- For crust:
- Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.
- For topping:
- Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.
- Spread onion mixture evenly over dough. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.
ROASTED APPLE, SHALLOT AND BLUE CHEESE TART
This sweet and savory apple tart is both substantial and sophisticated. The chewy, pizza-like crust is fortified with three kinds of flour. The topping is a comforting, mellow jumble of sweet roasted apples and shallots scented with thyme and zipped up with pungent blue cheese.

- Place 3/4 cup lukewarm water in a large bowl. Sprinkle yeast and sugar over water. Let stand until frothy, about 5 minutes.
- In another large bowl, whisk together both flours, cornmeal and 8 grams (1 3/4 teaspoons) salt. Make a well in center of dry ingredients; stir in yeast mixture and 1/3 cup oil until mixture is combined. If the dough seems dry, add a little more water. Turn dough out onto a lightly floured surface and knead gently until dough is smooth and elastic, about 7 to 10 minutes. Or, knead in a mixer or food processor fit with the dough blade for 3 to 5 minutes. Transfer to a lightly oiled bowl and cover loosely with plastic wrap. Allow to rest at room temperature until dough has doubled in volume, about 1 hour.
- While dough rises, heat oven to 425 degrees. In a large bowl, toss together apples, shallots, 1/4 cup oil, 2 grams ( 1/2 teaspoon) salt, the black pepper and thyme. Spread onto two large baking sheets. Roast, tossing occasionally, until mixture is tender and golden, about 30 minutes.
- Increase oven temperature to 450 degrees. Lightly oil a large rimmed baking sheet. Punch down dough and transfer to baking sheet. Using a rolling pin or your fingers, roll or stretch dough to make an even layer about 3/16-inch thick. Scatter apple-shallot mixture over crust. Scatter cheese on top. Drizzle with oil and season with flaky sea salt and black pepper. Transfer pan to oven and bake until crust is golden brown and cheese is just melted, 17 to 25 minutes. Cool slightly, then cut into squares and serve.

- In a large skillet, saute onion in oil and butter until softened. Reduce heat to medium-low; cook, uncovered, for 40 minutes or until deep golden brown, stirring occasionally. Add garlic; cook 1 minute longer. Stir in salt and pepper., Unfold each puff pastry sheet onto an ungreased baking sheet. Using a knife, score decorative lines around the edges of each pastry. Spread onion mixture to within 1/2 in. of edges. Sprinkle with cheeses and thyme., Bake at 400° for 12-15 minutes or until golden brown. Cut each tart into 12 pieces. Serve warm.

I made these up using some left over grilled steak from dinner the night before. Use a leftover steak with basic seasoning...such as salt and pepper or a soy based flavor. They are a great quick crowd pleaser that lets you get away with using leftovers.

- In a hot skillet, heat oil. Add onions and cook until brown and caramelized. Stir frequently and be careful not to burn. Add garlic and vinegar. Reduce heat to medium low and cook a few more minutes until the liquid is fully absorbed. Remove from heat.
- Stir in meat and cheese.
- In the meantime, use a rolling pin to seal the creases of the puff pastry. Use parchment paper on either side to keep from sticking instead of flour. Cut into squares in any size of your choice. I like to do small ones (about 4 inches or so). Curl up the edges slightly to make an edge. They do not need to be perfect however -- this dish looks its prettiest rustic style.
- Brush the outside edge of the pastry with the egg wash.
- Fill each pastry square the mixture.
- Bake in a 375 degree oven for about 8-12 minutes, or until browned on the edges.

- Heat butter and oil in a large saute pan over medium heat. Add onions and and stir to coat in oil. Grab a glass of wine and a magazine and plop yourself in front of the stove because you are going to be here for a while. You will cook the onions for 60 minutes total, stirring every 4-5 minutes or so. After they've cooked for 10 minutes add a pinch of salt. After they've cooked for 40 minutes add a teaspoon of sugar. After they've finished cooking for 60 minutes and are a gorgeous dark brown color, deglaze the pan with the white wine, season with salt and pepper to taste, then set aside. Preheat oven to 400 degrees. Unwrap the puff pastry and cut along the seams of each sheet, creating 6 rectangles total. Lightly flour your work surface and roll each piece into a 3.5″ x 12″ rectangle. Use a 3″ cookie cutter to make four tarts out of each rectangle. Transfer tarts to (2) parchment lined baking sheets. Combine puff pastry scraps into a ball, roll them out to the same thickness as your previous tarts and use the cookie cutter to make 10-12 more tarts. Arrange tarts on the two baking sheets about an inch apart. You will have 30-32 tarts total. Use a 2″ cookie cutter to score each tart in the center, creating a half inch wide crust. Brush the crust portion of the tart with the egg wash. Heat fig jam in a small saucepan over medium heat just until it becomes loose and spreadable. Spread a teaspoon or so of fig jam in the center of each tart. Top that with a teaspoon or so of caramelized onions. And then, you guessed it, top that with a teaspoon or so of blue cheese. Divide thyme evenly between the tarts, sprinkling a few leaves in the center of each tart. Bake tarts for 15-18 minutes or until the crust starts to get dark golden brown Remove tarts from the oven and drizzle with honey. Serve warm and enjoy! NOTES These tarts are also delicious at room temperature!

- Heat the oven to 400°F. Toss the onions, apple, and all but 1 teaspoon of the oil on a large, rimmed sheet pan. Season with salt and pepper and bake for 30 minutes, until lightly browned and soft.Meanwhile, make the pastry by combining the flour, butter, blue cheese, and a pinch of black pepper in the work bowl of a food processor. Process in pulses until the butter and cheese are uniformly cut into the flour. Add the milk and keep processing until the mixture is moist and climbs the side of the bowl. Remove from the processor and pat together into a flat disk. Roll out on a lightly floured board into a rough disk about 1/4 inch thick and about 14 inches across. Brush a sheet pan with the remaining teaspoon of oil. Place the pastry on the oiled pan and sprinkle with half of the Parmesan cheese. Mound the apple and onions in the center of the pastry and flatten into a 10-inch circle. Fold the edges over the filling some of the filling will remain exposed. Dust with the remaining Parmesan.
