4 orange roughy, red snapper, catfish or trout fillets (6 ounces each)
6 tablespoons butter, melted, divided
1 tablespoon all-purpose flour
Paprika
Juice of 1 lemon
1 tablespoon minced fresh parsley
2 teaspoons Worcestershire sauce

Steps:

  • Place fish on a broiler rack that has been coated with cooking spray. Drizzle 3 tablespoons butter over fillets; dust with flour and sprinkle with paprika. , Broil 5-6 in. from the heat for 5 minutes or until fish just begins to brown. Combine lemon juice, parsley, Worcestershire sauce and remaining butter; pour over fish. Broil 5 minutes longer or until fish flakes easily with a fork.

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Arrange haddock fillets on the prepared baking sheet. Mix onion powder, paprika, garlic powder, salt, black pepper, and cayenne pepper in a small bowl; sprinkle seasoning over haddock. Dot haddock with pieces of butter.

1/4 cup butter ( or a good quality vegetable oil)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1 tablespoon lemon juice (freshly squeezed)
1 1/2 pounds fish fillets (see notes below)
chopped fresh parsley

Steps:

  • Preheat the oven on the broil setting.
  • Heat the butter in a small skillet and stir in the salt, pepper, paprika and lemon juice. Arrange the fish on a greased rack in a broiler pan (thin fillets may be placed in the pan without the rack). Brush the fillets with the seasoned butter.
  • Broil 4-5 inches from the source of heat until the fish flakes with a fork, about 5 to 10 minutes depending on the thickness of the fish fillets. Thick fillets should be turned about halfway through the cooking period.
  • Sprinkle with chopped fresh parsley and serve with lemon or lime wedges.

Garlic and herb seasoning 1 pinch

Steps:

  • Preheat the broiler to medium-high. Cut two large squares of aluminum foil; one square should be enough to lay all the fillets in comfortably with a couple of inches spare around the edges.
  • Lay the fish fillets, skin-side down, in the center of one of the foil squares. Brush the fillets with the melted butter and sprinkle the seasoning and salt over the top.
  • Lay the second square of foil over the top and fold the edges of the bottom square up and over. Fold again so that you have a leak-proof parcel.
  • Place the parcel in the broiler. Cook for about 7 minutes, turn the parcel over and cook for another 7 minutes until the fish is soft and flaky.
  • Serve the fillets with the buttery juices drizzled over the top.

4 tablespoons unsalted butter
4 cloves garlic ((minced))
1 tablespoon fresh squeezed lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley ((minced))

Steps:

  • Preheat the broiler on the oven. Pat the cod with a paper towel, then season both sides with the salt and pepper.
  • Melt the butter over medium-high heat in a cast iron or oven-proof skillet that is no bigger than 12 inches. Add the garlic and cook, stirring constantly, for 30 seconds, then stir in the lemon juice and zest.
  • Place the cod fillets in the pan and cook for 1 minute, then carefully turn them over.
  • Place the skillet in the oven about 4-6 inches from the broiler. Broil for 6-9 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
  • Garnish with the parsley and extra lemon slices, if desired, and serve.

Steps:

  • Gather the ingredients.
  • Combine the melted butter, lemon juice, and soy sauce in a small bowl.
  • Place the fillets on a dish, sprinkle with garlic powder, and pour the marinade over the fillets. Turn to coat and let stand for 10 minutes.
  • Heat the broiler to 500 F. Oil the rack of the broiler pan and place it in the oven about 4 inches from the heat source. Heat until the pan is very hot.

  • Rinse the fish and lay it onto paper towels. Use the paper towels to pat the fish dry and place the fillets on a wire rack (a baking or cooling rack placed inside of a baking sheet works great to catch any drips and spills).
  • Sprinkle half the salt and half the pepper over the fish. Carefully drizzle half of the olive oil over the seasoned fish. Using a pastry brush or your fingers, evenly distribute the oil all over that side of the fish. Flip the fish over on the rack and repeat with remaining salt, pepper, and oil. Let the fish rest and marinade while you fire up the grill.
  • Turn your grill on to high and allow it to heat for 5 to 10 minutes until the grill is very hot. Carry the fish out and open the lid to the grill, it should be very hot. Use a brush to scrap the grill grate clean and then lower the temperature to low. Place the fish on the grill, close the lid, and leave the fish to cook with the lid closed, without turning for 7 to 10 minutes (chances are really good your fish will be done right at 7 minutes unless it is very thick, check it 7 minutes!).
  • The fish should be white and flakey when you test it with the end of a paring knife. Using a metal spatula remove from the grill.
