Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato image

Contrasting the flavors of sweet (roasted red bell pepper and sweet potato), spicy (cayenne and crushed red pepper) and earthy (black eye peas) was the inspiration for this dish. Equally tasty whether served hot or cold.

½ red bell pepper
1 tablespoon olive oil
1 onion, chopped
1 celery stalk, chopped
2 cloves garlic, minced
1 cup water
1 cup vegetable broth
3 plum tomatoes, chopped
1 (15 ounce) can black-eyed peas, drained and rinsed
1 (15 ounce) can sweet potatoes, drained and cut into chunks
1 tablespoon brown sugar
1 ½ teaspoons cinnamon
⅛ teaspoon cayenne pepper
¼ teaspoon crushed red pepper flakes
1 bay leaf
1 pinch dried thyme
1 pinch dried basil
1 pinch dried oregano
1 pinch dried rosemary
1 pinch garlic powder
1 pinch onion powder
1 pinch mustard powder
1 pinch cumin
1 pinch coriander
salt and cracked black pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • Set oven to broil. Brush red bell pepper lightly with olive oil, and place cut-side down on a baking sheet. Place sheet under broiler, and broil until pepper is blackened and blistered. Remove from broiler, and when cool enough to touch, peel skin. Chop pepper into bite-size pieces.
  • Heat olive oil in a large skillet over medium heat. Stir in onion, celery, and garlic; cook until onion is soft and translucent.
  • Mix in water, vegetable broth, tomatoes, black-eyed peas, sweet potatoes, and chopped bell pepper. Add brown sugar, cinnamon, cayenne, and red pepper flakes. Add bay leaf, thyme, basil, oregano, and rosemary. Mix in garlic, onion, and mustard powders. Stir in cumin and coriander.
  • Bring contents to a boil. Reduce heat to medium-low; simmer, covered, until sweet potatoes begin to disintegrate, about 20 minutes. Season with salt and cracked pepper to taste. Stir in fresh parsley, and serve.

1 pound dried black-eyed peas (about 2½ cups)
5 slices thick-cut bacon
2 tablespoons extra-virgin olive oil
1 large diced onion
2 large diced carrots
2 ribs diced celery
1½ cups frozen chopped collard greens, thawed
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 smoked ham hock
½ cup rice blend
Kosher salt and freshly ground black pepper

Steps:

  • Sort through the peas and pick out any pebbles or other debris. Rinse the peas under cold water. Put the peas in a 5-quart Dutch oven and cover with 5 cups cold water. Place over high heat and bring to a boil; boil for 1 minute. Remove from the heat, cover and let peas soak for 1 hour.
  • Cook the bacon in a large skillet over medium heat until crispy, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate to cool. When cool, crumble the bacon and set aside. Add the oil to the skillet with the bacon fat Add the onions, carrots and celery and cook, stirring frequently, until tender, about 10 minutes. Add the collard greens and garlic and cook until the garlic is fragrant, about 1 minute.
  • Add the vegetables to the Dutch oven along with the chicken broth, ham hock, crumbled bacon, rice and 4 cups water. Bring the mixture to a boil over medium-high heat. Reduce the heat to a simmer and cook, covered, until the peas and rice are tender, 45 minutes to 1 hour.
  • Remove the ham hock from the Dutch oven. Discard the skin and bone. Chop the meat into small pieces and return it to the Dutch oven. Season the soup with salt and pepper.

3 bacon strips, diced
1 medium onion, finely chopped
1 garlic clove, minced
2 cans (14-1/2 ounces each) beef broth
1 can (10 ounces) diced tomatoes and green chilies, undrained

2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain., In the drippings, saute onion until tender. 2 cups Black Eyed Peas - soaked overnight
2 Sweet Potatoes
2 Carrots
1 Onion
1 cup Greens, Kale or Collards - chopped
lots of Chives - 1/4 cup to 1 cup
1/4 cup Parsley
3 Garlic cloves
1 Tbsp Onion powder
2 Organic Vegetable Bouillion cubes
2 Bay leaves
2 large Sage leaves, or 1/2 tsp dried
1 tsp Rosemary, fresh is best, or dried
2 strands of Thyme, or 1 tsp
1/2 can of Coconut Milk, or 1 cup

Steps:

  • Soak the black eyes peas in a bowl of water overnight. Rinse and drain the black eyes peas in the morning. Peel the sweet potatoes and carrots and chop, or dice into small cubes, along with the onions. Place the vegetables and beans in a pot with water to cover them and set on medium high to boil. When boiling lower the heat to a simmer and boil until soft. Destem kale or collards and chop greens along with herbs. Add bouillon, seasonings and greens to the pot while it is boiling and continue boiling until beans and vegetables are soft. Lower the heat, add the coconut milk and continue to simmer until you are ready to eat, or remove from heat and cool to store.

Just a recipe I made up one cold day when I wanted a hearty, homemade stew (comfort food!) It was really good, so I shared it with a few friends. One friend called it: "Keisha's Mom's Black-Eyed Peas and Sweet Potato Stew" - adding my daughter's name. Sounds impressive! (This friend has made it more often than I have!) I like it because of the interesting taste and texture of the whole, fresh ingredients...it's great to have in the fall.

2 cups dried black-eyed peas
2 sweet potatoes, peeled and cut in small chunks
3 fresh tomatoes, peeled and cut in small chunks or 1 can stewed tomatoes (works, but fresh ones are better)
3 cloves fresh garlic, chopped
1/2 large red onion, chopped
3 tablespoons fresh parsley, chopped
1 teaspoon cinnamon (or more)
1 teaspoon Old Bay Seasoning or 1 teaspoon Mrs. Dash seasoning mix (or more)
1/2-1 teaspoon red peppers or 1/2-1 teaspoon creole seasoning
1/2 teaspoon whole celery seeds or 1 -2 stalk chopped celery, with leaves (or both)
salt and pepper

Steps:

  • Rinse black-eyed peas in colander (to clean), then drain.
  • Add enough water to cover beans in 3 quart vessel.
  • Boil, then turn down to medium-low heat for 30 minutes (cook until tender).
  • Keep on lower heat and add onions, garlic, parsley, celery (if desired) and seasonings.
  • Add tomatoes, and sweet potatoes.
  • Cook for another 15 minutes, or until sweet potatoes are tender.
  • Other suggested ingredients for variation are: 1 can of corn, chopped red bell peppers, or a few hot peppers.
  • You can also add olive oil and/or a dash of vinegar for added flavor.
  • Serve with, or over brown rice-- with corn bread on the side!

  • I like to serve this with cornbread. You can use any of these, all will be delicious. Vegan gluten-free Skillet Cornbread, Cornbread Muffins or Pumpkin Cornbread.
  • Time-saving tip: The day before I cooked the soup, when I placed the beans to soak I also chopped the bell peppers and onion and placed them in the freezer, so all I had to do was add them the next day and chop the sweet potato and garlic. Made it simpler.This recipe is written based on the large amount of water used with the dried beans. I don't recommend canned, as it will totally change everything else about the recipe. This makes a huge pot, which is how I like to make a good soup at New Year's for leftovers.
  • Add your dried beans to a large pot and cover in water. Put the lid on and soak overnight or 8 hours max. Drain and rinse them well and remove any rocks or debris. Add them back to the pot and add the 6 cups warm water.
  • Bring the beans to a boil and as soon as it is a rolling boil, turn to low simmer, cover with a lid and let cook for 60 minutes (set your timer). While it is cooking, chop your bell peppers, onion, garlic and sweet potato. Get all your remaining ingredients ready as well (salsa, cumin, paprika and salt & pepper). Start with 2 teaspoons or so of salt.Note: You can also prepare the cornbread muffins at this time if you want. They add a wonderful slightly sweet taste and texture to the soup.
