2 cups frozen corn
2 tablespoons butter or margarine
1 medium onion, chopped (1/2 cup)
1 medium stalk celery, thinly sliced (1/2 cup)
1 jar (2 oz) diced pimientos, drained
1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
1/4 teaspoon salt
1/8 teaspoon garlic powder or 1/4 teaspoon dried minced onion

Steps:

  • Rinse frozen corn with cold water to separate; drain. In 2-quart saucepan, melt butter over medium heat. Cook corn, onion and celery in butter 10 to 12 minutes, stirring frequently, until onion is tender.
  • Stir in remaining ingredients; reduce heat. Cover and simmer 3 to 5 minutes or until corn is tender.

Adapted from Semi-Homemade on Food Network, I don't want to lose it. You can use honey too, but I like the flavour of the sugar. Do not try it with milk, it really needs the heavy cream.

4 tablespoons butter
1 (16 ounce) bag frozen corn, defrosted
3 tablespoons white sugar
1/4 cup heavy cream
1/4 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • In a large skillet over medium-high heat, melt the butter.
  • When butter is foamy add the corn stirring to coat with the butter.
  • Cook stirring frequently for 1 minute.
  • Add sugar or honey and cook for 2 minutes more.
  • Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan.
  • Add salt and pepper.
  • Cook corn until most all of the cream has absorbed about 5 minutes more.
  • Remove add serve hot.

1 (16 ounce) package frozen corn kernels
1 small white onion, chopped
1 large garlic clove, chopped
2 -4 large basil leaves, rough chopped
2 tablespoons butter
1/4 cup water
salt and pepper

Steps:

  • soften onions and garlic in a sautee pan with butter.
  • add frozen corn and 1/4 cup of water to pan and let simmer 4-5 minutes.
  • add basil leaves and salt and pepper and cook 3 minutes more or until corn in soft.

4 to 5 cups fresh corn kernels, white or yellow (from about 12 cobs), or two 16-ounce bags frozen white corn
1 stick (4 ounces) unsalted butter
1/2 cup chopped fresh mint
Salt

Steps:

  • If using frozen corn, drain between layers of paper towels until thawed, about 30 minutes.
  • In a wide skillet, melt half the butter over high heat. Add half the corn and cook, stirring often, until golden and browned (kernels may begin to pop), about 10 minutes. Stir in half the mint and sprinkle with salt. Transfer to a serving bowl. Repeat with remaining corn, butter, mint and salt.

8 large ears corn, husked
2 to 4 tablespoons crème fraîche or heavy cream
1 large shallot, finely chopped (1/4 cup)
2 tablespoons unsalted butter
1 cup water
1 teaspoon salt
1/4 teaspoon black pepper
2 to 3 tablespoons thinly sliced fresh basil

Steps:

  • Working in a large bowl, cut kernels from cobs with a sharp knife and set aside. Scrape back of knife several times against cobs to extract remaining corn pulp, scraping into a large glass measure. (You should have at least 3/4 cup of corn pulp. If not, add 2 tablespoons crème fraîche.) Transfer pulp to a blender and purée with 2 tablespoons crème fraîche until smooth.
  • Cook shallot in butter in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened, 3 to 4 minutes. Stir in kernels, then add corn purée, water, salt, and pepper and simmer, uncovered, stirring occasionally, until kernels are just tender, 3 to 4 minutes. Stir in basil to taste.
