CLASSIC FISH AND CHIPS



Classic Fish and Chips image

Good tasting, simple recipe for New England's favorite dish fish and chips. Serve with malt vinegar, lemon, or tartar sauce.

Number Of Ingredients 9

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

4 cups frozen steak fries
4 salmon fillets (6 ounces each)
1 to 2 tablespoons prepared horseradish
1 tablespoon grated Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/2 cup panko bread crumbs
Cooking spray

Steps:

  • Preheat oven to 450°. Arrange steak fries in a single layer on a baking sheet. Bake on lowest oven rack 18-20 minutes or until light golden brown., Meanwhile, place salmon on a foil-lined baking sheet coated with cooking spray. In a small bowl, mix horseradish, cheese, Worcestershire sauce, mustard and salt; stir in panko. Press mixture onto fillets. Spritz tops with cooking spray., Bake salmon on middle oven rack 8-10 minutes or until fish just begins to flake easily with a fork. Serve with fries.

This recipe for battered salmon and chips will soon be a family favourite. We've given the timeless dish a makeover, using fresh salmon.

Number Of Ingredients 7

150g plain flour
1tsp baking powder
1tsp sea salt
200ml beer or lager
750g Maris Piper potatoes, skin on, cut into batons
Sunflower oil for deep frying (about 1 litre)
4 salmon fillets, skin on

Steps:

  • Mix together the flour, baking powder and sea salt. Whisk in the beer or lager until you have a smooth thick batter. Place in the fridge until needed.
  • Bring a pan of water to the boil and cook the potato batons for 10 mins. Drain and leave to dry off.
  • In a saucepan or deep fat fryer, heat the oil. Drop in a little batter to test if it's ready. Fry the chips until golden and crispy, then remove using a slotted spoon if you don't have a frying basket. You may need to do this in batches.
  • Dip the salmon into the batter, ensuring it's all coated, and then place carefully into the hot oil. Fry until the batter is golden and cooked- the salmon should be cooked through too. You can test with a meat thermometer, but it doesn't matter if the salmon is a little translucent inside.
  • Serve with the salt and vinegar, a wedge of lemon and some garden peas, if liked.

This a good recipe for a quick dinner. It goes well with my version of "Chips" for a "Gourmet Fish n Chips" meal!

Number Of Ingredients 9

1 salmon fillet, with skin on
1 -2 tablespoon olive oil
Old Bay Seasoning
smoked memphis bbq seasoning (or any dried BBQ seasoning)
sea salt
1 potato
1/2 tablespoon butter
smoked memphis bbq seasoning (or any dried BBQ seasoning)

Steps:

  • For the Fillets:.
  • Heat Olive Oil in a small pan over medium heat.
  • Lightly sprinkle seasonings over meat side of the fillet.
  • Place Salmon meat side down in hot oil to sear flavorings into fillet. 2-3 minutes.
  • Using tongs carefully flip Salmon to skin side down. Reduce heat to low/simmer and put lid over the pan.
  • Let cook until meat is tender and flakes easily 5-10 minutes for thin fillets, longer if using thick cut fillet.
  • Making more than one serving is simple and easy, just use a bigger pan! If making a bigger batch of these heat oven to 350, and once the fillet is seared place on a non stick pan with edges, once all fillets are seared place in oven for 5-10 minutes or so to finish the cooking!
  • For the Chips:.
  • Wash potato and slice into rounds.
  • Place in microwave safe bowl and add butter, cover and microwave on high for aprox 4-5 minutes, or until all rounds are tender when pricked with fork.
  • Toss rounds with BBQ seasoning (to taste) and Sea Salt.
