ASPARAGUS PASTA SALAD
This parmesan asparagus pasta recipe is a great cold dish when it's hot outside! Hearty with ground beef and vegetables mixed in with your favorite noodles.

Steps:
- In a large greased skillet, brown hamburger with salt, pepper, garlic powder, and onion powder.
- While beef is browning, cook pasta in boiling water for 10 minutes. Then add chopped asparagus to boiling water. Continue boiling until pasta and asparagus are tender.
- Drain well when done. When beef is thoroughly cooked, spoon it out of the skillet and drain off any excess grease. Add shallots and garlic to the same skillet and cook over medium heat until they become transparent.
- Add beef back into the skillet and mix well. Combine pasta, asparagus, and beef mixture in a large mixing bowl. Pour into a casserole baking dish. Top with parmesan cheese and enjoy!

- Cook pasta in boiling salted water 10 minutes or until almost tender.
- Add asparagus; continue cooking 3 to 4 minutes or until pasta and asparagus are tender.
- Drain well.
- Meanwhile brown ground beef in large non-stick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4 inch crumbles.
- Remove from skillet with slotted spoon.
- Pour off drippings.
- Heat oil in same skillet over medium heat until hot.
- Add shallots and garlic; cook 3 to 4 minutes or until tender, stirring frequently.
- Remove from heat.
- Add beef; toss to mix.
- Season with salt and pepper, as desired.
- Combine beef mixture with pasta and asparagus in large bowl; toss well.
- Sprinkle with cheese, if desired.

- In a large nonstick skillet, or wok stir fry beef in oil for 1 minute or until meat is no longer pink.
- Add asparagus, onions, and garlic stir fry for 2 minutes.
- Add mushrooms, tomato, basil, and oregano, stir fry 2 minutes longer or until the vegetables are crisp and tender.

- Bring a large pot of salted water to a boil. Cook the prosciutto in a large skillet over medium-high heat until it renders some fat and begins to brown, about 2 minutes. Add the garlic and thyme and cook until the garlic just begins to soften, about 30 seconds. Remove the skillet from the heat and add the wine. Return to the heat and cook until the wine evaporates slightly, about 2 more minutes. Add 1/4 teaspoon salt and pepper to taste. Add the cream and nutmeg and cook, stirring occasionally, until the sauce thickens slightly, about 3 more minutes.
- Meanwhile, add the pasta to the boiling water and cook as the label directs, adding the asparagus during the last minute of cooking. Reserve 1/2 cup cooking water, then drain the pasta and asparagus.
- Add the cheese to the cream sauce and stir to combine. Add the pasta and asparagus and toss to coat, adding some of the reserved cooking water to loosen, if needed. Season with salt and pepper. Divide among bowls and top with more cheese.

- Boil water for the pasta. Cook as you are preparing the garlic/asparagus sauce. In a skillet, cook garlic, red pepper flakes and hot pepper sauce in heated oil and butter for 2 to 3 minutes. - Add asparagus to large pot of boiling salted water. Cook until just crisp-tender. Transfer to bowl of cold water using slotted spoon. Cool asparagus slightly and drain. Add pasta to same pot of water and boil until just tender but still firm to bite. Add sugar snap peas and boil 2 minutes. Add asparagus and heat through. Drain will. PASTA WITH ASPARAGUS-LEMON SAUCE
Steps:
- Cut asparagus into 1-inch pieces, reserving tips separately. Cook asparagus stems in 5 to 6 quarts boiling water with 2 tablespoons salt until very tender, 6 to 8 minutes. Transfer with a slotted spoon to a colander, reserving cooking water in pot, and rinse under cold water. Drain asparagus well and transfer to a food processor or blender.
- Cook asparagus tips in same boiling water until just tender, 3 to 5 minutes. Transfer with slotted spoon to colander, reserving boiling water in pot, and rinse under cold water. Drain tips well.
- Purée asparagus stems with zest, oil, and 1/2 cup asparagus cooking water. Transfer sauce to a 4-quart saucepan.
- Cook pasta in boiling asparagus cooking water until it still offers considerable resistance to the tooth, around three fourths of the recommended cooking time. Reserve 2 cups cooking water and drain pasta.
- Add pasta, asparagus tips, and 1/2 cup reserved water to asparagus sauce and cook over high heat, stirring, 3 to 5 minutes, or until pasta is almost al dente and sauce coats pasta. Add more cooking water, 1/4 cup at a time, until sauce coats pasta but is a little loose (the cheese will thicken it slightly).
- Stir in Parmigiano-Reggiano and salt and pepper to taste and cook, stirring, until cheese is melted.
- Serve immediately.
ASPARAGUS CREAM PASTA

- To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
- Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
- Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.
