3 tablespoons cider vinegar
3 large eggs
⅔ cup mayonnaise, or more to taste
2 teaspoons salt
1 teaspoon dry mustard

2 tablespoons hot water, or as needed
3 stalks celery, diced
1 red bell pepper, seeded and diced
1 onion, finely diced
3 green onions, thinly sliced
¼ cup diced dill pickles
2 tablespoons chopped fresh parsley
1 teaspoon paprika

Steps:

  • Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low; simmer until tender, about 25 minutes. Drain. Cut potatoes into 1-inch cubes, leaving skin on. Drizzle potatoes with vinegar while warm; set aside to cool completely, about 20 minutes.
  • Place eggs in a saucepan, cover with water, and bring to a boil. Remove from heat; let eggs stand in hot water for 15 minutes. Remove eggs from hot water; cool under cold running water. Peel eggs; cut 2 eggs into 1/4-inch dice. Slice the remaining egg into 1/4-inch slices; set aside for garnish.
  • Stir together the 2 diced eggs, mayonnaise, salt, dry mustard, celery seed, and black pepper in a large bowl; stir in hot water. Stir potatoes, celery, red bell pepper, onion, green onions, pickles, and parsley into mayonnaise mixture; cover and chill in the refrigerator for 30 minutes. Sprinkle salad with paprika and arrange reserved egg slices on top before serving.

It's a plain and simple potato salad, but it's delicious! Add pimentos, olives, or green peppers depending on what you like in your potato salad.

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.

8 large new potatoes, cut into 1/2 inch cubes
1 (10 ounce) bottle fat free ranch dressing
1/2 cup lime juice
1 tablespoon lime zest
2 jalapeno peppers, finely chopped (seeds and stems removed)
1 medium jicama, peeled and chopped into 1/2 cubes
2 avocados
1 pint cherry tomatoes, cut in half
1/2 cup chopped fresh cilantro (more if you like the taste)
2 bunches chopped green onions

Steps:

  • Mix dressing, zest, juice and cilantro in a large bowl.
  • Boil the potatoes until tender and then drain and pour into the bowl.
  • Add the jicama and the green onions
  • Refrigerate for at least 4 hours (I chill it overnight).
  • When ready to serve, chop and add the avocados and cherry tomatoes and stir into mixture.

Steps:

  • Boil the potatoes, slice while still warm and add broth.
  • Mix vinegar with salt, pepper and sugar.
  • Sugar and salt should be dissolved before adding the oil.
  • Add marinade to the potatoes.
  • Add onions and finally the melted butter.
  • Garnish with chives or parsley.
  • If you want to add cucumber, thinly slice them and salt.
