Steps:
- Combine peanut butter, butter and vanilla with a mixer on medium until fluffy.
- Mix in powdered sugar a little bit at a time until incorporated. Chill mixture 30 minutes.
- Roll into balls and place on a parchment lined pan. Chill mixture 30 minutes.
- Combine chocolate chips and shortening in a small bowl. Microwave at 50% power for 1 minute. Stir and continue microwaving in 30 second increments just until melted.
- Place a toothpick into each peanut butter ball and dip in chocolate leaving a little bit of the peanut butter peeking out the top.

- Add brown sugar and vanilla extract. Stir well.
- Gradually add powdered sugar until completely combined. Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.**
- Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.
- While peanut butter balls are chilling, prepare your chocolate according to package instructions. Pour into a deep dish (I use a wide cup).

- Add peanut butter, softened butter, vanilla, and salt to a large mixing bowl. Using a hand-held electric mixer, cream together ingredients well blended.
- Gradually mix in confectioners sugar, beating until well combined.
- Shape into 1 inch balls and place on parchment paper-lined baking sheet. Place in the freezer for 60 minutes.
- In a microwave safe bowl melt the chocolate chips and vegetable shortening on high for 45 seconds. Remove from microwave and stir vigorously. If needed, microwave at 15-second intervals, stirring after each interval, until mixture is melted.
- Remove peanut butter balls from freezer. Insert a toothpick in the top center of a peanut butter ball and dip 3/4 of the ball, into melted chocolate, leaving the top without chocolate. allow excess chocolate to drip. Place back on the baking tray.
- Remove the toothpick and smooth out the hole with a small offset spatula or your fingertip.
- Allow chocolate to set before serving. Buckeye's can be served at room temperature or cold. Store in an airtight container in the refrigerator for 3-5 days.

- Beat together the peanut butter and softened butter. Add the vanilla, mix again, then scrape the bowl. Add the confectioners' sugar 1 cup at a time, mixing well and scraping down the bowl after each cup. You want the dough to be firm enough to be able to roll into balls without being sticky but not too dry.
- Roll the dough into quarter size balls (if they are bigger or smaller it's okay too) and place on a cookie sheet lined with waxed paper. (You can use parchment paper too, but waxed works best.) These buckeyes will not spread because they will not be baked, so you can put them closer together on the cookie sheet than you would for baked cookies. Stick a toothpick into each buckeye and chill in your freezer for about 30 minutes.
- Melt the chocolate chips and 2 tbsp shortening in a double boiler on low heat and stir often until melted and smooth. OR you can microwave by placing in a medium microwave-safe glass bowl and heating for 30 seconds. Stir, then microwave for 15-20 seconds more. Continue heating and stirring each time until the chocolate chips are fully melted. Do not overcook. Add 1-2 more tbsps of shortening to thin out the chocolate mixture if desired. I usually use 3-4 tbsp total as I prefer thinner melted chocolate as it's easier to use.
- Dip the chilled peanut butter balls using the toothpick. Dip about ¾ of the way in, leaving a small part of peanut butter visible at the top. This is what gives them a 'buckeye' look. Place back on the cookie sheet and refrigerated.
- These cookies are best kept refrigerated even though they won't spoil if you leave out. They are best enjoyed within 5-6 days.

- First, stir together the melted butter and peanut butter.
- Stir in the powdered sugar. Gradually add powdered sugar until mixture is not sticky. Mix until smooth, using your hands.
- Roll the dough into balls. The buckeye balls should be quarter size or smaller. Place the peanut butter balls on a cookie sheet covered with wax paper. Chill in the refrigerator for one hour, or until they are firm enough to hold a toothpick.
- While the buckeyes are in the refrigerator, melt 1 1/2 cups semi-sweet chocolate chips with 1/3 bar paraffin in a double broiler.
- When the chocolate is melted and the buckeyes hardened, it's time to dip the buckeyes. Put a wooden toothpick in the middle of a buckeye. Gentle lower into the chocolate and rotate so the buckeye is covered with a small hole remaining around the toothpick.
- Lift the buckeye carefully out of the chocolate. Allow the excess chocolate to drip into the pan. Place the buckeye on a plate covered with wax paper. Remove the toothpick and repeat.
- One batch makes around 80 buckeyes. Store your buckeyes in the refrigerator or freezer.

- In a large bowl, mix the peanut butter, butter, vanilla, Add the icing sugar one cup at a time until your desired consistency has been met. How much confectioners/icing sugar you use will depend on your peanut butter, your butter, the humidity in your house, ETC. Add enough to the mixture until it's a harder dough that you can roll, doesn't stick to your hands too much and will hold it's shape. The dough won't be that sticky, it's a dryer dough but should still roll into balls.
- Roll the peanut butter dough into 1-inch balls and place on a parchment paper-lined cookie sheet.
- Poke a toothpick into the top of each ball (to be used later as the handle for dipping) and place in the freezer until the dough very firm, about 30 minutes.
- Melt the chocolate chips with the shortening in a double boiler or in a bowl set over a pan of barely simmering water. Stir the mixture frequently until smooth and all of the chocolate chips are melted together.
- Dip the now frozen peanut butter balls into the hot melted chocolate by holding onto the toothpick. In order to make them look like real Buckeyes leave a small portion of peanut butter showing at the top as shown in my photos.
- Put each Buckeye back on the cookie sheet. Remove the toothpicks and using your fingertip pat the top of the peanut butter mixture where the toothpick was and smooth it over so there isn't a hole anymore. Refrigerate until the chocolate has set.
- Keep in the refrigerator and between layers of waxed paper to prevent sticking. You can also freeze these for 4-6 weeks.

- Spoon the peanut butter into a mixing bowl.
- Sift the powdered sugar over the peanut butter and pour the melted butter over top.
- Stir until well combined.
- Scoop out twenty 1-tablespoon-size portions of the fudge.
- Roll them into balls and set them on a parchment paper-lined (or wax paper-lined) baking pan.
- Chill the peanut butter fudge balls for at least 2 hours until really firm.
- Insert the flat end of a thin wooden skewer into a cold peanut butter ball.

- Sift the powdered sugar into the bowl and beat until smooth. Mixture will be thick and you may have to stir in the last half cup or so of powdered sugar. Consistency should be similar to play-dough.
- Line a cookie sheet with parchment paper. Portion the peanut butter mixture out with a one tablespoon scoop and roll into balls. Place them on the cookie sheet and chill in the freezer for 20 to 30 minutes. Do not freeze for more than 30 minutes prior to dipping. Place in the refrigerator if not ready to dip.
