STIR-FRIED CABBAGE, TOFU AND RED PEPPER



Stir-Fried Cabbage, Tofu and Red Pepper image

Start cooking the rice or quinoa that you will serve this with, prep your vegetables and make the stir-fry. The prep is the most time-consuming but there aren't too many ingredients. You can be sitting down about 35 minutes after you begin.

12 ounces firm tofu
1/2 cup chicken stock or vegetable stock
2 tablespoons soy sauce
1/2 teaspoon sugar
1 tablespoon rice wine vinegar or dry sherry
2 teaspoons sesame oil
1 teaspoon cornstarch
2 tablespoons peanut oil, rice bran oil or grape seed oil
1 tablespoon minced ginger
2 large garlic cloves, minced
1/2 medium cabbage, chopped (about 1/2 pound, 5 cups chopped)
1 red pepper, cut in 2-inch long julienne
Salt and freshly ground pepper to taste
1/4 cup broken walnuts
Cooked rice or quinoa for serving

Steps:

  • Cut the tofu into dominoes and drain between paper towels. In a small bowl or measuring cup combine the stock, 1 tablespoon of the soy sauce, the sugar, rice wine or sherry, and the sesame oil. Remove 1 tablespoon to a small bowl and stir in the cornstarch. Stir until it has dissolved. Have all the ingredients within arm's length of your pan.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the tofu and stir-fry until golden, about 3 minutes. Add 1 tablespoon soy sauce (or to taste), toss together for a few seconds, and transfer to a plate.
  • Swirl in the remaining oil, add the garlic and ginger to the wok and stir-fry for no more than 10 seconds. Add the red pepper and stir-fry for 1 minute, or until it begins to soften, and add the cabbage and walnuts. Stir-fry for 1 minute, add salt and pepper to taste, and stir-fry for another 1 to 2 minutes, until crisp-tender. Return the tofu to the wok, stir in the walnuts and the stock/soy sauce mixture and stir-fry for another minute, until it has just about evaporated. Stir in the cornstarch mixture and stir-fry until the ingredients are lightly glazed. Remove from the heat and serve with quinoa or rice.

Finnish Cabbage and Tofu over Rice image

This is from "Sundays at Moosewood," with a few minor changes. The recipe as written calls for pressed tofu, but I like to freeze the tofu instead. When it's thawed and the moisture has been squeezed out, the texture changes to chewy and firm, rather than slippery and mushy. I always use the one-pound blocks stored in water, rather than the silken type.

16 ounces tofu, pressed
1 tablespoon vegetable oil
2 1/2 tablespoons tamari soy sauce
2 1/2 tablespoons water
1 tablespoon vegetarian worcestershire sauce
1/2 teaspoon ground allspice
1 medium onion, chopped
2 tablespoons vegetable oil
4 cups shredded savoy cabbage (about 1/2 medium head)
2 tablespoons tomato paste
1 tablespoon vinegar
1 teaspoon dried dill
1 teaspoon salt
1/2 teaspoon sweet Hungarian paprika
1/4 cup water
black pepper, to taste
cooked rice or mashed potatoes
1 dill pickle, minced
sour cream

Steps:

  • To prepare the tofu:.
  • Preheat the oven to 375°F Combine the marinade ingredients in a 9-inch baking dish. Cut the tofu into cubes or triangles. Place the tofu in the baking dish with the marinade.
  • Bake, turning the tofu two or three times during the baking. Bake for 35-45 minutes.
  • To prepare the cabbage:.
  • While the tofu is baking, saute the onion in the oil in a large heavy skillet. When the onion is almost translucent, add the cabbage. Stirring occasionally, saute until the cabbage is somewhat reduced, about 5 minutes, but don't let the onion brown.
  • Combine the sauce ingredients and pour the over the cabbage, stirring to coat. Remove from the heat. Cover the skillet with a lid or foil, and bake in a 375 F oven for 30 minutes.
  • Serve the cabbage over rice or mashed potatoes (barley or egg noodles could be used instead). Top with minced pickle and baked tofu. Add a spoonful of sour cream, if desired.

Stir-Fried Tofu With Cabbage, Carrots and Red Peppers image

This is a beautiful stir-fry using vegetables that are easy to keep on hand, as they all stay fresh for more than a week in the refrigerator.

Number Of Ingredients 14

12 ounces firm tofu, sliced about 1/4 inch thick
1 tablespoon low-sodium soy sauce (more to taste)
1 tablespoon Shao Hsing rice wine or dry sherry
2 teaspoons dark Asian sesame oil
1/4 teaspoon salt (more to taste)
1/4 teaspoon ground pepper, preferably white pepper
1/4 teaspoon sugar
2 tablespoons peanut oil or canola oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 medium carrot, cut in 1/4-by-2-inch matchsticks (about 1 cup julienne)
1 medium red bell pepper, cut in 1/4-by-2-inch matchsticks (about 1 cup julienne)
1 pound cabbage, cored and shredded
1/4 cup coarsely chopped cilantro (optional)

Steps:

  • Place the tofu dominoes on paper towels. Place another paper towel on top and prepare the remaining ingredients.
  • In a small bowl or measuring cup combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm's length of your pan.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the tofu. Reduce the heat to medium and stir-fry 1 to 2 minutes, until the tofu begins to brown. Add the garlic and ginger and stir-fry for no more than 10 seconds.
  • Swirl in the remaining oil and add the carrots, red pepper and cabbage. Turn the heat to high and stir-fry for 1 minute, or until the vegetables begin to soften. Add the salt, pepper and sugar, toss together and add the soy sauce mixture. Stir-fry for 1 to 2 minutes, until the vegetables are crisp-tender. Stir in the cilantro, and serve with grains.

  • Crispy tofu: Cut the tofu into dominoes and press between paper towels or dish cloth. Heat 1 tablespoon oil in a pan, add tofu and cook for 5 – 8 minutes on each side, until lightly golden in color. Season with salt and garlic powder (or garlic salt). Transfer tofu to a small plate.
  • Stir fry: Heat 14 inch wok or large skillet over medium- high heat, add 1 remaining tablespoon of oil, add garlic, ginger and red pepper flakes and cook for 1 minute. Add cabbage, red bell pepper, carrots, green onions, tamari, rice vinegar and water, stir fry for 5 – 7 minutes, or until cabbage wilts and veggies soften. Add the tofu to the cabbage stir fry 2 minutes before done to warm through. Taste for seasoning, adding salt to taste.

  • Dry tofu well between several layers of paper towels. Cut into approximate 1/2-inch cubes and dry again. Place in a mixing bowl and sprinkle with cornstarch, salt and pepper. Toss gently to coat evenly.
  • Warm 2 tablespoons of the oil over medium-high heat in a 12-inch nonstick skillet. Add tofu in a single layer and cook until golden brown on the bottom, then stir once in a while and continue cooking until most sides are golden. This will take about 10 minutes total. Slide tofu out onto a plate.
  • In the same pan, heat the remaining tablespoon oil. Add bell pepper and mushrooms and cook for a few minutes, stirring only occasionally, until mushrooms have browned in spots and peppers are slightly tender. Add cabbage, tamari and vinegar and cook, stirring, until cabbage is tender and reduced in volume by at least half, which will take only a couple of minutes.
  • There will be some tasty liquid at the bottom of the pan. Depending on your sauce preferences, you can remove the vegetables from the skillet with tongs or a strainer to avoid the liquid, go with the flow and serve it as-is, or remove the vegetables and then simmer the liquid down into a thicker sauce. (The cornstarch from the tofu will aid this process.)
