1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (packed) golden brown sugar
6 tablespoons (3/4 stick) unsalted butter, melted
1 large egg
3 tablespoons orange liqueur
1/2 teaspoon vanilla extract
6 ounces milk chocolate, cut into 1/2-inch pieces
1/3 cup chopped pecans
1/4 cup chopped candied orange peel

Steps:

  • Preheat oven to 350°F. Butter 8x8x2-inch baking pan. Mix first 3 ingredients in small bowl. Whisk brown sugar, butter, egg, 2 tablespoons liqueur and vanilla in large bowl to blend. Add dry ingredients; stir to blend. Stir in chocolate, pecans and peel. Transfer batter to pan.
  • Bake batter until golden and tester inserted into center comes out clean, about 25 minutes. Transfer pan to rack. Brush top with 1 tablespoon liqueur. Cool completely in pan. Cut into 16 squares. (Can be made 2 days ahead. Wrap in plastic; store at room temperature.)

My daughter Mary and I love to cook and we love pecan pie. This year we wanted to try something other than the traditional pies for Thanksgiving. This turned out so good we wanted to share it with everyone.

1 cup chopped pecans
12 whole graham crackers
1 cup firmly packed brown sugar
¾ cup butter, melted
2 tablespoons heavy whipping cream
1 teaspoon vanilla extract
¼ teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 10x15-inch jelly roll pan with aluminum foil; spray with cooking spray.
  • Arrange pecans in a single layer in a shallow pan.
  • Bake in the preheated oven, stirring halfway through, until pecans are toasted and fragrant, 10 to 12 minutes.
  • Arrange graham crackers in a single layer on the prepared jelly roll pan.
  • Combine brown sugar, butter, and cream in a heavy saucepan; bring to a boil, stirring occasionally, until sugar is dissolved, about 5 minutes.. Remove from heat and stir in vanilla extract. Fold in pecans. Pour pecan mixture over graham crackers, spreading to coat.
  • Bake in the preheated oven until topping is bubbling, 10 to 11 minutes. Remove from oven and immediately sprinkle with salt. Transfer coated crackers and aluminum foil to a wire rack to cool, about 30 minutes. Break into bars.

1-1/2 cups sugar
1/2 cup packed brown sugar
1/2 cup evaporated milk
3 tablespoons light corn syrup
4 large marshmallows, cut into quarters
2 tablespoons butter
2 cups coarsely chopped pecans
1/2 teaspoon vanilla extract

Steps:

  • In a large heavy saucepan, combine the sugars, milk and corn syrup. Cook over medium-low heat, stirring occasionally, until a candy thermometer reads 238° (soft-ball stage)., Remove from the heat; stir in marshmallows and butter until smooth. Add pecans and vanilla; stir only until mixture begins to thicken. Quickly drop by tablespoonfuls onto waxed paper. Cool until set. Store in an airtight container at room temperature.

1 cup old fashioned oats
1 1/4 cups packed light brown sugar
3/4 cup butter, softened slightly
1/8 teaspoon salt
1 large egg
1 1/4 teaspoons vanilla extract
1 1/3 cups all-purpose flour
1 cup chopped pecans
3/4 cup shredded sweetened coconut
3/4 cup chopped pecans
1/4 cup unsalted butter, cut into chunks
2/3 cup packed light brown sugar
1 pinch salt
1/4 cup heavy cream (whipping)
2 1/2 tablespoons light corn syrup
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350*.
  • Generously grease 9x13 pan or coat with nonstick spray.
  • In a small bowl, thoroughly stir together the oats, and 1/4 cup hot water; set aside. In a large bowl, with electric mixer on medium speed, beat together the brown sugar, butter and salt until well blended. and fluffy -- Add the egg and vanilla and beat until well blended. Fold in the pecans and coconut.
  • Turn out mixture into the baking pan, spreading to the edges.
  • Bake in upper third of oven for 25-30 minutes, or until the top is nicely browned and a toothpick inserted in the center comes out clean.
  • Transfer the pan to a wire rack and let stand until cooled to warm. about 5 minutes.
  • Meanwhile, for the topping; while the crust is cooling, in a 2 quart heavy saucepan, combine the pecans and butter.
  • Bring to a simmer over medium high heat and cook, stirring constantly, for 3-4 minutes, or until butter is lightly browned, be careful not to burn.
  • Using a long handled wooden spoon to avoid splattering, stir in the brown sugar, salt, cream and corn syrup until evenly incorporated.
  • Return to a boil and boil briskly, stirring constantly for exactly 2 minutes.
  • Remove from the heat and stir in the vanilla.
  • Immediately spread the topping evenly over the still warm crust.
  • Let stand until completely cooled.
  • Using a large sharp knife, cut the slab into 24 bars. Before each cut, dip the knife into hot water and dry off.
  • Store in an airtight container for up to 1 week or freeze for up to 1 month.
  • If freezing, leave the slab whole, then cut into bars, when partially thawed.

This recipe is a holiday favorite of mine but you can use it any time you have a craving for pecan pie. You can make it suit any number large or small, just keep multiplying the recipe!

1 (8 ounce) package crescent rolls
⅔ cup butter
⅔ cup packed brown sugar
1 ½ cups chopped pecans
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 10x15 inch jellyroll pan with parchment paper.
  • Remove crescent roll dough from package and cover the bottom of the prepared jellyroll pan. Pinch seams together so there is just one sheet of dough.
  • In a small saucepan , melt butter over medium heat. Stir in the brown sugar to dissolve, and bring the mixture to a rolling boil for 1 to 2 minutes. Pour the mixture over the prepared crust. Sprinkle the pecans evenly over the mixture. Bake for 20 to 25 minutes in the preheated oven. Edges of crust will be golden.
  • Remove from the oven and sprinkle the chocolate chips over the top. Wait a few minutes, then spread the chips out over the bars. Be careful not to mess up the layer underneath. Allow bars to cool completely before cutting into squares or triangles.
