Be sure to use a good quality (or homemade) stock for this soup for best flavor. If you have to use broth or bouillon cubes, add some celery and carrots, at least, to better flavor the broth (add the carrots and celery with the onions in the recipe).

1 cup pearl barley
1/4 cup olive oil
1 lb cremini mushrooms or 1 lb mixed mushrooms, sliced
1 onion, chopped
4 garlic cloves, minced
1 bunch kale, stemmed and shredded
kosher salt & freshly ground black pepper
1 pinch nutmeg
32 ounces chicken stock (4 cups) or 32 ounces vegetable stock (4 cups)
1/4 cup dried porcini mushrooms or 1/4 cup mixed wild mushroom
pecorino romano cheese, shaved for garnish

Steps:

  • Bring a medium saucepan of water to a boil and cook the barley until just tender, about 20 to 22 minutes; drain and reserve.
  • Meanwhile, heat the oil in a soup pot, over medium high heat, and add the mushrooms and cook until browned; add the onions and garlic and cook until the onions are soft, about 12 to 15 minutes.
  • Add the kle and cook until wilted; season with salt, pepper, and nutmeg.
  • Stir in the stock, 2 cups water, and dried mushrooms; bring to a boil, then lower heat, cover, and cook until the dried mushrooms are tender, about 7 or 8 minutes.
  • Stir in the reserved barley and heat through.
  • Serve in shallow bowls with shaved cheese on top.

After tinkering with three different recipes, I came up with this warming rich, dark brown broth with hearty mushrooms, barley and onions. It's a beefy tasting soup for my meat loving husband, completely vegan for me and healthy for both of us. It can simmer all day in a crock pot or be served up right after preparation.

1 large onion, chopped
2 cups sliced fresh mushrooms
1 tablespoon olive oil
2 garlic cloves, minced
7 cups reduced-sodium chicken broth
2 cups water
1/2 cup medium pearl barley
2 tablespoons reduced-sodium soy sauce
1 teaspoon dried thyme
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute onion and mushrooms in oil until vegetables are tender. Add garlic; cook 1 minute longer. , Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until barley is tender.

¼ cup olive oil
1 cup chopped onion
¾ cup diced carrots
½ cup chopped celery
1 teaspoon minced garlic
1 pound sliced fresh mushrooms
6 cups chicken broth
¾ cup barley
salt and pepper to taste

Steps:

  • Heat the oil in a large soup pot over medium heat. Add the onion, carrots, celery and garlic; cook and stir until onions are tender and transparent. Stir in mushrooms and continue to cook for a few minutes. Pour in the chicken broth and add barley. Bring to a boil, then reduce heat to low. Cover and simmer until barley is tender, about 50 minutes. Season with salt and pepper before serving.

1 cup boiling water
2 tablespoons canola oil
1 onion, finely chopped

6 cups beef stock
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 tablespoon Worcestershire sauce

Steps:

  • Combine pearl barley and boiling water in a bowl; set aside to soak for 10 minutes.
  • Heat canola oil in a large saucepan over medium heat. Cook and stir onion, celery, and carrot in hot oil until softened, 5 to 7 minutes.
  • Stir mushrooms into the onion mixture; cook and stir until softened and brown, about 5 minutes.
  • Drain the barley, discarding any remaining water from soaking. Stir the barley into the mushroom mixture.
  • Stir the garlic and tomato paste into the mixture, stir until combined, then pour the beef stock into the sauce pan. Season with the oregano, salt, black pepper, and Worcestershire sauce.
