Marinate tofu in a mix of rice vinegar, peanut butter, ketchup, garlic, and soy sauce, and discover that tofu really can be tasty! I've tried this recipe by first freezing and defrosting the tofu; it creates a nice texture.

MARINATED BAKED TOFU

Marinated Baked Tofu image

I am addicted to baked tofu!! Thank you Mollie Katzen and The Enchanted Broccoli Forest for the excellent marinade recipe! The tofu never lasts long enough to make it into a stir-fry at my house. I end up eating it by itself. I love it hot or cold. And of course absolutely everything to do with this recipe can be adapted to taste or what you have in the kitchen. Enjoy!

CRISPY BAKED TOFU

Crispy Baked Tofu image

From the Daily Herald. Joe Yonan is a food writer whose recipes I really like. I have not made this one yet, but am willing to bet it is good. Yonan says the freezing creates a much more satisfying texture to the tofu, and it also absorbs more of the marinade. The baked tofu can be eaten right away with veggie sides, or it can be cooled and used in salads, stir-fries or other dishes. Freezing time for the tofu is not included in the prep time.

Categories     Soy/Tofu

Time 1h

Yield 2 serving(s)

Number Of Ingredients 9

14 ounces extra firm tofu
1 tablespoon toasted sesame oil
1 tablespoon low sodium soy sauce
1 tablespoon sake or 1 tablespoon dry sherry
1 tablespoon rice vinegar or 1 tablespoon apple cider vinegar
1 medium garlic clove
1 in piece peeled fresh ginger, grated
4 tablespoons water
1/2 teaspoon hot chili paste

Steps:

  • Leave the tofu in its packaging and freeze for at least 24 hours and up to 1 week. Transfer to the refrigerator and allow to defrost for one day. Once it has defrosted, remove it from the package and drain, then wrap in it paper towels, hold it over the sink and press with your hands to remove much of the liquid.
  • Preheat oven to 350 deg.
  • Cut the tofu into 1 inch cubes.
  • Press or finely mince the garlic, mix together with all other ingredients in a 9 x 13 baking dish.
  • Add the tofu cubes and gently toss to combine with the marinade.
  • Bake for 45 minutes, turning the tofu three or four times, until the tofu is browned and most of the marinade is absorbed or evaporated.
  • Serve immediately or cool and refrigerate for up to a week in an airtight container.

HOMEMADE BAKED TOFU

Homemade Baked Tofu image

Packaged baked tofu is tasty and not all that expensive, but homemade baked tofu is even better. The trick to this chewy, savory transformation of bland white tofu is to make sure it's well pressed and to let it marinate for plenty of time.

Provided by Nava Atlas

Categories     HarperCollins     HarperCollins     Vegetarian     Vegan     Tofu     Bake

Yield 3-4 servings

Number Of Ingredients 9

One (14- to 16- ounce) tub firm or extra- firm tofu (see Note)
1/4 cup reduced-sodium natural soy sauce
1/4 cup white wine, cooking sherry, vegetable broth, or water
1 tablespoon dark sesame oil
1 tablespoon agave nectar or other liquid sweetener
2 tablespoons rice vinegar or white wine vinegar
1 to 2 cloves garlic, crushed or minced (optional)
1 teaspoon grated fresh or jarred ginger, or more to taste
Fresh or dried thyme leaves (either regular or lemon thyme) or fresh or dried oregano leaves to taste (optional)

Steps:

  • Drain the tofu and cut into 8 slabs crosswise. Blot well between paper towels or clean kitchen towels (or use a tofu press). Cut each slab into strips.
  • Combine the remaining ingredients in a small bowl and whisk together. Arrange the tofu slices in a single layer in a shallow container or baking dish and pour enough marinade over them to cover. Let stand for an hour or two-the longer the better.
  • Shortly before you'd like to bake the tofu, preheat the oven to 400°F. If this is the only thing you're making, use a toaster oven-it's the perfect size. Remove the tofu slices from the marinade and transfer to a parchment-lined baking pan in a single layer. If you're using the full-size oven, roast some veggies at the same time (I like to use the excess marinade to roast eggplant or green beans).
  • Bake for 20 minutes, then turn the strips and bake for 15 to 20 minutes longer, or until the tofu is firm and starting to turn light brown along the edges.
  • Variations:
  • Add 1 teaspoon liquid smoke (or more to taste) to the marinade for a subtle smoky flavor.
  • Instead of baking, cook these tofu slices on a grill. About 5 minutes per side should do-make sure there are nice grill marks on each side.

MARINATED TOFU

Marinated Tofu image

Baked tofu is crispy on the outside, creamy inside, and loaded with flavor. Removing as much water as possible from the tofu before cooking it, as in this recipe, helps the tofu absorb the flavors of the marinade and cook up crisp rather than mushy. It is delicious eaten as is or in sandwiches, salads, or stir-fries. Serve hot or cold.

Yield Serves 4

Number Of Ingredients 6

1 pound extra-firm tofu
2 tablespoons low-sodium soy sauce
1 tablespoon orange juice
2 teaspoons sesame oil
1 teaspoon canola oil
Cooking spray

Steps:

  • 1. Slice the tofu into 1/2-inch-thick slabs and lay the slices on top of paper towels. Use more paper towels (you'll probably need three) and firmly pat the tofu in order to remove as much of the water as possible. Cut the tofu into 3/4-inch cubes.
  • 2. In a medium bowl, combine the soy sauce, orange juice, sesame oil, and canola oil. Add the tofu cubes and toss gently. Cover and let the tofu marinate in the refrigerator for at least 30 minutes, and up to 24 hours.
  • 3. Preheat the oven to 450°F. Spray a large shallow baking dish with cooking spray. Place the tofu in a single layer in the baking dish. Bake for 25 to 30 minutes, or until golden brown.
