TRADITIONAL ITALIAN BASIL PESTO WITH PINE NUTS



Traditional Italian Basil Pesto with Pine Nuts image

Fresh pesto is like gold; combine fresh basil with olive oil, pine nuts and seasonings for the perfect Italian version that is fantastic on pasta and veggies.

2 cups fresh basil leaves (tightly packed)
1/2 cup extra virgin olive oil
3 tablespoons pine nuts (toasted)
2 cloves garlic (plain or roasted, chopped fine before putting in the processor)
1/2 fresh lemon (juiced)
1/8 tsp salt (more to taste when finished if necessary)
4 tablespoons butter (softened to room temperature)
1/2 cup Parmesan cheese (freshly grated)
2 tablespoons Romano cheese (freshly grated)

Steps:

  • Briefly soak and wash the basil in cold water, and gently pat it thoroughly dry with paper towels.
  • Put the basil, olive oil, pine nuts, chopped garlic, lemon juice, and salt in the processor bowl, and process to a uniform consistency; I like mine to be just a bit chunky, not completely smooth.
  • Add the softened butter and whirl in just until combined.
  • Transfer to a bowl, and mix in the two grated cheeses by hand; this results in a nice texture; better than blending with everything in step two.
  • Store in the fridge.

1 lb farfalle pasta
1/2 cup pine nuts
4 garlic cloves
3 cups fresh basil leaves
1 cup olive oil
1/2 cup parmesan cheese, grated
2 tablespoons lemon juice
salt and pepper
1/2 cup peas, defrosted
1 cup English cucumber, diced
4 green onions, sliced

Steps:

  • Cook the pasta according to the package directions.
  • Drain and rinse with cold water; drain again.
  • In a food processor or blender, process the pine nuts, garlic and basil leaves until finely chopped.
  • With the processor running, pour in the olive oil until combined.
  • Add the cheese, lemon juice, salt and pepper.
  • Toss the pesto with the pasta.
  • Mix in the peas, cucumber and green onions.
  • Serve garnished with basil leaves.

1 lb farfalle pasta (bow tie)
4 cups parmesan cheese, shredded
1 cup fresh basil, chopped
2 tablespoons garlic, minced
1/2 cup olive oil
3 ounces pine nuts
salt

Steps:

  • Boil Farfalle according to instructions. Al Dente works the best.
  • Meanwhile: Add 2 cups Parmesan cheese, 2 packages fresh basil, garlic, salt, and 1/2-package pine nuts in food processor.
  • Slowly pour the olive oil while blending all ingredients together.
  • Set aside.
  • Toast the remaining pine nuts in a splash of olive oil until golden brown.
  • Set aside.
  • Rinse pasta.
  • Stir in the cheese/basil mixture.
  • Blend in the remaining 2 cups Parmesan and the toasted pine nuts.
  • Serve warm or cold.

2 tablespoons toasted pine nuts
2 tablespoons freshly grated Parmesan
1/4 teaspoon minced garlic
1/2 teaspoon kosher salt
1/4 cup plus 1 tablespoon extra-virgin olive oil
Freshly ground black pepper

Steps:

  • In a food processor, combine the basil, pine nuts, Parmesan, garlic, and salt and puree. While the motor is running, drizzle in the oil until incorporated. Season with pepper, to taste. Use immediately or store in the refrigerator with a piece of plastic wrap placed right on the surface of the pesto to prevent discoloration, for up to 3 days, or freeze for up to 1 month.

1/2 cup freshly grated Pecorino cheese

Steps:

  • Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.
  • If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.
  • If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.
