Making a shrub recipe is a creative way to use up extra fruit all the way through Labor Day. We were inspired by sampling the house-made shrubs at a restaurant in California. They are as colorful and refreshing as summer drinks should be. —Gina Nistico, Denver, Colorado

Yield 2 cups.

Number Of Ingredients 7

1-1/2 cups fresh or frozen blackberries, crushed
1 cinnamon stick (about 3 inches)
1 cup cider vinegar
1-1/2 cups sugar
1/2 cup water
SERVING SUGGESTION:
Optional: Ice cubes, sparkling water and fresh blackberries

Steps:

  • Place fruit and cinnamon stick in a sterilized pint jar. Bring vinegar just to a boil; pour over fruit, leaving ¼-in. headspace. Center lid on jar; screw on band until fingertip tight. Refrigerate for 1 week., Strain vinegar mixture through a fine-mesh strainer into another sterilized pint jar. Press solids to extract juice; discard remaining fruit., Bring sugar and water to a boil. Reduce heat; simmer until sugar is dissolved. Cool slightly. Stir into vinegar mixture; shake well. Store in the refrigerator up to 2 weeks. , To serve, drink 1-2 tablespoons or add to a glass of ice, top with sparkling water and garnish with fresh blackberries.

2 oz bourbon whiskey
3 dashes Angostura bitters
1/2 oz blackberry ginger shrub
Blackberry for garnish
For the blackberry-ginger shrub:
4 cups fresh blackberries
2 tbsp grated fresh ginger
1 cup white balsamic vinegar
1 cup cider vinegar
2 cups sugar

Steps:

  • To make the blackberry-ginger shrub, mix the fresh blackberries, ginger, and sugar in a large bowl. Mash with a spoon to release the juice. Let sit for a day in the refrigerator. Strain the solids and press lightly on the fruits to expel any remaining juice. Mix the juice with the vinegar and whisk to combine. Place the mixture in a mason jar to store. If sugar and vinegar separate, shake well to combine. For the Old Fashioned, add the bitters and shrub to the bottom of an Old Fashioned glass and stir with a bar spoon. Add ice to the glass. Top with bourbon and a dash of club soda. Garnish with a blackberry.

Pair this sweet, slightly spicy carrot-ginger shrub with seltzer, vodka, or gin for a cocktail, or use it in salad dressing with olive oil, salt, and pepper.

2 lb. carrots
2 Tbsp. grated ginger
1 cup apple cider vinegar
1 cup sugar

Steps:

  • Wash carrots and, if necessary, scrub with a vegetable brush to remove dirt. Peel them if you want to, but it's not necessary.
  • Purée carrots in a blender or food processor.
  • Pour carrot purée into clean nonreactive container. Add grated ginger.
  • Pour cider vinegar over carrots and ginger. Stir to combine. Refrigerate for 2 days.
  • Place a fine-mesh strainer over another bowl. Pour carrot-and-vinegar mixture into strainer. Press or squeeze the mixture to extract all the juice.
  • Pour carrot juice into a large sanitized jar. Add sugar. Cap the jar, and shake well to combine. Refrigerate, shaking well every other day or so to dissolve sugar.

Seal jar and let fruit mixture sit at room temperature, shaking a couple of times, until berries are very soft and falling apart and sugar is at least mostly dissolved, about 1 day (mixture should look very juicy).
  • Strain fruit mixture through a fine-mesh sieve (line sieve with a layer of cheesecloth if you want to catch every bit of seed and fruit pulp) into a medium bowl; discard fruit. Scrape any undissolved sugar left in jar into bowl.
  • Add vinegar to syrup and stir to combine. Taste shrub and add more sugar or vinegar to your liking—it should taste both sweet and sharp but not overpowering in either direction (keep in mind the flavors will meld as the shrub ages). Pour shrub into a clean jar; cover with lid and chill until flavors come together and mellow, at least 1 week. Do ahead: Shrub can be made 6 months ahead. Keep chilled.
  • For a refreshing nonalcoholic drink, pour 2 Tbsp. shrub into a glass filled with ice and top off with club soda; stir gently to combine. Garnish with berries and/or herbs if desired.
