1 box Barilla® Mini Farfalle
2 tablespoons Extra Virgin Olive Oil
1 tablespoon White Onion, Diced
9 ounces Frozen Peas
3/4 cup Vegetable Broth
1 pint Cherry Tomato, Halved
2 cups Mozzarella Cheese, Shredded

Steps:

  • Bring a large pot of water to a boil.
  • Heat olive oil in a large skillet. Add onions and sauté for 5 minutes over low heat.
  • Add peas, vegetable broth and simmer for 5 minutes.
  • Process mixture in a blender until smooth and creamy. Return to the skillet and add tomatoes. Season with salt and pepper, simmer 5 minutes.
  • Meanwhile, cook pasta according to package directions. Drain and toss with sauce.
  • Garnish with mozzarella cheese before serving.

This recipe adapted from my mom's Cavetelli and Broccoli recipe. It is easy to make and is very good.

1 lb farfalle pasta (can substitute with cavetelli)
1 bunch broccoli floret (Brassica oleracea)
4 -6 garlic cloves, peeled and chopped
1/4 cup butter
1/2 cup grated parmesan cheese

Steps:

  • Sauté garlic and butter in pan.
  • Slightly brown, Do not overcook.
  • Steam broccoli until bright green and soft.
  • Cook farfalle according to packing instructions.
  • When using Barilla cook 11 minutes for al dente. Combine all above ingredients in bowl; mix in grated cheese.
  • Place into oven safe dish and bake for 5-10 minutes at 350°F.

  • Place chicken breasts on cutting board and cover with plastic wrap. Using a meat mallet or rolling pin, pound chicken breasts into an even ½-inch thickness. Sprinkle chicken with ½ teaspoon of the salt and the black pepper; set aside.
  • In a large pot, bring 4 to 6 quarts of water to a rolling boil; add salt to taste and the pasta. Stir gently, then cook pasta according to package directions.
  • Meanwhile, in an extra-large nonstick skillet heat 1 tablespoon of the oil over medium-high heat. Add chicken breasts and cook 4 minutes; turn and cook 4 to 5 minutes more or until chicken is cooked through and no longer pink (170°F). Remove chicken from skillet and set aside.
  • Wipe skillet clean. Add remaining 1 tablespoon oil to skillet and heat over medium heat. Add in the tomatoes, remaining ½ teaspoon salt, and garlic. Cook, stirring frequently, 4 to 5 minutes or until tomatoes begin to burst. Stir in sauce.
