2 grapefruits
3 oranges
4 lemons
1 1/2 cups sugar

Steps:

  • With a sharp paring knife, slice off ends of grapefruits, oranges, or lemons. Following curve of fruit, cut away outermost peel, leaving most of the white pith on fruit. Slice peel lengthwise into 1/4-inch-wide strips.
  • In a medium pot of boiling water, cook peel until tender, about 10 minutes. With a slotted spoon, transfer peel to a wire rack set over a rimmed baking sheet; spread in a single layer to dry slightly, about 15 minutes.
  • In a medium saucepan, bring 1 cup sugar and 1 cup water to a boil over high, stirring to dissolve sugar. Add peel and boil until it turns translucent and syrup thickens, 8 to 10 minutes. With slotted spoon, transfer peel to wire rack, separating the pieces as needed.
  • Let peel dry 1 hour. Toss with 1/2 cup sugar to coat.

Candied peel is a brilliant ingredient to have around at Easter. This thrifty recipe will take your hot cross buns, Simnel cakes and other biscuits and bakes to the next level. Use the peel or squeezed rinds of any citrus fruit you have to hand; lemons, oranges, or grapefruits all work well. Plus, it's a good way to reduce your food waste - bonus!

250 g caster sugar, plus extra for dusting

Steps:

  • Add the fruit rinds to a large saucepan and cover with water. Make sure they are totally submerged - a plate can help to weigh them down.
  • Bring everything to the boil, then reduce to a simmer and cook for 30 minutes, or until the rinds are just starting to soften.
  • Drain and set the fruit aside to cool. Once cooled, use a spoon to remove any remaining flesh or white pith from the peel and discard.
  • In a medium saucepan, combine the caster sugar with 250ml of water and bring to a simmer over a medium heat, until the sugar is dissolved and the liquid is gently bubbling.
  • Add the rinds, stir to combine, then reduce the heat to low and simmer for 25 minutes, or until the rinds are soft and translucent. Then take the pan off the heat and leave to cool in the syrup.
  • Preheat the oven to the lowest setting. Using tongs, transfer the rinds to a wire rack set over a baking tray, then place in the oven for 1 to 2 hours, so they dry out but are still malleable.
  • Remove from the oven and toss in a little caster sugar. Store in an airtight container in the fridge and chop as needed. It'll last for up to six weeks in the fridge.

  • Cut lemons into slices about 1/4 inch thick and remove the fruit pulp. Cut the rings in half so the peels are in long strips.

2 large oranges, 1/4 inch of top and bottom cut off
4 cups sugar, divided
3 cups water

  • Cut peel on each orange into 4 vertical segments. Remove each segment (including white pith) in 1 piece. Cut into 1/4-inch-wide strips. Cook in large pot of boiling water 15 minutes; drain, rinse, and drain again.
  • Bring 3 cups sugar and 3 cups water to boil in medium saucepan over medium heat, stirring to dissolve sugar. Add peel. Return to boil. Reduce heat; simmer until peel is very soft, about 45 minutes. Drain.
  • Toss peel and 1 cup sugar on rimmed baking sheet, separating strips. Lift peel from sugar; transfer to sheet of foil. Let stand until coating is dry, 1 to 2 days. DO AHEAD: Wrap and freeze up to 2 months.

1 large navel orange
3/4 cup sugar
1/2 cup water
1/2 cup semisweet chocolate chips

Steps:

  • Using a vegetable peeler, cut the orange part of the peel from the stem end of the orange down to the navel end, forming long 3/4 to 1-inch-wide strips. Bring a heavy small saucepan of water to a boil. Add the peels and cook for 1 minute. Drain and then rinse the peels under cold water. Repeat cooking the peels in the saucepan with fresh boiling water and rinsing under cold water.
  • Stir the sugar and 1/2 cup of fresh water in a heavy small saucepan over medium-high heat until the sugar dissolves. Bring to a boil. Add the orange peels and simmer over medium-low heat until tender, about 15 minutes. Using tongs, transfer the peels to a sheet of parchment paper to dry slightly, about 1 hour.
  • Line a small baking sheet with parchment paper. Stir the chocolate in a small bowl set over a saucepan of simmering water until melted and smooth. Dip 1 1/2-inches of each candied orange peel into the chocolate then place them on the prepared baking sheet and refrigerate until the chocolate is set, about 15 minutes.

4 large unwaxed oranges, or 2 oranges and 2 lemons
big bag of granulated sugar
100g bar of dark chocolate (or gluten-free alternative), optional

Steps:

  • Cut the fruit into 8 wedges, then cut out the flesh, leaving about 5mm thickness of peel and pith. Cut each wedge into 3-4 strips.
  • Put the peel in a pan and cover with cold water. Bring to the boil, then simmer for 5 mins. Drain, return to the pan and re-cover with fresh water. Bring to the boil, then simmer for 30 mins.
  • Set a sieve over a bowl and drain the peel, reserving the cooking water. Add 100g sugar to each 100ml water you have. Pour into a pan and gently heat, stirring to dissolve the sugar. Add the peel and simmer for 30 mins until the peel is translucent and soft. Leave to cool in the syrup, then remove with a slotted spoon and arrange in 1 layer on a wire rack set over a baking sheet. Put in the oven at the lowest setting for 30 mins to dry.
  • Sprinkle a layer of sugar over a sheet of baking parchment. Toss the strips of peel in the sugar, a few at a time, then spread out and leave for 1 hr or so to air-dry.
  • Pack the peel into an airtight storage jar or rigid container lined with baking parchment. Will keep for 6-8 weeks in a cool, dry place.
  • To make into a delicious gift, melt the chocolate in a small bowl. Dip the candied orange peel into the chocolate to half-coat them, shaking off the excess. Put them on baking parchment to set, then pack into small cellophane bags tied with ribbon or pretty kitchen string.

Peels from 2 organic lemons
2 cups water
1 cup granulated sugar

Steps:

  • Wash the lemons and dry them off.
  • Cut off the ends, then slice down the lemon lengthwise to divide the outer peel into quarters. Now use your fingers to gently peel the lemons.
  • Cut the peeled-off peels into fine strips and place them in a small-medium pot. Add around 1 cup of water so that the lemon peels are just covered and then bring the water to a boil. Boil the lemon peels for around 15 minutes while stirring them occasionally.
  • Pour the contents of the pot through a strainer to drain the water and to capture the lemon peels. Rinse the pot and rinse the lemon peels under some water to cleanse them of some of the bitterness.
  • Place the lemon peels back in the pot, add 1 cup of water and 1 cup of sugar. Bring the mixture to a low simmer. Let the lemon peels simmer for around 1 hour 15 minutes, stirring occasionally until the water-sugar mixture becomes a thicker syrup. The lemon peels should also look slightly translucent.
  • Remove the lemon peels from the pot and place them on a cooling rack. It's a good idea to put some parchment paper underneath the cooling rack to catch the sticky syrup drips. Separate the peels that are stuck together with two forks and let the lemon peels dry for around 24 hours until they are no longer sticky to the touch.
  • Either place the strips into an airtight container for storage or cut them into small cubes if you plan on using them for baking (for example in Gingerbread cookies or German Stollen).

2 grapefruits (use ONE of the three!) or 3 -4 oranges (use ONE of the three!)
1 1/2 cups sugar, plus some for tossing
1 1/2 cups water
2 tablespoons corn syrup (optional)

  • Cut fruit into quarters; peel the rind (peel!) off. Cut peel into desired shape; make all the pieces the same so they cook the same.
  • Put peel piece into a saucepan, cover with water, bring to boil, drain and repeat.
  • Repeat step #2 two more times.
  • After the third boil, leave peel in the strainer.
  • Put 1 1/2 cups of sugar, 1 1/2 cups of water into the saucepan and 2 tablespoons of corn syrup into the sauce pan. Bring saucepan to a simmer on medium heat, add peel. If you're not using corn syrup, you will need to put the lid on the pan to simmer it for 6 minutes before continuing. Let it cook, uncovered, at a rolling simmer until it is done. For hard-ish candy, cook until the liquid is almost gone, and for chewy candy cook until only 3-5 spoonfuls of liquid is left.
  • Put peels into strainer and let cool until you can touch it.
  • Put peels into a bowl, add some sugar, and toss them together. Toss every 15 minutes until really cool and the candy is coated with sugar.
  • For best results, spread the candy on racks to dry. For harder candy, cook it and dry it for longer, for soft and almost chewy candy, cook and dry it less.
  • Store candy in airtight containers. If you store them in the fridge they will seem very hard- but only because they are cold!

6 lemons, scrubbed
1/4 teaspoon baking soda
5 1/4 cups sugar

Steps:

  • Line an 11-by-17-inch baking pan with parchment paper; place a cooling rack on top; set aside. Cut each lemon in half, and scrape out pulp. Roughly chop the pulp; set aside. Cut the rind lengthwise into 1/4-inch-wide strips.
  • Fill a medium saucepan halfway with water. Bring to a boil over medium heat. Add baking soda and lemon rind; simmer gently for 5 minutes. Drain, and rinse under cold water.
  • In a medium saucepan, combine 2 1/2 cups sugar and 2 cups water; bring to a boil over medium-high heat. Stir until sugar has completely dissolved, about 5 minutes. Add lemon rind. Simmer 30 minutes.
  • Meanwhile, bring 2 1/2 cups sugar and 2 cups water to a simmer in another saucepan. Stir until sugar dissolves. Using a slotted spoon, transfer rind from first pot into second pot; simmer rind until translucent, about 1 hour. Remove from syrup, transfer to cooling rack set over baking sheet. When rind is cool but tacky to the touch, about 10 minutes, roll rinds in remaining 1/4 cup sugar. Store in an airtight container up to 1 month.

These peels add a wonderful, bright flavor to our Lemon Ice Cream, but this technique can also be used to make candied lime or grapefruit peel. The recipe can be doubled or tripled to make a bigger batch. Try dipping the peels in bittersweet chocolate for a delicious treat. Because you'll be eating the peel, it's especially important to use an organic lemon (which won't have been sprayed with pesticides) in this recipe. If you must use a regular lemon, scrub it vigorously to clean the outside as thoroughly as possible.

  • Measure 2 cups of the sugar into the pan and add 1 cup water, whisking until the sugar dissolves. Add the peels and bring to a boil over medium heat. Reduce the heat to medium-low and simmer, uncovered, until the peels are tender and translucent, 10 to 15 minutes. Drain the peels and let cool.
  • Measure the remaining 1/2 cup sugar into a medium bowl and add the peels. Toss to coat. Using a fork or your fingers, remove the peels one at time, gently shaking each to remove excess sugar. Store in an airtight container. The peels will keep for several weeks.

  • Wash the oranges and prepare a baking sheet. Get out 4 ripe oranges (such as navals) and wash them thoroughly. Lay a sheet of parchment paper on a baking sheet and set a wire cooling rack on the pan.
  • Peel the oranges and scrape the pith. Take a vegetable peeler and strip away the orange peel from each orange. Try to get large pieces of orange peel. Lay the pieces on a cutting board and turn them so the cut side is facing up and you can see the pith.

  • Shake the peels and dry them overnight. Shake the peels a little to remove extra sugar that's crystallized on the peels. Keep the peels on the cooling rack and lay paper towels or a kitchen towel over them.
  • Use or store the candied orange peels. You can eat the candied orange peel once it's dried and become a little chewy. Store the leftover peels in a glass jar with a lid or an airtight container for up to 3 months.

  • Score grapefruit, oranges, and lemons through peel from top to bottom in 6 sections for grapefruit and 4 for oranges and lemons (don't cut into fruit). Pull off strips of peel with your fingers. Slide a small, sharp knife along inside of peels to remove excess membrane so peels are about 1/4 in. thick. Cut peels lengthwise into strips about 1/2 in. wide in center and tapered on ends.
  • Put peels in a 3- to 4-qt. saucepan and add cold water to cover. Bring to a boil, then drain. Repeat twice more.
  • Refill pan with 2 1/2 cups water and 2 1/2 cups sugar; bring to a boil, making sure that sugar dissolves. Add peels and bring to a boil, then reduce heat and simmer gently, stirring occasionally, until peels turn translucent and syrup begins to form bigger bubbles, about 1 1/2 hours.
  • Drain peels, saving syrup for other uses (such as topping pancakes) if you like. Spread peels on a nonreactive cooling rack set on a parchment-lined baking sheet. Allow peels to dry completely, about 2-3 hours.

  • Slice both ends of the citrus fruits. Cut the peel on each each into 4 or more vertical segments, depending on the size of the fruit. Peel off each segment of rind. (You can remove a little of the white pith, though not necessary. The pith is bitter but the blanching process below will help reduce the bitterness. Note that if you remove the white pith, the thinner the peels are the harder and more leathery they will be when they’re candied.) Slice the peels into 1/4 inch wide strips. (Keep the peeled citrus for eating, cooking, juicing, etc)
  • Boil the peels in a pot of water for 15 minutes. Drain the peels in a colander, rinse and then drain again. Discard the water from the pot.Repeat this process one or two more times to reduce the bitter flavor.
  • Add the 1 cup of fresh water and the sugar to the pot and bring it to a boil. Boil it for a couple of minutes until the sugar is dissolved. Add the citrus peels, reduce the heat to low and simmer for 45-60 minutes, stirring occasionally, until the peels become translucent and the syrup becomes lightly syrupy (on a candy thermometer this will be be approximately soft ball stage).
  • Use a slotted spoon to remove a few of the peels at a time and let the excess syrup drip off for a few seconds. Place the hot, wet peels in a bowl of sugar or a ziplock bag with sugar in it and toss/shake to coat.

  • With kitchen scissors, cut the cooled fruit peel into strips about 1/4 inch wide. In a saucepan combine the 2 cups sugar and the 1/2 cup water. Cook over medium-high heat to boiling, stirring constantly with a wooden spoon to dissolve sugar. This should take 5 to 7 minutes. Carefully add the fruit peel strips to the saucepan.
