CREAMY BASIL-AVOCADO PASTA



Creamy Basil-Avocado Pasta image

Quick and light creamy sauce made with basil, avocado and yogurt, served over your favorite pasta.

8 to 12 ounces Fettuccine Pasta
1 avocado (, peeled and pitted)
6 fresh basil leaves
3 green onions (, thinly sliced, white parts only)
1/3- cup cilantro or flat leaf parsley
1 tablespoon fresh lime juice
1/2- cup nonfat plain yogurt
1 tablespoon water
salt and fresh ground pepper (, to taste)
Parmesan shavings ((optional))

Steps:

  • Cook pasta according to the directions on the box.

8 ounce dried bow tie and/or wagon wheel pasta
2 medium avocados, halved, seeded, peeled, and coarsely chopped
6 slices bacon, crisp cooked, drained, and crumbled
0.667 cup chopped fresh basil
2 tablespoon lemon juice
1 tablespoon olive oil
3 cloves garlic, minced
0.25 teaspoon ground black pepper
0.125 teaspoon salt
0.5 cup finely shredded Pecorino Romano cheese

Steps:

  • Cook pasta according to package directions. Drain.
  • Meanwhile, in a large bowl combine the avocados, bacon, basil, lemon juice, olive oil, garlic, pepper, and salt. Add the hot pasta and toss to combine. Transfer to a serving bowl. Sprinkle with cheese. Makes 4 servings.

2 avocados (diced)
¼ cup basil leaves (thinly sliced)
2 tablespoons lemon juice
2 tablespoons olive oil
⅓ cup parmesan (shredded )
3 slices bacon (cooked and diced)
1 cup cherry tomatoes (quartered)
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Combine all ingredients in a large bowl.
  • Toss to mix well.
  • Chill until ready to serve, or serve immediately.
  • Enjoy!

8 ounces bow tie pasta or 8 ounces wagon wheel macaroni
2 medium avocados, halved,seeded,peeled and coarsely chopped
6 slices bacon, crisp cooked,drained and crumbled
2/3 cup chopped fresh basil
2 tablespoons lemon juice
1 tablespoon olive oil
3 cloves garlic, minced
1/4 teaspoon ground black pepper
1/8 teaspoon salt

1 ½ cups cherry tomatoes, halved
½ cup olive oil
3 tablespoons lemon-infused white balsamic vinegar
2 cloves garlic, chopped
⅓ cup chopped Thai basil
1 (8 ounce) container small mozzarella balls in oil, halved
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Combine cherry tomatoes, mozzarella balls, olive oil, balsamic vinegar, garlic, and Thai basil in a large mixing bowl; mix well. Season with salt and pepper to taste.
  • Drain pasta and top with cherry tomato mixture.
