BROILED SHRIMP TOASTS

This simple and quick version of the dim sum favorite is a healthier, less greasy appetizer than the usual fried shrimp toasts.

4 ounces rock shrimp (or peeled medium shrimp, deveined)
1 tablespoon minced shallot
2 teaspoons finely chopped peeled fresh ginger
1 tablespoon mayonnaise
1/2 teaspoon Sriracha (Asian chili sauce) or other chili sauce
1 teaspoon finely grated lime zest, plus 2 teaspoons fresh lime juice
1/2 medium baguette, sliced into 20 thin slices (less than 1/4 inch thick)
3 tablespoons unsalted butter, melted

Steps:

  • Pulse shrimp, shallot, and ginger in a food processor until a coarse paste forms. Transfer to a bowl. Stir in mayonnaise, Sriracha, and lime zest and juice.
  • Heat broiler. Working in 2 batches, toast bread slices on a rimmed baking sheet 8 inches from heat source until golden brown, about 30 seconds. Remove from oven. Flip bread, generously brush tops with butter, and spread with a thin layer of shrimp paste (about 1 teaspoon each).
  • Broil until shrimp mixture is opaque and cooked through and toasts are browned, about 1 minute. Serve warm.

Steps:

  • In a large bowl, combine the first seven ingredients. Place about 1/4 cup of mixture on top of each slice of bread. , Broil 3-4 in. from the heat for 6-7 minutes or until top is lightly browned and cheese is melted. Serve immediately.

¼ cup diced water chestnuts
¼ cup chopped cilantro leaves

1 teaspoon toasted sesame oil
1 teaspoon Asian fish sauce

Steps:

  • Place shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt into the bowl of a food processor. Pulse several times; scrape down sides of bowl. Continue to process until mixture is well blended and reaches a paste consistency, 1 or 2 minutes. Shrimp toast is one of the tastiest bites at the dim sum table. I didn't actually like shrimp toast growing up, but when I finally got around to trying it, I couldn't believe how much flavor was packed into one tiny unassuming square. These are crunchy on the outside, soft in the middle and really dangerous because they are so so addictive.

8 ounces raw shrimp, peeled, deveined and tails removed (the size does not really matter here)
1 large egg white
1 teaspoon sriracha, plus more for serving
1/2 teaspoon kosher salt
1/2 teaspoon toasted sesame oil
5 turns black pepper
2 cloves garlic, minced
2 scallions, trimmed and thinly sliced
1 stalk lemongrass, end trimmed, dry outer leaves discarded, bottom few inches of white part bruised with the back of a knife and finely minced
3 slices potato bread (or white bread), crusts removed
2 to 3 quarts neutral oil (vegetable or peanut are fine)
1 teaspoon sesame seeds

Steps:

  • Put the shrimp and egg white in a food processor and pulse until pasty but still a little chunky. Add the sriracha, salt, sesame oil, black pepper, garlic, scallions and lemongrass and pulse until just combined.
  • Divide the mixture among the bread slices and spread in an even layer to the edge. At this point, you can freeze the toasts while you heat the oil (although freezing is not totally necessary, it makes for cleaner cuts and easier handling).
  • Bring 1 1/2 inches of oil to 350 degrees F in a heavy-bottomed pot.
  • Cut each bread slice into 4 squares and sprinkle with the sesame seeds. Carefully place each piece shrimp-side down into the oil. Fry until golden, 2 to 3 minutes. Remove onto a rack or paper towel. Serve immediately drizzled with sriracha.

6 tablespoons unsalted butter, at room temperature
1 teaspoon finely chopped garlic
1 tablespoon chopped shallots
1 tablespoon chopped fresh Italian parsley
1/2 lemon, juiced
Fine sea salt, to taste
24 uncooked large shrimp, shell and tail on
1/2 cup Fish Fumet, recipe follows, or water
2 pounds heads and bones from black bass, red snapper or halibut
Cold water
2 tablespoons corn oil
1 medium onion, peeled and very thinly sliced
1/4 small fennel bulb, very thinly sliced
1 leek, very thinly sliced
15 white peppercorns
1/4 teaspoon fine sea salt
1 sprig fresh Italian parsley
1 bay leaf
1 cup dry white wine
3 cups water

Steps:

  • Preheat the broiler. Place the butter in a small bowl and stir in the garlic, shallots, parsley, lemon juice and salt. Cut the shrimp in half lengthwise, leaving them attached at the tail. Spread the shrimp open and arrange them in a shallow, oval flameproof casserole. Top the shrimp with generous dabs of the butter mixture and pour fumet or water into the dish. Broil the shrimp until they are cooked through, about 4 minutes. Arrange the shrimp in a line across 4 plates, so that the tail of each shrimp fits inside the shrimp in front of it. Whisk the liquid in the casserole dish and pour it over the shrimp. Serve immediately.
  • Remove the gills and eyes from the fish or have your fish store do it. Cut the heads and bones across into 4-inch pieces. Put them in a shallow pan and cover with cold water. Let stand for 1 hour, changing the water twice. Drain. Heat the oil in a large pot over medium heat. Add the onion, fennel, leek, peppercorns, salt, parsley and bay leaf. Turn the heat to medium-low and cook until the vegetables are softened but not browned, about 4 minutes. Add the fish bones and cook, stirring from time to time, until the bones and any flesh around the bones turn from translucent to white, about 12 minutes. Add the wine and water and bring to a boil. Boil for 10 minutes, skimming off the foam as it rises to the top. Remove from the heat and let rest for 10 minutes. Strain the fumet through a fine-mesh sieve, pressing firmly on the solids to extract as much of the flavorful liquid as possible. If you have more than 3 cups of fumet, place the liquid in a clean saucepan and boil until reduced to 3 cups. Store, tightly covered, in the refrigerator for up to 3 days or in the freezer for up to 2 months.

1 small onion, minced
1/2 teaspoon sugar
1 egg, beaten
1 teaspoon salt
1 tablespoon cornstarch
1 tablespoon dry Sherry

10 slices slightly stale bread
Oil for deep-frying

Steps:

  • Peel and devein shrimp. Place on a chopping board, add ginger and onion and chop until very fine using a Chinese cleaver or a large chef's knife. Transfer the mixture to a bowl.
  • Add sugar, egg, salt, cornstarch, sherry and black pepper and mix well. Spread mixture thickly on one side of the bread slices.
  • Heat oil to 375 degrees. Working with a few slices of bread at a time, fry them, shrimp side down, for about 1 1/2 minutes or until golden brown. Turn and fry the other side until golden brown. Remove, drain, cut into quarters and serve as an appetizer with soy sauce, Chinese mustard, rice vinegar, oyster sauce, hoisin sauce or plum sauce.

4 teaspoons minced garlic
1 tablespoon minced peeled fresh ginger
1 tablespoon vegetable oil
1 tablespoon mirin*
2 teaspoons soy sauce
1/2 teaspoon salt
3/4 pound medium shrimp in shell (31 to 35 per pound), peeled, deveined, and cut into 1/2-inch pieces
3 tablespoons chopped fresh cilantro
1 (9- by 4-inch) white Pullman loaf, unsliced

Steps:

  • Cook garlic and ginger in oil in an 8- to 9-inch heavy skillet over moderate heat, stirring, until softened and fragrant, about 1 minute. Add mirin, soy sauce, and salt (omit salt if making ahead; see cooks' note, below) and simmer, stirring, 15 seconds. Transfer marinade to a bowl and cool to room temperature.
  • Add shrimp and cilantro, tossing to coat, and marinate, covered and chilled, 1 hour.
  • Put oven rack in upper third of oven and preheat oven to 350°F.
  • Turn bread loaf on its side and evenly cut crust from bottom of loaf using a long serrated knife, discarding crust, then cut a 3/8-inch-thick slice from bottom and trim crust from sides of slice. Put slice on a baking sheet (reserve rest of loaf for another use) and bake, turning over once, until dry but not colored, 8 minutes total. Remove bread from oven but leave on baking sheet.
  • Immediately increase oven temperature to 475°F.
  • Spread top of hot toast with all of shrimp mixture, packing it down into a thick even layer and covering surface entirely. Make sure oven temperature has reached 475°F, then bake shrimp toast until topping is cooked through, 12 to 15 minutes. Transfer with a large flat spatula to a rack to cool 5 minutes, then transfer to a cutting board.
  • Halve shrimp toast crosswise with a very sharp knife, then cut each half lengthwise into fourths, making 8 strips total. Cut each strip into 4 pieces. Serve toasts warm or at room temperature.

TOMATO TOAST WITH BUTTERED SHRIMP



Tomato Toast With Buttered Shrimp image

Crisp, golden-brown toast is the perfect bed for impossibly ripe tomatoes, made even better when topped with saucy, garlicky shrimp. These fully assembled tomato toasts may require a knife and fork to properly tackle, but they are also wonderful eaten with your hands. Keeping the tails on the shrimp makes for a festive presentation, but feel free to remove them so you don't have to deal with them as you eat.

4 slices bread from a boule or country loaf, about 3/4- to 1-inch thick
4 tablespoons unsalted butter
1 1/2 pounds shrimp, peeled and deveined
1/4 cup dry white wine (optional)
1 pound fresh tomatoes, thinly sliced
1 lemon, quartered

Steps:

  • Finely chop 2 cloves of garlic and add to a small bowl with parsley; season with salt and pepper and set aside. Thinly slice remaining 4 garlic cloves; set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add bread and toast until golden brown on one side, 2 to 3 minutes. Turn bread, adding another drizzle of olive oil as needed and toast on the other side, another 2 to 3 minutes. Transfer to a large serving platter and set aside.
  • Heat butter and remaining 2 tablespoons olive oil in the same skillet. Add the sliced garlic and season with salt and pepper. Cook, swirling skillet occasionally, until the butter starts to brown and the garlic is golden, 2 to 3 minutes.
  • Add shrimp and season with salt and pepper. Cook, tossing occasionally, until shrimp are bright pink and just cooked through, 3 to 4 minutes. Add white wine, if using, and let cook for a minute or two, just to take the edge off the wine (don't reduce so much that you lose that sauciness, though). Remove pan from heat.
  • Place tomatoes on top of toast and sprinkle with half of the parsley-garlic mixture. Spoon shrimp and any buttery sauce in the skillet over the tomatoes and toast. Finish with remaining parsley-garlic mixture and serve with lemon wedges alongside.
