2 cups dry white beans
water
1 cup olive oil (or vegetable oil)
4 onions, chopped
2 teaspoons paprika
2 teaspoons salt
1/4 teaspoon dried thyme
1/2 cup vinegar

Steps:

  • Soak beans overnight in cold water.
  • Drain.
  • Add fresh water to cover.
  • Bring to a boil, reduce heat, and simmer for 1 1/2 hours, or until tender.
  • Drain.
  • Heat oil in a saucepan.
  • Add onions and saute 10 minutes, stirring frequently.
  • Add beans, paprika, salt, thyme and vinegar.
  • Cook over low heat for 15 minutes, stirring occasionally.
  • Serve hot or cold.

My Uncle Bill was the best cook ever! Well, that's what I though while growing up anyways. He used to make what HE called a "Bulgarian stew", and being he was from Bulgaria maybe it truly was. One thing it is for sure is delicious. This is perfect for a cold day and goes great with baked potatoes and his "Bulgarian Salad". Also, make sure you have some fresh Italian or French bread to sop up the juice in the bottom of the bowl...MMMMM good!

1 lb boneless pork, either sliced in strips or cubed
2 tablespoons olive oil
1 small onion
1 small green bell peppers or 1 small other color bell pepper
1 (28 ounce) can tomato sauce
3 -4 cups water
2 (14 1/2 ounce) cans Italian cut green beans, rinsed and drained.
2 (15 1/2 ounce) cans great northern beans, rinsed and drained.
1 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon parsley
1/4 teaspoon black pepper
1 chicken bouillon cube
2 tablespoons lemon juice

Steps:

  • Add olive oil, pork, peppers and onions in a large pot and stir fry until pork is done, stirring frequently.
  • Add tomato sauce and 2 cans of water (approximately 3-4 cups).
  • Add all spices, lemon juice, and bouillon cube and stir.
  • Bring to a boil.
  • Add green beans and northern beans and stir.
  • Lower heat to low, cover with lid and simmer for 2 hours stirring often in between.

1/3 cup vegetable oil
4 cups chopped onions
10 garlic cloves, minced
8 bay leaves
3 1/2 pounds boneless beef chuck, cut into 1 1/2-inch cubes
3 tablespoons sweet Hungarian paprika
1 tablespoon grated lemon peel
1 teaspoon dried summer savory
1/2 teaspoon cayenne pepper
3 cups beef stock or canned broth
1/3 cup dry red wine
1 tablespoon butter, room temperature
1 tablespoon all purpose flour
12 ounces egg noodles
1/4 cup chopped parsley

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions, garlic and bay leaves. Sauté until onions are golden, about 15 minutes. Sprinkle meat with salt and pepper. Add to pot. Add paprika, lemon peel, savory and cayenne pepper; stir until meat is coated. Add stock and wine. Bring to boil. Reduce heat, cover and simmer until meat is very tender, stirring occasionally, about 1 hour 30 minutes.
  • Using slotted spoon, transfer meat to bowl. Mix butter and flour in small bowl until smooth paste forms. Add to cooking liquid in pot, whisking constantly. Simmer until cooking liquid thickens to sauce consistency, stirring frequently, about 8 minutes. Season sauce with salt and pepper. Return meat to sauce. (Can be made 1 day ahead. Cover; chill.)
  • Cook noodles in large pot of boiling salted water until tender but still firm to bite. Drain. TRansfer to large bowl.
  • Bring stew to simmer. Spoon over noodles. Sprinkle with parsley and serve.

½ (15 ounce) can black beans, rinsed and drained
1 onion, diced
¼ pound smoked ham, diced
¼ pound calabresa (Portuguese smoked sausage), cut into 1/4-inch slices
4 cloves garlic, minced, divided
1 ½ teaspoons salt
1 tablespoon ground cumin
½ teaspoon ground black pepper
1 bay leaf
1 ½ teaspoons olive oil
4 leaves collard greens, cut into fine ribbons, or to taste
1 ½ cups cassava flour
1 ½ teaspoons butter, or to taste
4 cups cooked white rice
4 oranges, cut in wedges, or as desired
¼ cup coarsely chopped cilantro

Steps:

  • Combine beans, onion, ham, calabresa, 3 cloves garlic, salt, cumin, black pepper, and bay leaf in a pressure cooker; cover with water to fill line.
  • Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Cook at high pressure until regulator is gently rocking, 5 to 7 minutes. Reduce pressure to low. Cook, adding water halfway if needed, until beans are tender and water is reduced to your liking, about 1 hour.
  • Turn off heat. Let pressure release naturally according to manufacturer's instructions, about 5 minutes. Unlock lid and remove. Let feijoada cool until ready to serve.
  • Heat olive oil in a saucepan over medium-high heat. Saute remaining 1 clove garlic and collard greens until just tender, about 2 minutes.
  • Place cassava flour in a skillet over medium-high heat. Cook and stir until toasted, about 3 minutes. Stir in butter.
  • Serve feijoada with the collards-garlic mixture, toasted cassava flour, rice, orange wedges, and cilantro.

I usually go through the tedious process of shelling and skinning fava beans to make this robust stew. But if fava beans aren't available in local markets, use frozen skinned favas instead.

3 tablespoons extra virgin olive oil, plus additional for drizzling
2 medium onions, chopped
6 garlic cloves, minced
1/4 cup chopped fresh parsley
1/4 cup chopped cilantro
Salt
1 (14-ounce) can chopped tomatoes, with liquid
1 pound frozen shelled and skinned fava beans, or 2 pounds fresh favas, shelled and skinned
2 tablespoons tomato paste
3/4 teaspoon cinnamon
1 tablespoon paprika
1/4 to 1/2 teaspoon cayenne (to taste)
Freshly ground pepper
1 cup coarse bulgur

Steps:

  • In a large, lidded skillet or Dutch oven, heat the olive oil over medium heat. Add the onions. Cook, stirring, until tender, about five minutes. Add the garlic, half the parsley, half the cilantro and salt to taste. Continue to cook for another minute or two, stirring. Add the tomatoes, and cook, stirring often, for 10 to 15 minutes until the tomatoes have cooked down and smell fragrant.
  • Add the fava beans, tomato paste, cinnamon, paprika, cayenne and 2 cups water, or enough to just cover the vegetables, and bring to a simmer. Simmer 30 minutes or until the favas are tender and the stew very fragrant. Stir in the remaining parsley and cilantro, grind in some pepper and taste and adjust salt.
  • While the stew is simmering, reconstitute the bulgur. Bring 2 cups water to a boil in a medium saucepan. Add the bulgur and salt to taste, reduce the heat, cover and simmer 20 minutes or until the water is absorbed. Remove from the heat and uncover. Place a clean dish towel over the pan, then replace the lid. Allow to sit undisturbed for 10 minutes. Alternatively, place the bulgur in a medium bowl with salt to taste, and cover with 2 cups hot or boiling water. Allow to sit for 20 to 25 minutes until most of the water is absorbed. Drain through a strainer, and squeeze out the water.
  • Spoon bulgur into wide soup bowls, and top with the fava bean stew. Drizzle on some olive oil, and serve.
