Steps:
- Cut the pork in about 1 inch pieces and saute in a pan with the vegetable oil for about 3 minutes over medium-high heat, until the pork is no longer pink and starts to brown.
- In a medium bowl mix the rest of the ingredients. Pour over the pork and bring to a boil. You may think there's too much water, but it will reduce. Once it's boiling turn the heat down to low and let simmer for about 30 minutes uncovered, stirring occasionally, or until there's only about 3 tbsp of sauce left.
- Garnish with green onions. Serve over noodles or steamed rice.

MOJO MARINATED PORK
Steps:
- Combine 4 cups of the orange juice and 1 cup of the lime juice and zest in a large saucepan over high heat and reduce to 2 cups. Remove from the heat and stir in the remaining orange juice and lime juice add a few cloves of garlic and 1/4 cup of the oregano. Let cool to room temperature.
- Using a paring knife, make small slits over the entire surface of the pork and rub the garlic into the slashes. Whisk together the oil and remaining 1/4 cup of the oregano in a large roasting pan, add the pork and turn to coat, cover and let marinate in the refrigerator for at least 4 hours and up to 24 hours.
- Preheat the oven to 425 degrees F.
- Remove the pork from the refrigerator 30 minutes before roasting. Season the pork with salt and pepper and cook for 30 minutes. Reduce the heat to 375 degrees F and continue roasting, basting with the marinade during the last 30 minutes of roasting until golden brown and an instant-read thermometer inserted into the center reaches 150 degrees F. Remove from the oven, baste with any remaining glaze, tent loosely and let rest 15 minutes before slicing.
- Serve the pork with the Mojo Dipping Sauce and the Plantains with Rum and Brown Sugar.
- Using a mortar and pestle, mash the garlic, serrano, cilantro and a few pinches of salt until it becomes a paste. Add the orange juice, lime juice and oil and stir to combine.
- Heat butter in a large saute pan over high heat. Add the sugar and cook until melted. Add the plantains and cook until soft and heated through. Remove pan from the heat, add the rum, return to the heat and cook until the alcohol has reduced.

- Preheat the oven to 275°F (135°C). Generously season the pork with salt and pepper. Heat a medium oven-safe pot over medium-high heat. Add the oil and butter. When the butter stops foaming, add the pork, in batches if necessary, so it’s in one layer with space in between. Sear, turning occasionally, until golden brown on all sides, about 10 minutes total. Remove the pork to a plate, reduce the heat to medium, then add the shallot, celery, fennel, garlic powder, thyme sprig, and salt and pepper. Cook, stirring often, until the shallots and fennel are wilting, about 5 minutes.
- Add the half & half, 1 of the sage leaves, and the bay leaves, lemon zest, cinnamon stick, and baking soda; stir to combine. Return the pork to the pot, along with any collected juices. Cover and bring to a simmer. Transfer to the oven, and cook, covered, for 2 hours, turning the pork a few times along the way.
- Remove the pot from the oven, remove the lid, and gently remove the pork to a plate. Remove and discard the cinnamon stick, thyme sprig, and bay leaves. Add to the pot of sauce the kale and the water. Bring the liquid to a simmer over medium heat and toss the kale to coat. Cover and let simmer until the kale is very tender and wilted, stirring a few times during cooking, about 10 minutes.
- Meanwhile, line a small plate with a paper towel. Heat a small skillet over medium-high heat. Add a 1/4-inch layer of olive oil and heat until the oil starts shimmering. Add the remaining sage leaves and fry for 45 seconds, turning them with a fork after 30 seconds. Immediately remove to the paper towel to drain and crisp.

- In a small saucepan, heat the olive oil. Add the onion and cook over moderate heat until softened, about 5 minutes. Add the garlic and cook until fragrant. Add the lemon and orange juices and simmer for 2 minutes. Add the vinegar. Transfer half of the mojo to a blender and let cool. Refrigerate the remaining mojo.
- Meanwhile, in a jar, shake the garlic and onion powders, ground pepper and cumin. Add 2 tablespoons of the dry rub to the mojo in the blender. Add the Worcestershire and 1 tablespoon of salt and puree the marinade.
- Put the pork in a resealable 1-gallon plastic bag and add the marinade. Seal the bag, pressing out the air, and refrigerate for at least 8 hours or up to 24 hours, turning occasionally. Bring the pork to room temperature.
- Preheat the oven to 350° and set a rack in a roasting pan. Remove the pork from the marinade and pat dry. Rub the meat all over with the remaining dry rub and set it on the rack. Roast for 3 hours, until an instant-read thermometer inserted into the thickest part of the meat registers 150°. Reduce the oven temperature to 275° and roast the meat for about 3 hours longer, until very tender and an instant-read thermometer registers 180°. Remove the roast from the oven and cover with foil; let rest for 30 minutes.
