CHILE RELLENO BREAKFAST CASSEROLE RECIPE

Chile Relleno Breakfast Casserole Recipe image

Roast poblano chiles and Monterey Jack cheese are layered and covered in eggs before getting baked into the perfect breakfast casserole.

Provided by Tasting Table Staff

Categories     Main Course

Time 1h

Number Of Ingredients 9

1¾ pounds (12 medium) poblano chiles
1½ cups half-and-half
2 tablespoons all-purpose flour
1 tablespoon kosher salt
8 eggs
1 garlic clove
Nonstick cooking spray
2 cups grated Monterey Jack cheese
Boiling water, for baking

Steps:

  • Preheat the broiler to high and line a sheet pan with foil. Line the chiles next to each other on the pan and broil, turning as needed, until the chiles are well charred, 4 to 5 minutes. Transfer to a heatproof bowl and cover with plastic wrap. Let steam for 15 minutes, then peel and deseed the poblanos using the back of a knife.
  • Lower the oven temperature to 300°. In a blender, combine the half-and-half, flour, salt, eggs and garlic. Blend on medium until smooth.
  • Grease a 9-by-13-inch baking dish with cooking spray and line with a quarter of the roast poblanos, followed by a quarter of the grated cheese. Continue this layering process until all the chiles and cheese have been used. Pour the egg mixture in to cover the chiles and cheese.
  • Place the baking dish in a roasting pan and fill the roasting pan with enough boiling water to come up halfway along the sides of the baking dish. Bake until the eggs begin to set, 30 minutes, then raise the temperature to 400° and bake for another 10 to 15 minutes, until the eggs are fully cooked and the top is golden brown.
  • Let rest at room temperature for 15 minutes, then slice and serve.

BAKED CHILES RELLENOS

Baked Chiles Rellenos image

Delicious baked chiles rellenos without the fat of frying. Serve with Mexican beans and rice.

Provided by Busy Teacher

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h5m

Yield 8

Number Of Ingredients 8

8 medium poblano peppers
4 large eggs
½ cup all-purpose flour
⅓ cup milk
½ teaspoon baking powder
½ teaspoon salt
1 (12 ounce) package queso fresco
1 (8 ounce) package shredded Cheddar cheese

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Roast peppers on the top rack of the preheated oven until the skins are charred, about 5 minutes per side. Remove from the oven and allow to cool enough to handle, about 10 minutes. Set the oven to 350 degrees F (175 degrees C).
  • While peppers are cooling, whisk eggs, flour, milk, baking powder, and salt together in a medium bowl until smooth. Slice the queso fresco into eight even rectangles, just shorter than the length of the peppers.
  • Carefully peel off the waxy skin of the cooled peppers. Gently cut a slit down the length of the peppers and use a spoon to remove the seeds and membranes.
  • Spread about 1/4 cup of the milk mixture on the bottom of a 9x13-inch baking dish. Wrap each pepper around a queso fresco rectangle. Place each chile/cheese wrap seam-side down in a single layer in the baking dish. Cover with remaining egg mixture. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until the egg mixture has risen and the cheese is golden brown, about 30 minutes.

CHILE RELLENO SQUARES- BREAKFAST VERSION

Chile Relleno Squares- Breakfast Version image

A friend made this for breakfast at our MOPS meetings (Mothers of Preschoolers). They were always a hit!! Very YUMMY but not low fat! I make them every year for our Christmas morning relative open house (if you have kids, you know what I mean- all the grandparents and friends stop by to bring the kids something...). Not a big hit with the kids but the adults love it- and it is REALLY EASY!. Of course, it could be made for dinner as well. However, this tastes nothing like authentic Chile Rellenos. Yummy- but not authentic. PS- Not spicy unless you substitute in another kid of chile for the diced green canned chilies.

Provided by kda949

Categories     One Dish Meal

Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 7

10 eggs
16 ounces cottage cheese
1 lb grated monterey jack cheese (about 2 cups??)
1/2 cup flour
1 teaspoon baking powder
2 (7 ounce) cans diced green chilies
1/2 cup butter (I would not substitute with margarine)

Steps:

  • In a 13x9 in baking dish, place the stick of butter.
  • Place dish in the oven and set to 350 degrees (the butter will melt while the oven preheats).
  • Meanwhile, beat eggs in a large bowl.
  • Blend in- by hand- cottage cheese and grated cheese. Add flour, baking powder and green chilies.
  • Remove the baking dish from the oven once the butter has melted and add the egg mixture- no need to stir. Cover with foil. If the oven has not yet preheat, wait until then, otherwise --
  • Bake 45 mins at 350. Remove foil and bake an additional 15 minutes.
  • Optional- serve with sour cream and salsa.
