2 (8 ounce) chicken breasts (with bone and skin)
1 ounce melted butter
1 teaspoon paprika
1 pinch salt, to taste
1 pinch white pepper, to taste
1 ounce cherry brandy
1 (8 ounce) can black bing cherries
2 tablespoons Burgundy wine
2 tablespoons sugar
1 -2 teaspoon cornstarch (depending on desired thickness)
1 pinch salt

Steps:

  • Preparing Bing Cherry Sauce:.
  • Drain juice from cherries.
  • Combine juice with wine, sugar, cornstarch, and salt; mix thoroughly.
  • Bring mixture to a boil until sauce thickens.
  • Remove from heat.
  • Stir in the drained cherries.
  • Season chicken breast with salt, white pepper, paprika, and brush with butter.
  • Bake for 30 minutes at 325°F or until cooked and tender.
  • Place chicken in a medium size ovenproof serving dish and cover with sauce.
  • Have table set, candles lit, all accompaniments on table, and turn off lights when ready to flambé.
  • HOW TO FLAMBE:.
  • Pour 1/4 ounce of brandy over dish and place in middle of table.
  • Using long wooden matches, ignite chicken breast.
  • When flame goes out and liquor has burned off, you are ready to serve.

1 lb bing cherry (Pitted & chopped)
2 tablespoons fine sugar
2 bay leaves
3 allspice berries
3 whole cloves
1 cinnamon stick
1 pinch fine sea salt
1/2 cup orange muscat dessert wine (*Nibbia Wine)
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 tablespoons unsalted butter
1/2 cup red shallot (Chopped)
1/4 cup cherry brandy
1 pinch ground nutmeg
1 pinch ground cayenne pepper

Steps:

  • Place cherries a glass bowl. Add sugar, sea salt, orange muscat wine, lemon zest, lemon juice and stir.
  • Place bay leaves, allspice berries, whole cloves, cinnamon stick in cheese cloth and tie with a string to complete Sachet. Place Sachet in cherries, cover with plastic and chill for 1 hour.
  • Melt 1-tablespoon butter in a heavy bottom saucepan and saute shallots until they are soft or tender. Add cherry brandy and reduce by one-half.
  • Add fresh cherries with their juice, Sachet and bring to a slow boil. Stir cherries to prevent burning and wish in butter. Reduce to a simmer for 10-15 minutes. Remove cherries from heat, discard Sachet and allow cherries to cool slightly.
  • Puree cherries with a hand blender, bring to a simmer, add nutmeg and cayenne pepper to taste. Stir cherry sauce and simmer for 5 minutes.
  • Strain cherry sauce using a fine sieve or chinois. Serve Fresh Bing Cherry Sauce hot or room temperature.
  • Garnish: Fresh Bing Cherry Sauce with Whole Cherries.
  • *Orange Muscat Dessert Wine (Nibbia Winery, Half-Moon Bay, Ca.).
  • Chef's Note: You can use any Muscat Wine.

1 domestic duckling (4 to 5 pounds)
1 jar (12 ounces) cherry preserves
1 to 2 tablespoons red wine vinegar
Bing cherries, star fruit and kale, optional

Steps:

  • Prick skin of duckling well and place breast side up on a rack in a shallow roasting pan. Tie drumsticks together. Bake, uncovered, at 350° for 2 to 2-1/2 hours or until juices run clear and a thermometer reads 180°. (Drain fat from pan as it accumulates.) Cover and let stand 20 minutes before carving. , Meanwhile, for sauce, combine preserves and vinegar in a small saucepan. Cook and stir over medium heat until heated through. Serve with duck. Garnish platter with fruit and kale if desired.
