EASY LIMA BEANS
If you are looking for a way to fix lima beans besides boiling them in water try this recipe. I don't think you'll be sorry you tried them. :) If you want to have more of a buttery flavor, remove the beans from the liquid and place into a bowl then add the final 2 Tablespoons of butter and then salt and pepper to taste. I saw the basic recipe on allrecipes.com which was posted to that site by SharonB13.The name is the same as her's, but I changed a few things to the recipe and decided to post it under my own name.Submitted to Food.com ( A.K.A. LEMON-GARLIC LIMA BEANS
When I was growing up on Cyprus, my mother would often make this side dish to have with roast lamb. Although I hated lima beans when I was a kid (who didn't?), I love them now. They always remind me of home. -Paris Paraskeva, San Francisco, California

BARBECUED LIMA BEANS
Surprise! This lively lima bean dish has the great flavor of old-fashioned baked beans. Sweet and savory, they're a crowd-pleasing addition to picnics and barbecues, say Lois Johnson of South Hill, Virginia.

SKILLET LIMA BEANS
Skillet dishes are the cornerstone of Gullah cooking, and these lima beans are made in my favorite skillet-cast-iron. Instead of simmering the lima beans for hours and hours, I've added a fresh take to the traditional Lowcountry side dish by adding bell peppers and tomatoes.

Steps:
- Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
- Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
- Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.
