BROCCOLI BACON CASSEROLE WITH A KICK

Steps:
- Heat oven to 350°F.
- Cook broccoli in boiling water in large saucepan 5 min. or until crisp-tender; drain. Rinse with cold water; drain well.
- Meanwhile, cook bacon in same saucepan on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet. Add onions to reserved drippings; cook and stir 4 min. or until crisp-tender. Stir in flour. Gradually stir in milk until blended; cook and stir 3 min. or until thickened. Add cheese; cook and stir 3 min. or until melted. Remove from heat.
- Stir in broccoli and bacon; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Top with cracker crumbs.
- Bake 25 min. or until heated through.

BEST CHEEZ-IT BROCCOLI CASSEROLE
This recipe was given to me by my husband's Aunt Julia. It has been in the family for years. We serve it at all the family gatherings The children love it and are disappointed if someone doesn't make it. I double this to take to potlucks and always get asked for the recipe. This make be refrigerated or frozen before cooking.

Steps:
- Cook broccoli 5 minutes; drain well.
- Combine next 6 ingredients to make sauce.
- Combine sauce with broccoli.
- Pour into an 8x8-inch casserole dish.
- Sprinkle top with cracker crumbs.
- Bake in a 400°F oven for 30 minutes.
- Don't substitute salad dressing for the mayonnaise, it will make the casserole runny.

- Preheat oven to 400 degrees. In two batches, cook broccoli in a large pot of salted boiling water until slightly tender, about 3 minutes. Drain and rinse with cold water to cool. Drain well.
- Melt 2 tablespoons butter in a large straight-sided skillet over medium-high. Add onion and mushrooms; season with salt and pepper. Cook, stirring occasionally, until tender and starting to brown, about 7 minutes. Add flour and cook, stirring constantly, 1 minute. Stir in milk in a slow, steady stream. Cook, stirring constantly, until mixture coats the back of a spoon, about 9 minutes. Remove from heat. Stir in mustard, Worcestershire, cayenne, sour cream, and cheese. Season with salt and pepper. Stir in cooled broccoli. Transfer to a 2 1/2-quart shallow baking dish. Combine crackers and remaining 2 tablespoons melted butter. Sprinkle evenly over top of casserole. Bake until bubbling and top is browned, about 20 minutes.

- Preheat oven to 400°. In a skillet, cook beef and onion in oil until meat is no longer pink; drain. Stir in the Worcestershire sauce, garlic salt, Italian seasoning, rice, soup and water. , Place cooked broccoli in an 11x7-in. baking dish; spoon meat mixture over top. Sprinkle with mozzarella cheese. Bake, uncovered, until heated through, 15-20 minutes. Garnish with parsley if desired.

I came up with this when I had planned to make a broccoli casserole and discovered that I didn't have any cheese! I went digging through my cabinets for something cheesey. I found a can of nacho cheese sauce. I figured it would work. It was very good in the casserole and just gave a light Kick.

Steps:
- Cook broccoli until tender. I put it in the casserole dish, covered and microwaved for about 5 minutes added the onion, stirred and cooked until done.
- Drain off excess water.
- Add mushrooms-drained, mushroom soup, and cheese sauce. Mix well.
- Crush Ritz crackers (if you are using melted butter, mix together now) and sprinkle on top (if you are using butter spray, spray the top of the crackers now). The butter or spray help to get the topping crisp.
- Bake in a 350 oven until hot and bubbly and golden, 30-45 minutes.
