¼ cup honey, or preferred sweetener

Steps:

  • In the bowl of a food processor or high-speed blender, blend the blackberries and honey until thoroughly combined. Pour into a rectangular loaf pan and smooth into an even layer.
  • Freeze for 2 hours, or until frozen but still soft enough for scooping. If freezing overnight, cover with a lid or plastic wrap, and let it sit out at room temperature for 5-10 minutes before serving.
  • Enjoy!

An easy summer treat! We love making this from the black raspberries that grow in our backyard. For garnish, we use mint and pansies grown from seed. You can buy edible flowers from the grocery store, or grow your own, but don't use plants from nurseries that have been treated with pesticides.

¾ cup slightly warm water
½ cup white sugar
1 tablespoon creme de cassis liqueur
4 cups black raspberries
2 tablespoons lemon juice
2 egg whites

Steps:

  • Combine water, sugar, and creme de cassis in a medium bowl. Stir until sugar granules are completely dissolved, 2 to 3 minutes.
  • Combine berries and lemon juice in a blender; process to a smooth puree.
  • Set a fine mesh strainer over a medium bowl. Pour small batches of the berry puree into the strainer, stirring vigorously to force the liquid into the bowl. Discard the seeds once most of the liquid has been removed.
  • Stir the berry puree into the sugar mixture until well combined. Cover with plastic wrap and freeze for about 4 hours.
  • Beat egg whites in a glass, metal, or ceramic bowl until until stiff peaks form. Remove the puree from the freezer and whisk until slushy. Fold egg whites into the puree until just blended. Cover and freeze until solid, about 2 hours.

1 pint blackberries
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice
2 to 3 tablespoons elder flower concentrate (or to taste)

Steps:

  • Puree the blackberries in a blender or a food processor or put them through a food mill. Press them through a strainer to remove the seeds.
  • Meanwhile, bring the sugar and water to boil in a small saucepan for five minutes. Cool.
  • Combine blackberry puree and sugar syrup and mix well. Stir in lemon juice and elder flower concentrate and freeze in an ice cream maker according to directions.

20 heads of elderflower , freshly picked
300g caster sugar
2 lemons , halved and juiced (reserve the halves)

Steps:

  • Choose elderflowers with clean, creamy white petals, snipping the stalk just before the flowers fan out. Put in a large pan with the sugar and 550ml water, the lemon juice and the juiced halves of the lemons. Bring to a gentle simmer, then turn off the heat and leave to infuse (and the sugar to dissolve) for at least 1 hr or up to 5 hrs.
  • Line a large sieve with muslin and set over a bowl or pan. Strain the mixture and discard the flower heads and lemons. Pour into a freezeable container (preferably one with a lid) and freeze for 2-3 hrs until semi-frozen.
  • Scrape the semi-frozen mixture into a food processor or blender and blitz to break down the lumps of ice - you may need to scrape down the sides a few times. Put the sorbet back in the container and freeze for another 1-2 hrs.
  • Repeat this process another two or three times. The more times you blend the sorbet, the smoother it will be. Will keep frozen for up to three months. To serve, remove from the freezer and leave to stand for 5 mins before scooping.

3 tablespoons blackberry liqueur (optional)

Steps:

  • In a small saucepan, combine the water, corn syrup, and sugar; place pan over medium heat and stir until the sugar dissolves.
  • Increas the heat and boil without stirring for 1 minute.
  • Turn off the heat and let the mixture cool completely.
  • Place the sugar syrup, blackberries, lime juice, and liqueur in a blender; process until smooth.
  • If desired, pour the puree through a strainer to remove the seeds.
  • Cover and refrigerate until cold.
  • Stir the chilled berry puree, then freeze in batches (if necessary) in your ice cream maker following the manufacturer's instructions.
  • When finished, the sorbet will be soft but ready to eat.
  • For firmer sorbet, transfer mixture to a freezer container; freeze several hours.

1 cup water
1 1/2 pounds frozen unsweetened blackberries, thawed, juices reserved

1/2 small watermelon
16 fresh blackberries

Steps:

  • Stir sugar and 1 cup water in small saucepan. Bring to boil over high heat, stirring until sugar dissolves. Boil 1 minute. Transfer syrup to large bowl. Chill until syrup is cold, about 3 hours.
  • Working in batches, puree blackberries with juices and cold syrup in blender until smooth. Strain into another large bowl; discard seeds. Stir in lemon juice.
  • Process berry mixture in ice cream maker according to manufacturer's instructions. Transfer sorbet to container; cover and freeze until firm, about 6 hours. (Can be made 1 week ahead. Keep frozen.)
  • Using large spoon, scoop out flesh from watermelon, leaving rind intact and forming bowl (reserve melon for another use or serve alongside sorbet, if desired). Drain excess juice from watermelon bowl. Cover and chill watermelon bowl until cold.
  • Scoop sorbet into watermelon bowl. Garnish with fresh blackberries.

We strained the fruit to remove the seeds so used a few more raspberries - but this is only for food intolerances and isn't a necessary step.

1/2 cup boiling water, 125ml
1 1/4 elderflower cordial, 310ml

Steps:

  • Place all ingredients in a food processor and process until combined.
  • Pour into a freezer proof container and freeze until set, approximately 3-4 hours.
  • Cut the sorbet into chunks and reprocess in the food processor until smooth.
  • Return to the freezer for 1 hour or until ready to serve.
