CUCUMBER AND RADISH RAITA
This can be spicy or not, depending on what you are serving it with and your taste for heat. Cucumber raita (without the radishes) is a classic accompaniment to curries, but I like it on its own and spooned over grains. It's also very nice with salmon.

I like this because there's no mint, no tomato like in many other raita recipes and the addition of chili powder gives it extra zing. Cooking time includes 30 minutes chilling time. - Drain the grated cucumber well so that you squeeze out as much moisture as possible.
- Add the yougurt, chili powder, ground cumin (or toasted cumin seeds) and salt and pepper to taste.
- Chill 30 minutes in refrigerator and stir well before serving.
- Dust the single cucumber slice in paprika and garnish
- Goes well with poppadoms.

- Line a colander with cheesecloth or muslin. Place a large bowl under the colander. Place yogurt in colander and let sit at room temperature for about four hours or cover and refrigerate overnight. Discard the liquid that has drained into the bowl and proceed with the recipe. Add the onion, cucumber, lemon juice, mint and cilantro and mix well.

Yahoo's Shine has this recipe posted and it is from Better Homes and Gardens magazine. Raita is a yogurt-based side sauce and sounds wonderful paired with the beef sirloin steak.

- Preheat the broiler. In a small bowl stir together well the yogurt, cucumber, onion, snipped mint, and sugar. Season with salt and pepper as needed and set aside.
- Trim all visible fat from meat and sprinkle with lemon pepper seasoning. On a unheated broiler pan place meat and broil 3 to 4 inches from heat. For medium rare (145 degrees F) broil 15 to 17 minutes and for medium (160 degrees F) allow 20 to 22 minutes. Turn meat over half way thru broiling time.
- Place steak of serving tray and slice against the grain into thin slices. Garnish steak with mint leaves if desired and serve with raita.
