Number Of Ingredients 12

4 cups plus 1/4 cup all-purpose flour
1/4 cup sugar, plus additional for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
1 tablespoon grated orange zest
3/4 pound cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash
1/2 cup confectioners' sugar, plus 2 tablespoons
4 teaspoons freshly squeezed orange juice

Steps:

  • Preheat the oven to 400 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.
  • Dump the dough onto a well-floured surface and knead it into a ball. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on a baking pan lined with parchment paper. Collect the scraps neatly, roll them out, and cut more circles.
  • Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones.

1/2 c Craisins
1 c Bisquick, Heart Smart
2 T granulated sugar
1/4 tsp ground cinnamon
1 1/2 T butter, unsalted
1/3 cup half & half
1/4 tsp vanilla
1 tsp orange zest
Glaze
1/4 c powdered sugar
1 T orange juice

Steps:

  • Heat oven to 400 degrees. Pour water over cranberries in a microwavable bowl; cover with plastic wrap, leaving a side opening to vent. Microwave on high 45 seconds. Uncover and let cool.
  • Mix Bisquick mix, sugar, and cinnamon in a medium bowl. Cut in butter until mixture looks like fine crumbs. Stir in half & half, vanilla, cranberries, and orange zest, just unti moistened.
  • Drop by 1/4 cup fulls on ungreased cookie sheet (I use a large cookie scoop). Bake 10 minutes or until golden brown.
  • Mix powdered sugar and orange juice for glaze, or you can simply sprinkle with granulated sugar.

When I had a specialty-food store in East Hampton, NY, I learned lots of tricks for cooking and baking ahead. Every morning we made thousands of muffins and scones, and I discovered that we could make all the muffin batters the night before, refrigerate them and simply scoop them into muffin pans and bake them in the morning! I started using the same techniques at home: I love treating weekend guests to these cranberry-orange scones, but I also cherish the few mornings I get to sleep late, so I make the dough a day early, cut out the scones and refrigerate them. In the morning, all I do is throw them in the oven and then drizzle them with an orange glaze. Hot delicious scones for breakfast, and no stress!

I couldn't find this exact recipe posted, so I am posting ANOTHER cranberry scone recipe. :) My mom makes these and they always turn out moist and flaky. They are especially good if you use dried cranberries that are flavored with orange (I found them at Trader Joe's). Since I don't usually have buttermilk on hand, I combine 1 Tbsp. lemon juice plus enough milk to equal one cup and let it curdle while I am mixing the dry ingredients.

Steps:

  • In a bowl, combine the flour, 1/3 cup sugar, baking powder, salt, and baking soda.
  • Cut in butter till crumbly.
  • Stir in buttermilk gently until just combined.
  • Fold in cranberries and orange peel.
  • Turn onto a floured surface and divide into two balls.
  • Pat each ball into a six inch circle and place on a lightly greased baking sheet.
  • Cut each into six wedges, leaving them together on the pan.
  • Brush with milk, then sprinkle on the sugar combined with the cinnamon.
  • Bake in a 400 degree oven for 15-20 minutes or until golden brown.
  • You can also cut them into circles with a round cookie cutter, but the baking time will be less if you place them on the baking sheet not touching each other.

2/3 cup plus 1 Tbsp Yoplait® 99% Fat Free creamy harvest peach or creamy vanilla yogurt (from 2-lb container)
1/2 cup dried cranberries
1 egg, slightly beaten
1 Tbsp granulated sugar

Steps:

  • Heat oven to 400°F.
  • In medium bowl, mix flour, brown sugar, 1 tsp of the orange peel, the baking soda and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in 2/3 cup of the yogurt, the cranberries, egg and cereal, until soft dough forms.
  • On lightly floured surface, gently roll dough in flour to coat; shape into ball. With floured hands, pat dough into 8-inch circle; cut into 12 wedges with sharp knife dipped in flour. ½ cup cold, unsalted butter, cut into pieces
¼ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 large orange, zested and juiced, divided
1 cup dried cranberries, or more to taste
1 cup buttermilk
1 cup powdered sugar, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour, butter, white sugar, baking powder, salt, and orange zest in the bowl of a food processor; pulse until butter is pea-sized or smaller. Pour buttermilk and 1/2 of the orange juice in slowly, with the processor running, until dough is sticky and all flour is absorbed. Mix in dried cranberries until evenly distributed. Reserve remaining orange juice for the icing.
  • Place dough on a lightly floured surface and gently roll to a thickness of about 1 inch. Cut dough into 12 triangles with a knife (or use a biscuit cutter for circles) and transfer to a baking sheet.
  • Bake in the preheated oven until golden brown, about 15 minutes.
