BONNIE'S PERFECT BAKED POTATOES

BONNIE'S PERFECT BAKED POTATOES image

Anyone can bake a potato, right? Well, these baked potatoes are a little different, and a wonderful treat for those of us that love to eat the potato skin! The perfect baked potato with a fluffy white center is done in 45 minutes. Seasoned with olive oil and kosher salt. Enjoy! Photo is my own. Recipe adapted from wwitmom at food.com

Provided by BonniE ! @ReikiHealsTheSoul

Categories     Potatoes

Number Of Ingredients 3

3 - same size baking potatoes scrubbed
- kosher salt
- olive oil

Steps:

  • Pre-heat your oven to 400 degrees. Bake 45 minutes. If you bake more potatoes than the 3, it may take a few minutes longer for them to get done. Scrub your potatoes. Prick several holes in each potato to release the steam. Take olive oil and generously cover each potato and sprinkle kosher salt over them on both sides. Place potatoes on a baking sheet, and bake. The inside of the baked potato is white and fluffy. You can eat the skins. They are especially delicious with my Simple Romaine Lettuce and Tomato salad with garlic dressing. Spoon the salad in the potato skin and eat like a taco. It is delicious! Enjoy!
  • Note: The original recipe listed the temperature of the oven as 450, but mine bakes perfectly in a 400 degree oven.

Provided by Priscilla

Time 1h40m

Yield 12

Number Of Ingredients 17

2 cups warm water
2 (.25 ounce) packages active dry yeast
½ cup white sugar, divided
¼ cup vegetable oil, or more as needed
1 large egg
2 teaspoons salt
6 ½ cups all-purpose flour, or more as needed
½ cup unsalted butter, melted
½ cup white sugar, or more to taste
¼ cup ground cinnamon, or more to taste
½ cup chopped pecans, or to taste
Topping:
1 cup powdered sugar
2 tablespoons unsalted butter, melted
½ teaspoon vanilla extract
1 tablespoon milk, or more as needed
2 tablespoons chopped pecans, or to taste

Steps:

  • Combine water, yeast, and 1 tablespoon sugar in the bowl of a stand mixer fitted with the paddle attachment. Let sit until foamy, about 5 minutes.
  • Add remaining sugar, 1/4 cup oil, egg, and salt; mix until combined. Scrape paddle attachment and switch to the dough hook. Mix in flour, 1 cup at a time, until dough comes away from the sides of the bowl. Continue kneading for about 3 more minutes.
  • Add a bit of oil on the dough and roll the dough in the bowl until all sides are coated. Cover with a towel and let rise until at least doubled in size, about 45 minutes.
  • Punch down the dough and transfer to a floured surface. Roll out into a rectangle. Pour melted butter onto the dough and sprinkle with sugar and cinnamon to taste. Add pecans. Roll up lengthwise and cut into 12 rolls. Transfer to a greased 9x13-inch baking dish and let rise for 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until golden brown in color, about 15 minutes.
  • While the rolls are baking, combine powdered sugar, melted butter, and vanilla for topping. Add 1 tablespoon milk and mix to a pourable consistency, adding more if necessary.
  • Remove rolls from the oven. Immediately pour topping over top and sprinkle with pecans.

Provided by Alix Traeger

Categories     Bakery Goods

Number Of Ingredients 7

2 cups all-purpose flour
½ teaspoon kosher salt
1 teaspoon baker's ammonia
1 cup unsalted butter, high-quality, cubed, and softened
½ cup sugar
2 teaspoons vanilla extract
additional topping, chocolate chips, whole almonds, or raisins

  • Top each cookie with 3 chocolate chips, a single almond, or raisins.
  • Bake the cookies for 30 minutes, or until the bottoms are light golden brown and the edges are crispy.
  • Enjoy!

GRANDMA'S CHEESY POTATOES

Grandma's Cheesy Potatoes image

My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

BONNIE'S GRANDMA'S CHICKEN NOODLE SOUP

BONNIE'S GRANDMA'S CHICKEN NOODLE SOUP image

This old-fashioned chicken noodle soup is the best we have ever tasted. It is also a snap to make with the ingredients you have right in your own pantry. Great served with grilled golden brown swiss cheese sandwiches on French bread. This recipe makes a lot. Freeze some and enjoy it later on! Happy Cooking! The photo is my own and so is this humble recipe.

Categories     Chicken

Number Of Ingredients 11

8 - drumsticks boiled in 12 cups water until done. use any cut of chicken, thighs or breast meat, leave skin on.
1 - large onion, chopped
2 - tablespoons minced garlic from jar
2 - tablespoons leaf marjoram (not ground)
2 - tablespoons chicken granules
1/2 - cup frozen peas
1 - cup sliced baby carrots
1 - cup chopped celery
1 - 16 ounce package of grandma's fresh frozen egg noodles, wide kind (don't substitute)
- black pepper to taste
- a little olive oil to saute vegetables

Steps:

  • DAY BEFORE Boil the drumsticks in the water until done. Save the water to make the soup. Refrigerate.
  • THE NEXT DAY... PREPARE GRANDMA'S NOODLES (These are NOT the regular wide curly kind) Follow the instructions on the package that say to slit the plastic and microwave 1 minute. Remove and separate the noodles and spread them out on a cookie sheet.
  • MAKE THE SOUP Remove skin and bones from the drumsticks and discard. Save the chicken and the broth. Chop the onions, celery and carrots and saute in a large dutch oven in a little olive oil. When the vegetables are tender, add the minced garlic and stir a couple of times. Add the chicken stock, chicken granules, pepper, marjoram, and the chicken to the pot. Simmer covered over low heat until the vegetables are done. Add Grandma's noodles and bring soup to a low boil and cook until noodles are tender and to your preference. Add frozen peas. Check seasoning. Cook until peas are done.
  • COOK'S TIP Do you like a lot of broth or a little broth in your soup? If you don't have enough broth to suit you, you can add a can of chicken broth,a teaspoon of chicken granules, a half can of water and a teaspoon of marjoram and add it to the broth to thin it.
