This is a recipe for people who like banana bread and muffins. These are great breakfast muffins! You may substitute coconut for some or all of the walnuts if you wish.

1 cup white sugar
½ cup vegetable oil
1 egg
3 ripe bananas, mashed
¼ cup chopped walnuts
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place muffin cups in muffin tin, or grease with a little butter.
  • Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
  • Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

A banana bread muffin so light, fluffy and tender, you'd never guess it's made with mostly whole-wheat flour. Using very ripe bananas keeps the muffins moist and minimizes the amount of sugar you add.

1 cup whole-wheat flour (see Cook's Note)
1/2 cup all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
5 tablespoons coconut oil, melted
1/4 cup packed dark brown sugar
1/4 cup maple syrup
1 teaspoon pure vanilla extract
2 large egg whites, at room temperature
1 1/2 cups mashed very ripe banana (about 3 large bananas)
1/2 cup chopped walnuts, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
  • Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.
  • Fill the lined muffin cups about three-quarters of the way with the batter (a generous 1/4 cup in each; see Cook's Note). Bake on the center rack until a cake tester or toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Let cool 10 minutes, then remove the muffins to a wire rack to cool completely.

"THE BEST" BANANA BREAD (OR MUFFINS!)



Okay, another banana bread recipe...But maybe the other ones don't have at least one ingredient that this one does...My family loves the muffins from this recipe...especially when I make mini-muffins! (I usually halve the recipe!) Makes 4 loaves or 60 muffins

1 1/2 cups butter or 1 1/2 cups margarine
4 cups sugar
8 eggs
5 cups mashed bananas
1 1/4 cups water
4 teaspoons baking soda
2 teaspoons salt
1 teaspoon baking powder
6 1/2 cups flour
1 cup chopped nuts (optional)
1 cup chocolate chips (optional, but a must for our family!)

Steps:

  • Cream together butter and sugar.
  • Blend in eggs.
  • Add bananas, water, soda, salt, and baking powder.
  • Blend well.
  • Stir in flour.
  • Add nuts and/or chips, if desired.
  • Pour into 4 greased/floured loaf pans or lined muffin tins.
  • Bake at 350: loaves need 35-40 minutes, or until toothpick inserted in center comes out clean.
  • Muffins need only 18-20 minutes.
  • ***With this recipe, I usually always make muffins to cut down bake time.

1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.

My Husband (who's very picky), & son (just as picky), went nuts over these. Very good. The best part, is not having to slice up a loaf. Just peal off the cupcake papers & eat!

1/2 cup one stick butter
3/4 cup brown sugar

  • Line Cupcake tin with papers & spray with vanilla pam (pam for baking).

2 1/2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
3/4 cup dark brown sugar
1/4 teaspoon ground cinnamon
2 cups smashed bananas (about 4 to 6 bananas)
1/2 cup vegetable oil
1/2 cup milk
2 large eggs, at room temperature
1/8 teaspoon fine salt
1/2 teaspoon pure vanilla extract
3/4 cups chopped walnuts

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  • Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  • Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
  • Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

Banana Bread has the ability to be soooo good and sometimes soooo bad...so I wanted to try to create a wonderful yummilicious banana bread recipe. I think I did it...seems pretty fool proof. On one of the ones pictured here I made a brown sugar/caramel glaze to drizzle over the top of the bread or fill the muffins...heavenly! On one I did a streussel topping. And sometimes I fill the muffins with a cream cheese filling, or use as a spread for the bread. Glaze recipe and Cream Cheese Filling recipe in directions. Happy Baking!!! :o)

2 teaspoon(s) pumpkin pie spice or cinnamon, optional

Steps:

  • Preheat oven to 350. Butter and line bottoms with parchment 2 9x5 loaf pans. I used 2 smaller (approx 8x4) loaf pans and a muffin pan for 12 muffins, which I lined with papers.
  • Sift together flour, soda, pie spice, salt and set it aside. Beat together eggs and sugar at medium high speed for about 5 minutes, until very thick and pale in color. Scraping bowl occasionally. Reduce speed and slowly drizzle in oil. Then add bananas, sour cream and vanilla, mixing well. Then gently mix in flour mixture, until just combined, stir in nuts.
  • Divide batter between the loaf pans, or fill 12 muffin cups 2/3 full and divide remaining batter between the two smaller loaf pans.
  • Bake large loaves at 350 for 1 hour. Bake muffins at 350 for 20 minutes. Bake small loaves at 350 for 45 min. Bake mini loaves at 350 for 30-35 min. They are done when a toothpick inserted comes out clean. Cool in pans 10 mins. then turn out onto cooling racks, turning loaves upright to cool completely.
  • Caramel Glaze, it is not needed, but when I make it as a gift or to sell, I will add it, as it adds a nice touch. Caramel Glaze: 1/4c butter, 1/2c milk, 1c brown sugar, 2T corn syrup...slowly over medium heat stirring constantly, bring to a boil, boil 1 minute. Remove from heat and stir in 1t vanilla and pinch of salt. Allow to cool completely, stirring occasionally. Pour into squeeze bottle (if desired) and store in refrigerator. Microwave to warm up for drizzle over bread or muffins and/or even on ice cream!!!
  • Cream Cheese Filling/Spread, it is not needed, but sure tastes good!!! Beat together 8oz cream cheese, soft, and 1/4 c butter, soft. Add in 1 c powdered sugar beating until smooth and creamy. Use to spread on banana bread or fill muffins.
  • Helpful Hint: when I mash my bananas I put them in the food processor and add 1-2t lemon juice to prevent browning, and pulse a few times until the right consistency I want.
