CREAMY BEEF AND MUSHROOM STROGANOFF



Creamy Beef and Mushroom Stroganoff image

Comfort food at its finest. Pasta and a white wine spiked creamy sauce -- also known as Beef Stroganoff -- ready and on the table in less than 20 minutes. Say, what?! Yes! Weight Watchers: 13pp per serve

Number Of Ingredients 15

500 g | 1lbs egg Fettuccine ((dry weight))
4 tablespoons butter, (divided)
1 onion, (chopped)
4 cloves garlic, (crushed or minced)
1 pound (500 grams) sliced mushrooms
24 ounces (700 grams) lean beef fillet steaks, seasoned with salt and pepper and cubed into 1 1/2-inch pieces
2 teaspoons dijon mustard
1 teaspoon paprika, ((smoky or mild))
1/3 cup dry white wine, ((or more if you like it stronger))
2 cups beef broth (or stock), ((or 2 cups water mixed with 1 tablespoon vegetable stock powder))
2 tablespoons flour
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1 cup light sour cream at room temperature, ((or reduced fat cooking cream))
Freshly chopped parsley to garnish

Steps:

  • Boil the pasta in a large pot of boiling salted water according to packet instructions until al dente. Remove; strain and set aside.
  • While pasta is boiling, melt 2 tablespoons of butter in a large non-stick frying pan over medium heat. Sear the steak in single layer batches until browned; transfer to a separate plate and set aside until all batches are done.
  • Melt the remaining butter in the pan; add the onions and sauté until transparent, then add the garlic and fry until just fragrant (about 30 seconds). Add the mushrooms and cook until the mushrooms are tender and cooked through (about 4 minutes). Mix in the mustard and paprika.
  • Add the wine and cook for about 3 minutes while stirring occasionally to mix all of the flavours through, deglazing the pan while scraping any browned bits off the bottom of the pan with your spoon. Allow wine to reduce down to about half the amount (about 3 minutes).
  • While wine is reducing down, grab a small jug and whisk together the beef broth (or stock), flour and Worcestershire sauce until smooth. Pour the beef broth mixture into the pan, mix well and bring to a simmer for about 5 minutes, stirring occasionally until the sauce begins to thicken.
  • Return the beef and any juices from the plate to the pan and season with any extra salt and pepper (if desired). Reduce heat down to low and mix in sour cream. Heat until hot (do not boil).
  • Add the pasta or noodles into the pan and garnish with parsley.

1/2 cup neutral oil (safflower, peanut, etc)
1 lemon, juiced
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon ground cardamom
1/4 teaspoon ground cayenne pepper
2 pounds cubed stew beef
1 onion, quartered and sectioned

Steps:

  • In a mixing bowl, whisk together the oil, lemon juice, and spices.
  • Add the beef and onions, stir to combine, cover, and refrigerate at least 8 hours, up to overnight.
  • Preheat the grill to high heat, and the oven to 200F.
  • Remove the beef and onions from the marinade, thread alternately on metal skewers, and grill until a crust forms, about 2 minutes on each side.
  • Transfer the skewers to a baking sheet and roast in the preheated oven until cooked though and tender, about 45 minutes.
  • Serve with Peri Peri Sauce for dipping.

1 large rib eye steak (thinly sliced)
1 teaspoon baking soda
1 tablespoon cornstarch
2 tablespoon soy sauce
3 tablespoon oyster sauce
2 tablespoon soy sauce (low sodium)
1 teaspoon dark soy sauce
2 teaspoon sugar
2 teaspoon rice vinegar
1 teaspoon sesame oil
2 tablespoon olive oil
3 cloves garlic (minced)
1 large onion (sliced)
2 inch ginger piece (julienned)
8 ounce mushrooms (quartered)
3 green onions (sliced)

Steps:

  • Prep Beef: Add the beef, baking soda, cornstarch and 2 tbsp of soy sauce to a bowl. Toss everything together and set aside.
  • Combine Stir Fry Ingredients: Combine all the stir fry sauce ingredients together in a bowl and set aside.
  • Cook: Heat the olive oil in a large skillet or wok over high heat. Add the beef and spread it out. Don't touch it for 2 minutes, allowing it to sear. Toss it around a bit, then add the garlic, onion, ginger and cook for 1 minute. Stir in the mushrooms and cook for an additional 2 minutes, just until they start to brown a bit. Pour the sauce over everything and toss until well combined.
  • Garnish & Serve: Garnish with green onions and serve.

It may not be traditional in the strictest sense of the word, but the combination of soy sauce and butter is quickly becoming a favorite both in Asia and here at home. One of my favorite ways to combine them? In a stir-fry, like this simple recipe with marinated flank steak, stir-fried with mushrooms.

1/2 pound flank steak, sliced about 1/8 inch thick
1/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon ground black pepper
1/2 teaspoon Shaoxing wine
1/2 teaspoon soy sauce
1 teaspoon plus 3 tablespoons vegetable oil, divided
1/2 teaspoon cornstarch
1 ginger piece, sliced quarter inch thick
1/2 pound mix variety of mushrooms, sliced about a quarter inch or more thick
2 teaspoon soy sauce
1 tablespoon butter
2 medium cloves garlic, finely minced (about 1 teaspoon)
Steamed white rice, for serving

Steps:

  • Place the beef in a large bowl. Add the salt, sugar, ground black pepper, Shaoxing wine, 1/2 teaspoon soy sauce, 1 teaspoon oil, and cornstarch. Mix well and set aside for 30 minutes.
  • When ready to cook, heat 2 tablespoons oil in a wok over high heat until smoking. Add the ginger. Cook for 30 seconds and then remove and discard the ginger.
  • If the wok is no longer smoking, reheat until it is, then add the beef. Spread the beef out with the spatula, cook without moving until lightly browned, about 1 minute. Continue to cook while stirring regularly until half cooked, about 2 minutes longer. Transfer to a bowl and set aside.
  • Heat 1 tablespoon oil in wok over high heat until smoking. Add the mushrooms. Stir and cook the mushrooms until they start releasing their water. Continue cooking, stirring frequently, until the water evaporates. Depending on the type of mushrooms you use, this can take 5 minutes or more.
  • Once the water evaporates, add 2 teaspoons of soy sauce. Stir and add in the butter and garlic. Toss the butter with the mushrooms until fragrant, about 1 minute, then return the beef to the wok. Cook, stirring, until beef is cooked through, about 1 minute longer. Transfer to a serving platter immediately and serve with white rice.

1 boneless beef chuck roast (2 to 3 pounds), cut into 1-inch cubes
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1 pound sliced fresh mushrooms
2 medium onions, sliced
2 garlic cloves, minced
1 carton (32 ounces) beef broth
1 cup dry red wine or additional beef broth
1/2 cup brandy
1 tablespoon tomato paste
1/4 teaspoon each dried parsley flakes, rosemary, sage leaves, tarragon and thyme
3 tablespoons all-purpose flour
3 tablespoons water
Hot mashed potatoes

Steps:

  • Preheat oven to 325°. Sprinkle beef with salt and pepper. In an ovenproof Dutch oven, heat oil over medium heat; brown beef in batches. Remove from pan., Add mushrooms and onions to pan; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in broth, wine, brandy, tomato paste and herbs. Return beef to pan. Bring to a boil., Bake, covered, 1 hour. In a small bowl, mix flour and water until smooth; gradually stir into stew. Bake, covered, 30 minutes longer or until stew is thickened and beef is tender. Skim fat. Serve stew with mashed potatoes. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 pound boneless sirloin steak, sliced 1/4 inch thick
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon plus 2 teaspoons balsamic vinegar
3 teaspoons soy sauce
2 teaspoons packed light brown sugar
3 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/2 small red onion, cut into thin wedges
4 ounces mixed mushrooms, sliced
1 bunch Swiss chard, stems cut into 1/2-inch pieces, leaves shredded
Kosher salt and freshly ground pepper
Juice of 1/2 lemon
Cooked rice, for serving (optional)

Steps:

  • Toss the beef with 1 tablespoon each cornstarch and vinegar and 2 teaspoons soy sauce in a medium bowl. In another bowl, stir the brown sugar, the remaining 2 teaspoons each cornstarch and vinegar, the remaining 1 teaspoon soy sauce, and 1/3 cup water until dissolved.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the beef and cook, stirring occasionally, until just cooked through, 2 to 3 minutes. Transfer to a bowl and wipe out the skillet.
  • Heat the remaining 2 tablespoons olive oil in the skillet over high heat. Add the garlic and red onion and stir-fry 2 minutes. Add the mushrooms, chard stems, 1/4 teaspoon salt, and pepper to taste and stir-fry until the vegetables are just tender, 4 minutes. Add the chard leaves and stir-fry until wilted. Stir the brown sugar mixture and add to the skillet along with the beef, stirring, until thickened, 1 minute. Add the lemon juice and season with salt and pepper. Serve with rice.
