Spoon a few tablespoons of the zucchini batter into the skillet for each pancake and cook until browned on the bottom. Turn and cook until browned on the other side.
  • Serve as an appetizer with salsa, a savory dip, or chili sauce . Or serve the zucchini pancakes as a side dish with grilled meat or poultry.

2 medium zucchini (or 1 large zucchini, or four small zucchini)
1/4 cup olive oil
1/4 cup grated parmesan cheese + 2 tbsp
salt
pepper

Steps:

  • Preheat oven to 400 degrees
  • Slice zucchini slices (about 1/2″ thick)
  • Place zucchini in a large bowl and drizzle with olive oil
  • Shake to coat zucchini with olive oil
  • Add parmesan cheese, salt and pepper.
  • Shake to coat.
  • Place in a single layer on a large rimmed baking sheet lined with aluminum foil or a silicone baking mat.
  • Sprinkle with an additional 2 tablespoons of parmesan cheese
  • Bake in preheated oven for 10-15 minutes, finish on a low broil for another couple of minutes.
