BRAISED KALE WITH RED BELL PEPPER AND BACON



Braised Kale with Red Bell Pepper and Bacon image

8 ounces slab bacon, diced
1/2 onion, diced
1/2 red bell pepper, diced
Kosher salt
1 bunch kale, stemmed and cut into pieces
Pinch red pepper flakes
2 tablespoons apple cider vinegar
Freshly ground black pepper

Steps:

  • Render the bacon until crispy in a Dutch oven over medium-high heat. Remove and set aside on a paper towel-lined plate. Add the onions and bell pepper and sprinkle with salt. Stir to combine and saute until translucent, about 5 minutes. Add the kale and red pepper flakes and toss to combine. Allow the kale to wilt, about 2 minutes. Turn off the heat and toss in the apple cider vinegar. Taste and adjust the seasoning with salt and pepper.

1 clove minced garlic
1 diced red bell pepper
2 tbsp lemon juice
1½ tbsp Sriracha Hot Sauce
1 tbsp water
1 tbsp nutritional yeast
1½ tsp salt
8 oz or more to taste kale leaves

Steps:

  • Rinse cashews and soak in a jar with enough water to cover for at least 6 hours.
  • Heat olive oil in a small skillet over medium-low heat. Add garlic; cook and stir for about 1 minute until fragrant but not browned.
  • Place soaked cashews, red bell pepper, lemon juice, sriracha hot sauce, water, nutritional yeast, and salt in a blender. Scrape cooked garlic and olive oil mixture into blender. Blend for 1 to 2 minutes until smooth and creamy dressing forms.
  • Toss kale together with dressing in a large bowl until evenly coated.

2 bunches kale
1/2 cup leek, chopped
5 tablespoons olive oil
1 small onion, diced
5 garlic cloves, minced (or extruded through garlic press)
1 1/2 large red bell peppers, cut into short strips
1/2 teaspoon red pepper flakes
salt
white pepper

Steps:

  • Wash kale. Pull greens away from the stalks, discarding stalks. Shred by hand into small pieces.
  • Place kale in steamer basket, and steam until tender (approximately 10 minutes). Remove immediately from heat.
  • Heat olive oil in heavy pan over medium-high heat. When the oil is hot, add onions and leeks. Saute until onions are translucent and leeks begin to brown. Add garlic and red pepper flakes, saute for 1-2 more minutes. Add bell pepper slices, and saute until tender (approximately 4-5 minutes). Remove from heat.
  • Add kale to pan, and toss ingredients together thoroughly. Add salt and pepper to taste. Serve hot or room temperature.

This recipe was adapted from a recipe on drfuhrman.com. Its base is cashew cream, which is a delicious non-dairy alternative for cream and makes wonderful sauces. This dish freezes and reheats well but you might need to add a little water or non-dairy milk to get the creaminess back.

20 ounces kale, de-stemmed and chopped
1/2 cup raw cashews
1 cup unsweetened almond milk or 1 cup other non-dairy milk substitute
1 garlic clove
1/2 teaspoon oil (to coat pan)
1 large onion, halved, then thinly sliced
2 carrots, thinly sliced
4 mushrooms, sliced
1 (15 ounce) can low-sodium chickpeas, drained and rinsed
1/8 teaspoon crushed red pepper flakes (to taste)

Steps:

  • Remove the center stem from the kale and discard. Wash and chop kale leaves and set aside. If you don't know how to remove the stems from kale, Google: remove kale stems.
  • Place cashews, non-dairy milk and garlic in a high-powered blender and blend until smooth. Set aside.
  • Coat large covered frying pan or dutch oven (at least 5 quarts) with oil. Add onion, carrots and mushrooms and sauté for 5 minutes, or until softened, adding small amount of water if needed to prevent sticking.
  • Stir in the chickpeas. Add as much kale as will fit in the pan and small amount of water if needed. Cover and cook until wilted and soft. Continue adding kale, stirring frequently, until it is all in the pan, adding water as needed to prevent sticking. Cover and cook until kale is tender, about 10 minutes.
  • Stir in cashew sauce and crushed red pepper. Cook, uncovered for 2-3 minutes until heated through.

1 red bell pepper, roughly chopped
¼ cup roughly chopped onion
1 lemon, juiced
1 jalapeno pepper, seeded
2 cloves garlic
¾ cup water, or more as needed
½ cup nutritional yeast
1 teaspoon paprika
1 teaspoon ground turmeric
1 teaspoon dried mustard
½ teaspoon sea salt
½ teaspoon freshly cracked black pepper
2 bunches curly kale, stemmed

Steps:

  • Place cashews in a bowl. Cover with water; let soak for at least 1 hour. Drain and rinse.
  • Transfer cashews to a blender; blend until finely chopped, scraping the sides of the bowl periodically. Add red bell pepper, onion, lemon juice, jalapeno pepper, and garlic; blend until well chopped. Scrape the sides of the bowl; add 3/4 cup water, nutritional yeast, paprika, turmeric, mustard, salt, and pepper. Blend until smooth, adding more water if necessary.
  • Combine cashew mixture and kale in a large bowl; scrunch kale with your hands until evenly coated with cashew mixture. Spread in a single layer on an unlined dehydrator tray.
