BRUSCHETTAS WITH SAUTEED CHARD

Kosher salt and freshly ground black pepper
3 pounds fresh green or rainbow chard (4 bunches)
Good olive oil
2 large garlic cloves, thinly sliced
1 round country bread, halved and sliced crosswise 1/2-inch thick
1 garlic clove, cut in half
1 lemon
Freshly grated Parmesan cheese
Fleur de sel, for serving

Steps:

  • Bring a very large pot of water to a boil and add 1 tablespoon of salt. If the stems of the chard are tough, remove them entirely from the leaves and discard. (If the stems are tender, simply cut the stems off at the base of the leaves and discard.) Wash the leaves thoroughly. Immerse the chard in the boiling water and cook for 3 minutes exactly from the moment you get all the leaves in the pot. Drain immediately but don¿t squeeze out the liquid.
  • Warm 3 tablespoons of olive oil in a large (12-inch) saute pan. Add the sliced garlic and cook over medium heat for 30 seconds. Add the chard, sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper, and saute for 3 minutes, tossing frequently with tongs.
  • Meanwhile, toast or grill 8 slices of bread. When they're nicely browned, rub one side of each slice of bread with a cut side of the halved garlic. Place 2 slices of toasted bread on each plate, garlic side up, and use tongs to distribute the chard onto the toasts. Sprinkle each serving with lemon zest, a squeeze of lemon juice, grated Parmesan cheese, and some fleur de sel. Drizzle the bruschetta with olive oil and serve warm. The liquid from the greens will be absorbed into the bread.

1/4 cup dried currants
4 tablespoons extra-virgin olive oil
3 garlic cloves, thinly sliced
2 bunches Swiss chard (about 1 1/4 pounds), ribs trimmed, leaves coarsely chopped
2 tablespoons pine nuts, toasted
8 3 x 2 x 1/2-inch slices crusty French bread

Steps:

  • Place 1/4 cup currants in small bowl. Add enough warm water to cover currants. Soak 20 minutes. Drain well. Preheat oven to 450°F. Heat 3 tablespoons oil in heavy large pot over medium heat. Add garlic and sauté until fragrant and pale golden, about 1 minute. Add Swiss chard. Sauté until chard is wilted and tender, about 5 minutes. Mix in pine nuts and currants. Season mixture to taste with salt and pepper. Remove from heat.
  • Arrange bread in single layer on baking sheet. Bake bread until golden, about 5 minutes. Brush remaining 1 tablespoon oil over bread slices. Top with warm chard mixture, dividing equally. Arrange on platter and serve.

Whole Wheat Spaghetti With Swiss Chard and Pecorino Cheese image

My husband and I enjoyed this dish for dinner on New Year's eve. It was a nice break from all the rich and unhealthy foods we had been eating throughout the holidays. This recipe came from Giada's Family Dinners.

2 tablespoons pine nuts
1 tablespoon extra virgin olive oil
2 onions, thinly sliced
2 bunches swiss chard, trimmed and chopped (about 14 cups)
4 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes with juice
1/4 cup dry white wine
1/4 teaspoon crushed dried red pepper flakes
salt and pepper
8 ounces whole wheat spaghetti
1/4 cup pitted kalamata olive, coarsely chopped
2 tablespoons freshly grated pecorino cheese

Steps:

  • Preheat oven to 300 degrees. Place the pine nuts on a heavy baking sheet or in a pie tin. Toast nuts in the oven, stirring occasionally to ensure they brown evenly for about 10 minutes or until they are brown. Set the nuts aside.
  • Heat the oil in a large, heavy frying pan over medium-high heat. Add the onions and saute until tender, about 8 minutes. Add the chard and saute until it wilts, about 2 minutes. Add the garlic and saute until fragrant, about 1 minute. Stir in the tomatoes with their juice, the wine, and the red pepper flakes. Bring to a boil. Decrease the heat to medium-low, cover, and simmer, stirring occasionally, until the tomatoes begin to break down and the chard is very tender, about 5 minutes. Season the chard mixture to taste with salt and pepper.
  • While performing step 2, bring a large pot of salted water to a boil. Add the spaghetti and cook, stirring often to prevent the pasta from sticking together, until tender but still firm to the bite, about 8 minutes. Drain. Add the spaghetti to the chard mixture and toss to combine.
  • Transfer the pasta to bowls; sprinkle with pine nuts, olives, and cheese on top and serve.

This is one of my family's favorite things that I make. Sage,Thyme, Onions,Tomatoes and Swiss cheese make this a very savory and tasty appetizer. It's very simple and can be tweaked with other additions if you like. I try to buy a few baguettes at a time so I can slice them all up and place them in zip lock baggies and freeze.Then whenever I have tomatoes onions and cheese on hand, I can take out the bread,defrost, and put this quick appetizer together in a matter of minutes.

1 baguette, sliced into 1/2 inch rounds
3 -4 roma tomatoes, sliced into rounds (enough for the rounds)
1 onion, sliced into rings
thyme
swiss cheese cut into small rectangular pieces that will fit the French baguette
sage leaf
olive oil
salt
pepper

Steps:

  • Place your sliced onions into a skillet with a little bit of olive oil, salt, pepper and saute them until they are nicely caramelized. Set them aside when done.
  • Arrange your sliced baguette's onto a baking sheet.
  • Place the sliced Roma Tomatoes on top of baguettes.
  • Now place the caramelized onions on top of the tomatoes.
  • Sprinkle a little bit of Thyme onto the onions.
  • Now the Swiss Cheese on top.
  • Place 1 Sage leaf on top of the Swiss Cheese.
  • Drizzle Olive Oil over all of the assembled baguettes.
  • Bake in preheated 350 degree oven for 8-10 minutes until cheese is brown and bubbly or place under broiler for a few minutes.
  • When done sprinkle a little salt and pepper over it all and enjoy.
