Amazingly Simple Tomato Sauce image

I've used this sauce for lasagna, ziti, eggplant Parmesan, meatballs, and spaghetti. You name it, it's great with it.

2 teaspoons olive oil
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6.5 ounce) cans canned tomato sauce
2 (6 ounce) cans tomato paste
½ cup water
2 tablespoons white sugar
2 tablespoons chopped fresh parsley
1 ½ teaspoons dried basil
1 tablespoon salt
1 teaspoon Italian seasoning
½ teaspoon fennel seeds
¼ teaspoon ground black pepper

Steps:

  • Heat olive oil in a large, heavy pot over medium heat. Cook and stir onion and garlic in hot oil until tender, 5 to 7 minutes.
  • Stir crushed tomatoes, tomato sauce, tomato paste, and water with the onion mixture until smooth; add sugar, parsley, basil, salt, Italian seasoning, fennel, and pepper. Stir the mixture, bring to a simmer, reduce heat to low, and cook, stirring occasionally, until thickened and the seasonings have permeated the sauce, 1 hour to 90 minutes.

3 tablespoons olive oil
⅓ cup onion, diced
2 cloves garlic, minced
5 tablespoons tomato paste
28 oz crushed tomato
1 teaspoon dried oregano
1 teaspoon dried basil
salt, to taste
pepper, to taste

Steps:

  • In a pot over medium heat, add the olive oil, onion, garlic, and tomato paste. Cook for 5-7 minutes or until the tomato paste has caramelized.
  • Add the canned tomatoes, dried oregano, and dried basil. Reduce heat to a simmer and cook for 15-20 minutes or until the desired thickness.
  • Add salt and pepper to taste.
  • Enjoy!

Yield Makes 3 cups; enough for 1 pound of pasta

Number Of Ingredients 7

1 1/2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/8 teaspoon crushed red pepper flakes
1 28-ounce can best-quality tomatoes, pulsed in a blender
1/2 teaspoon coarse salt
1 sprig of fresh basil (optional)
1 tablespoon unsalted butter (optional)

Steps:

  • Heat a medium saucepan over medium heat. Swirl around the olive oil to coat the pan, and when the oil is hot, add the garlic and red pepper flakes. Stir constantly for 30 seconds, just long enough to release the garlic's fragrance and transform it slightly from its raw state. Don't cook it to golden.
  • Raise the heat to high and stir in the tomatoes and salt. Bring to a boil, reduce the heat, and simmer, uncovered, for 30 minutes. In the last 5 minutes of cooking, add the basil sprig, if using. Remove the basil before serving and swirl in the butter, if using.

1 28-ounce can plum tomatoes, well drained
1/2 cup beef bouillon or juices from the meat loaf
1 teaspoon sugar
Salt and freshly ground black pepper to taste
Pinch red pepper flakes
1 tablespoon good quality fragrant extra-virgin olive oil

Steps:

  • Put the onion in a nonstick skillet over medium heat and cook, stirring, a few minutes. Add the garlic and cook until the onion is tender.
  • Add the tomatoes and cook over medium high heat until they start to thicken, about 15 minutes. Stir in the bouillon or meat juices, sugar, salt and pepper and red pepper flakes.
  • Just before serving, reheat and stir in the olive oil.

2 tablespoons extra-virgin olive oil
3 medium-size onions, coarsely chopped
3 cloves garlic
4 pounds ripe tomatoes, quartered, or 3 large (28-ounce) cans of Italian plum tomatoes
1 bay leaf
A handful of fresh herbs - preferably a mixture of basil, chervil, thyme and Italian parsley -minced
1/2 teaspoon hot red-pepper flakes (optional)
Zest of 1 orange (optional)
Salt and freshly ground black pepper to taste

Steps:

  • In a large, deep skillet, heat the oil over medium heat. Add the onions and garlic and cook, stirring frequently, until soft but not brown. Increase heat to medium high and add remaining ingredients, seasoning lightly with salt and pepper. Simmer over medium heat, stirring frequently, until thick, 30 to 45 minutes. Check the seasoning.
  • Pass the mixture through the fine-mesh sieve of an electric mixer (or through a food mill).
  • The sauce will keep, refrigerated, for several days. To keep longer, freeze it or preserve in canning jars in a hot-water bath.

450 g ripe tomatoes, chopped (peeled or unpeeled as you prefer)
1 tablespoon olive oil
1 onion, chopped
1 -2 teaspoon tomato puree
1 clove garlic, crushed (more if you like it)
2 tablespoons chopped fresh basil or 1 teaspoon dried basil (add more if you are a basil fan as I am)
salt
pepper
chili powder (optional)
minced meat (optional)

Steps:

  • If I want to use this as a the basis for a meat sauce or chilli sauce I don't usually bother to peel the tomatoes, when I want a silky smooth sauce that runs beautifully I do peel them.
  • You choose Peel tomatoes by covering with boiling water in a bowl for 5 minutes if you want the"smooth" recipe.
  • Chop tomotoes into evenly sized pieces.
  • Heat olive oil and sauté garlic and onion until soft.
  • Add tomatoes, tomato pureé, Basil, salt and pepper.
  • Simmer gently got 30-40 until it reduces a little.
  • Serve as is, or put in a blender until smooth.
  • For Chilli sauce, add 1/4-1/2 teaspoon chilli powder (to your preference) or fresh chillies.
  • Adding browned minced meat makes a nice easy sauce for over pasta.

I discovered this sauce recipe by total accident, randomly paging through a 33 year old Sunset canning book. Once made, it is the BEST fresh tomato sauce I've ever tried or made. Well worth the time it takes to make from scratch.

2 onions, medium-sized, finely chopped
4 garlic cloves, minced
1/3 cup olive oil
5 lbs fresh tomatoes (about 12 medium-sized ones)
1/2 cup green onion (white and green parts minced)
1 green pepper, seeded and chopped
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon anise seed, crushed
1 tablespoon oregano leaves, crushed
1 teaspoon rosemary, crushed
1 teaspoon paprika
2 cups dry red wine (to taste)

Steps:

  • In a large Dutch oven, cook onions and garlic in olive oil over medium heat until golden brown (about 15 minutes), stirring occasionally.
  • Meanwhile, immerse tomatoes, a few at a time, in a large pan of boiling water for 1 minute; then lift out and plunge in plunge into cold water. Pull off and discard skin.
  • Cut tomatoes into eighths and add cooked onions, along with green onion, green pepper, salt, pepper, anise seed, oregano, rosemary, paprika, and the 2 cups of dry red wine.
  • Bring mixture to boiling, stirring with a heavy wooden spoon to break up tomatoes. Cover, reduce heat, and simmer for 1 hour. Remove cover and boil until reduced to 8 cups.
  • You can use the sauce while hot, let it cool and refrigerate for 3 days, or freeze up to 4 months.
