CAFE HON'S MIXED BERRY PIE

Steps:
- For the crust: Process the flour, salt, shortening and butter in a food processor until you get the visual consistency of fine meal.
- Place the fine meal into a bowl. With a fork make a hole in the meal. Pour the ice water in the hole and gently mix the water into the fine meal. Continue this process until the fine meal has the consistency of play dough.
- Flour your board and rolling pin, and then roll out the dough. Divide the dough in half and roll out dough for a 2 crust 9-inch pie.
- For the filling: If using frozen fruit, measure first, then thaw and drain fruit.
- Preheat the oven to 350 degrees F.
- Combine the flour, sugar and cinnamon, stir with fork. Place 1 crust into the pie pan. Spread 1/3 of the sugar mixture on the bottom and add fruit. Top the mixed berries with the rest of the sugar mixture. Wet the edges of the bottom crust by dipping your finger in the ice water and rubbing it around the edge of the crust. Place the top crust on the pie and gently press the top crust to the bottom. Trim with a knife and roll under. Press together with the thumb and forefinger to make a scalloped edge. With the knife, place 8 1/2-inch slits on the top of the pie. Bake for 45 minutes. When checking the doneness of the filling, insert a knife into the center of the pie. If there is little or no resistance, the pie is done.
BILL SMITH'S ATLANTIC BEACH PIE
From NPR's program All Things Considered, April 11, 2013. Use either lime or lemon juice or a combination. The recipe calls for 1 1/2 sleeves saltine crackers but that "measurement" was not accepted. Not having any in the house, I Googled it and found that there are 38-40 crackers per sleeve.

- Preheat oven to 350°F.
- Crush crackers finely but not to dust. use food processor or your hands. Add sugar, then knead in butter until crumbs hold together like dough. Press into 8" pie pan. Chill 15 minutes, then bake 18 minute or until crust colors a little.
- While crust is cooling (it doesn't need to be cold), beat egg yolks into milk, then beat in citrus juice until completely combined. Pour into shell and bake 16 minutes until filling has set. Chill completely before slicing. Serve with fresh whipped cream and a sprinkling of sea salt.

- In a large bowl, mix together cherries, cherry pie filling, currants, cranberries, gooseberries, apples, sugar, cinnamon, and almond extract. Allow to set 15 minutes.

FRESH BLUEBERRY PIE
Steps:
- Preheat the oven to 400˚ F. Line a sheet pan with parchment paper.
- Mix the blueberries, 1/2 cup of sugar, the flour, lemon zest, lemon juice and Cassis in a large bowl. Carefully ease one pie crust into a 9-inch pie plate, making sure not to stretch the dough or it will shrink as the pie bakes. With a sharp knife, cut the excess dough off at the edge of the pie plate. Spoon the blueberry mixture into the pie shell, scraping the bowl with a rubber spatula to be sure you include all the juices.
- Brush the edge of the crust with the egg wash. Carefully lay the second crust on top, again easing - not stretching - it onto the pie. Cut the excess dough off at the edge of the pie plate. Press the edges together with a dinner fork or crimp with your fingers. Brush the top crust with the egg wash, cut three slits for steam to escape and sprinkle with sugar.
- Place the pie on the prepared sheet pan and bake in the middle of the oven for 45 to 50 minutes, until the filling is very bubbly and the crust is nicely browned. Allow to cool and serve warm or at room temperature.
- Cut the butter in 1/2-inch dice and return it to the refrigerator while you prepare the flour mixture. Place the flour, sugar and salt in the bowl of a food processor fitted with the steel blade and pulse a few times to mix. Add the butter and shortening and pulse 10 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump the dough out on a floured board and turn it into a ball. Wrap it in plastic wrap and refrigerate for 30 minutes.
- Cut the dough in half. Roll each piece out on a well-floured board into a 12- to 13-inch circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board.
MY GRANDMOTHER'S BEST BERRY PIE
This is definitely the best Pie Recipe I've ever tried. It is the Crumb Pie kind. It is possible to use any kinds of Berries, but in this example I have used Blueberries just to put a name to them.

- To Make Crust: Blend the flour and the butter or margarine thoroughly. Add baking powder, vanilla, sugar, and egg; mix thoroughly. Let the dough rest for about 25 minutes.
- Lay enough dough to cover the pie dish in the center of the pan, and spread the dough evenly over the bottom and sides of the pan. There will be dough left over for the top of the pie. Take a fork, and make holes with it here and there along the bottom of the pie dough. Let the pie dough rest again for another 25 minutes.
- Put the berries inside the pie dish, and then spread the remaining crumb dough over it.

- In a large bowl, combine the sugar, cornstarch, tapioca and fruit; let stand for 15 minutes. In another bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine the egg, water and vinegar; stir into flour mixture just until moistened., Divide dough in half so that one portion is slightly larger than the other. On a lightly floured surface, roll out larger portion to fit a 9-in. pie plate. Transfer pastry to pie plate; trim pastry to 1/2 in. beyond edge of plate. Spoon fruit mixture into crust., Roll out remaining pastry to fit top of pie; make a lattice crust. Trim, seal and flute edges. Brush with cream; sprinkle with coarse sugar., Bake at 375° for 45-55 minutes or until crust is golden brown and filling is bubbly. Cool completely on a wire rack.

- Heat oven to 350°F.
- Combine flour, brown sugar and cinnamon.
- With pastry blender or fork cut in butter or margarine until mixture coarse crumbs.
- Separate dough into 8 pieces; split each biscuit in half.
- With floured fingers, flatten each biscuit to form 4" round.
- Press each biscuit in ungresed 2-3/4 x 4 x 1-/4" muffin cup.
- Spoon 2 tablespoons pie filling into each biscuit-lined cup.
- Sprinkle each with 2 tablespoons flour mixture (cups will be full).
- Bake for 15-22 minutes or until golden brown.
- Cool 5 minutes.
- Remove from muffin cups; place on wire rack, cool for 10 minutes.
- In a small bowl, beat whipping cream until stiff peaks form.
- Top each serving with dollop of whiiping cream; sprinkle with cinnamon sugar.
- Store in refrigerator.
