1 teaspoon lemon juice

Steps:

  • Melt the butter in a small saucepan over medium heat. Stir in the shallot; cook until the shallot has softened and turned translucent, about 3 minutes. Pour in the wine, cream, chicken broth, and lemon juice. Simmer until the liquid has reduced by half, about 10 minutes. Stir in the rosemary, season to taste with salt.

2 tablespoons dry white wine
1/4 teaspoon fresh ground pepper

Steps:

  • Combine shallots and wine in a small saucepan. Boil, and cook until liquid evaporates being careful not to burn shallots. Remove from heat and allow to cool about 3 minutes, stirring occasionally.
  • Add butter and olive oil to saucepan and whisk until it becomes thickened. If the pan is too hot the butter will curdle. Serve.

This hearty roast dinner accompaniment is flavoured with cloves, bay leaves and nutmeg- great with chicken or turkey and smothered in gravy

25g butter
140g small shallot , quartered
6 cloves
2 bay leaves
600ml whole milk
100g crustless white bread (ideally cut from a loaf), cubed
150ml double cream
just over ½ nutmeg

Steps:

  • Melt the butter in a deep non-stick pan. Add the shallots, cloves and bay leaves, and gently cook for 10 mins over a low heat until the shallots are soft and colouring a little. Pour in the milk, then part-cover the pan and leave to simmer on a very low heat for 10 mins.
  • Remove the cloves, then add the bread and cream to the shallot mixture. Grate in half the nutmeg, then cook for 5 mins, or until the bread absorbs the milk and starts to break down a little but still has a texture. Can be made 1 day ahead (you may need to thin with a little milk). Grate over the remaining nutmeg to serve.

This bread sauce has flavour layered up from the very start ,with almost-melting shallots, herbs and spices

50g butter
1 tbsp olive oil
10 shallots , finely sliced (see tip, below)
6 cloves
3 thyme sprigs
1 bay leaf , plus extra to serve
600ml full-fat milk
pinch white pepper
100g fresh white breadcrumbs , from a good-quality loaf
5 tbsp single or double cream , plus more to serve, if you like
¼ tsp freshly grated nutmeg , or to taste

Steps:

  • Heat the butter and oil in a pan, then add the shallots, cloves, thyme and bay and cook very, very gently for 15 mins until soft, translucent and pale golden.
  • Remove the cloves, add the milk and pepper, then bring to a gentle simmer for 10 mins. Stir in the breadcrumbs, give it another 5 mins or so over a very low heat until the bread has plumped up nicely, then stir in the cream and nutmeg. Fish out the stalks from the thyme - the leaves will have fallen off. Season to taste. To serve, grate over a little more nutmeg, drizzle with a little more cream and decorate with a bay leaf.

1 pint fish stock
4 ounces unsalted butter, cut into small pieces
4 (6 ounce) halibut steaks
1 tablespoon Pernod
4 shallots, chopped finely
salt and pepper
4 fluid ounces white wine
1 tablespoon white wine vinegar

Steps:

  • Place the stock in a wide shallow pan and bring to a simmer. Slide in the fish, cover and poach for 6-8 minutes until the fish is tender. Remove from the heat and keep the fish warm in the liquid while preparing the sauce.
  • Place the shallots in a small pan with the wine vinegar. Boil until only a tablespoon of liquid remains. Remove the pan from the heat. Add the butter one piece at a time, whisking constantly to make a glossy sauce. If the sauce becomes too thick, return to the heat briefly. Add the Pernod®, salt and pepper, and a tablespoon of fish cooking liquid.
  • Lift the fish from the stock and transfer to warmed dinner plates. Spoon the sauce over the top and serve.

Steps:

  • In a skillet melt the 1 tbsp butter,cook shallots 2-3 minutes or until translucent.
  • Set aside.
  • In a large mixing bowl,stir together 2 cups of the flour,yeast and sage,set aside.
  • Heat and stir water,butter,sugar and salt just until warm (120-130) and butter almost melts.
  • Add shallots and water mixture to flour mixture.
  • Beat with electric mixer on low speed 30 seconds,scraping bowl.
  • Beat on high speed 3 minutes.
  • Stir in as much of the remaning flour as you can.
  • Turn dough out onto lightly floured surface.
  • Knead in enough of the remaning flour to make a moderately soft dough that is smooth and elastic.
  • Shape into a ball.
  • Place dough in a lightly greased bowl,turning once.
  • Cover and let rise in warm place until double,about 1 hour.
  • Punch dough down.
  • Turn dough onto lightly floured surface.
  • Divide in half.
  • Cover,let rest 10 minutes.
  • Grease 2 baking sheets,set adide.
  • Shape each half of the dough into a 6 inch round loaf,tucking edged beneath.
  • With a sharp knife make 3 wvwnly spaced 3 inch cuts toward center of rounds.
  • Place rounds on prepared baking sheets.
  • Cover and let rise in warm place until nearly double,30-40 minutes.
  • Bake in 375 oven 40 minutes.
