CHOCOLATE RUM BANANA BREAD
Steps:
- Heat oven to 350°
- Spray a 9x5 inch loaf pan with nonstick baking spray.
- Mash bananas into the bottom of a large bowl. Whisk in melted butter, rum, brown sugar, egg and vanilla.
- Place baking soda, salt, flour and cocoa powder in a sifter and sift into wet ingredients. Stir with a spoon until combined.
- Add chocolate chunks and stir to blend.
- Pour into prepared pan and bake for 60 - 65 minutes, until a toothpick inserted into the center of cake comes out clean.
- Cool in pan for 15 minutes, then take out and place on a cooling rack.

BANANAS IN BROWN SUGAR AND RUM
Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

- Peel bananas, and carefully cut in half lengthwise.
- In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
- Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
- Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
- Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
- Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.
FROZEN CHOCOLATE COCONUT RUM BANANAS

- Peel and halve the bananas. Place a wooden stick into each half. Arrange in a shallow pan and cover halfway with rum. Let stand 10 minutes, flipping halfway through. Place on a baking sheet and place in the freezer. Freeze until frozen through and firm, at least 1 hour.
- Once the bananas are frozen, leave them in the freezer while preparing the chocolate and coconut. Toast the coconut in the microwave in 30 second increments, stirring occasionally, until evenly golden, about 2 minutes 30 seconds. Toss the flaky salt with the coconut.
- Combine chocolate and coconut oil and microwave until melted, about 1 minute. Lightly whisk until the chocolate and oil are combined.
- Line a baking sheet with parchment paper. Remove the bananas from the freezer and pat dry if wet. Working quickly, dip each banana in the chocolate, then sprinkle with the coconut and salt, and let dry for a couple of minutes. Serve immediately.

- Take 4 10-inch squares of aluminum foil and brush them with butter. Make a careful slit lengthwise in the peel of each banana, and open wide enough to place the chocolate pieces inside the bananas then close them up.
- Wrap each stuffed banana in the foil then barbecue over hot coals about 5-10 minutes or until the chocolate has melted inside the bananas. Remove from the BBQ and place on individual serving plates. Pour some rum into each banana.
- Serve at once with sour cream mascarpone cheese, or ice cream, topped with nutmeg.
GRILLED BANANAS WITH RUM ICE CREAM AND MEXICAN HOT CHOCOLATE SAUCE

- Prepare grill.
- Peel bananas and halve lengthwise. In a shallow baking pan large enough to hold bananas in one layer stir together butter and brown sugar and add bananas, tossing gently to coat. Transfer bananas with a metal spatula to an oiled rack set 5 to 6 inches over glowing coals and grill until browned and cooked through, about 2 minutes on each side. (If bananas are difficult to handle you may grill them on 1 side only.)
- Serve bananas like a banana split with ice cream and chocolate sauce.
- To make rum ice cream:
- In a 2 1/2- to 3-quart heavy saucepan combine cream and milk. Scrape seeds from vanilla bean into cream mixture, dropping in bean. Add zest and bring mixture just to boil.
- In a large metal bowl whisk together brown sugar and yolks until combined well. Add hot cream mixture to yolk mixture in a slow stream, whisking, and return custard to pan. Cook custard over moderately low heat, whisking constantly, until thickened and coats back of a wooden spoon, about 3 minutes. (Do not let custard boil or it will curdle.)
- Pour custard through a very fine sieve into cleaned metal bowl and cool slightly. Stir in rum and chill, covered, until cold. Freeze custard in an ice-cream maker. Makes about 1 1/2 quarts.
- To make Mexican hot chocolate sauce:
- In a heavy saucepan heat chocolate and half-and-half over low heat, stirring frequently, until chocolate is melted. (The sauce will have a very thin consistency, like that of hot chocolate.) Serve sauce warm. Makes about 1 cup.
BAKED RUM BANANAS
The Spanish carried bananas with them to the New World in the 1500s, planting the root corms in Central America and the Caribbean islands, where they flourished. With its proximity to Cuba, the Florida Keys encountered the fruit long before the mainland did. Bananas weren't formally introduced to Americans until the 1878 Philadelphia Centennial Exhibition, where, wrapped in foil, they were sold for 10 cents each. - NOTE OF CAUTION: As one reviewer stated, she had an issue with blue flames erupting when she opened her oven door due to backdraft. When cooking with alcohol, one must always be cautious ~ please use EXTREME CARE when opening your oven door. As no other reviewers (or me for that matter) have had this problem, I'm hoping it was a fluke occurance, but wanted to post a warning with this recipe.
- Preheat oven to 450°F Place brown sugar, orange juice, nutmeg, cinnamon, and 1/2 cup rum in a small saucepan over medium heat. Heat until sugar is melted. Remove from heat.
- Meanwhile, peel bananas and cut them in half crosswise, then lengthwise, forming 4 pieces from each banana. Place bananas in a single layer in a baking dish. Pour hot rum mixture over bananas. Dot bananas with tiny bits of butter, about 3 dots per banana slice. (You can make dessert up to this point just before dinner, cover, and keep at room temperature until entree course is finished.).
- Bake bananas 10 minutes, uncovered, basting with rum mixture occasionally. Sprinkle remaining 1/8 cup rum over bananas and bake 5 minutes more.
- TO SERVE: Divide bananas among 4 dinner plates or shallow dessert bowls. Top with a scoop of vanilla ice cream.
- NOTE: If you can find baby finger bananas in your local supermarket, use them instead of ordinary bananas. They are much more flavorful. Cut each finger banana in half lengthwise. Allow 2 finger bananas per person.
BANANA RUM PANCAKES
Ripped this from a magazine some years ago and have also meant to try. They sound good. Times are estimated.

- Preheat oven to 275°F.
- Sift flour, sugar, baking powder and salt into large bowl.
- Add eggs, milk, oil, rum and vanilla extract and whisk to blend.
- Heat large nonstick skillet over medium-low heat.Brush skillet generously with additional oil.
- Working in batches, drop batter by 1/4 cupfuls into skillet. Place 6 banana slices on each pancake, spacing evenly. Sprinle 1 tablespoon granola over each pancake if using granola option.
- Cook until pancakes are light and golden brown, about 3 minutes per side.
- Transfer pancakes to baking sheet and keep warm in oven.
- Repeat with remaining oil, batter, bananas and granola.

PUFF PASTRY BANANA PIE WITH CHOCOLATE RUM SAUCE
Steps:
- Melt butter in heavy large skillet over medium heat. Add sugar, 1 tablespoon rum, water and cinnamon and stir until syrupy. Add bananas and cook 2 minutes, turning occasionally and basting with syrup. Using slotted spoon, transfer bananas to plate. Boil syrup until reduced to 2 tablespoons, about 2 minutes. Pour syrup over bananas; let cool.
- Combine chocolate, cream and corn syrup in heavy small saucepan; stir over low heat until chocolate melts and mixture is smooth. Remove from heat. Transfer 2 tablespoons chocolate mixture to small bowl (Mixture will be thick). Add 2 tablespoons rum to mixture in saucepan; stir sauce to blend.
- Position rack in center of oven; preheat to 400°F. Place 1 pastry sheet on floured work surface. Set 9-inch-diameter tart pan upside down on pastry. Using knife, cut pastry into 9-inch-diameter scalloped round. Repeat with remaining pastry sheet. Place 1 pastry round on ungreased heavy large baking sheet; arrange 3 whole bananas on pastry, forming circle and leaving 1/2-inch pastry border. Fill in center with remaining bananas, cutting to fit. Pour any syrup from bananas and reserved 2 tablespoons chocolate mixture over bananas. Brush pastry edges with beaten egg. Top with second pastry round. Press edges to seal. Brush top with egg. Using small sharp knife, cut 8 vents in top of pastry to allow steam to escape. Freeze 10 minutes.
- Bake until pastry is golden and puffed, about 30 minutes. Run long knife under pastry to loosen. Cool on baking sheet on rack until just lukewarm, about 1 1/2 hours. (Can be made 6 hours ahead. Let stand at room temperature.) Rewarm sauce over low heat. Serve pie with sauce.

- In a small bowl , whisk together egg white, sugar and vanilla until smooth. Add remaining ingredients and whisk to blend. Set aside until ready to bake. Line a baking sheet with parchment paper and brush with melted butter. Drop 1 tablespoon of batter onto the baking sheet. Spread batter with the back of a spoon or an offset spatula until about 13 centimeters in diameter. Leaving at least two centimeters between, repeat with remainder of batter baking four on a baking sheet, or as many as will fit. Bake at 350 D for nine to ten minutes or until golden. Lift immediately from baking sheet and drape over a rolling pin to create taco shell shape. Cool until ready to use. Can be made up to several days in advance and stored in air tight container.
- Place each banana in the foil and score diagonally about four times. Combine the rum, sugar and vanilla in a bowl and whisk to combine. Pour rum mixture into banana dividing equally. Wrap each banana tightly in foil.
- Grill or bake at 400 D bananas for about eight to ten minutes or until juices are starting to caramelize and banana is soft. Open foil, if desired to create a thicker sauce. Save any rendered juices from foil pack and transfer to a small bowl.
